1. Preface

Congratulations! You have obtained the BakeMax® Mini Dough Moulder, it will be your best assistant in moulding dough. Please operate & maintain the machine as per this instruction manual, it will be your good partner in making bread, making money with good efficiency.

Machine Introduction

The BakeMax Mini Dough Moulder supply you various application, it includes rolling, winding, non-winding, kneaded by press plate, kneaded not through press plate or changing of outlet direction, etc. during the moulding process. It is available for changing and choosing depends on different demand of your products.

This machine is based on 2 sets of different size non-stick rollers, plus each component in precision design. It is recommend specially used for moulding oriental dough which with characters of soft, sticky, high sugar, high fat composition dough, such as: sweet bread, toast bread, butter bread, salad bread, or other various types dough is also very suitable.

It is specially designed complete cover opening device and scraper, cover , it is easy disassemble style and easy operate, convenient to clean.

4. Moving Method and Stand Assembly l)Please use 1 Ton capacity forklift, to move wooden case packed machine to the proper place for unpacking wooden case, it just left pallet only 2)To insert Nylon band pass through both sides bottom of machine body, then to lift machine away from pallet by forklift and to place machine on the ground gently.

5. Installing Method and Cautions

Installing Method:

1. To find a position : to find plain position and surrounded with sufficient space as per requirement of operating process in production line.

2. Machine Fastening : moves machine to position required, stand casters should be fastened stably.

3. Power Supply Connection : to do this job by professional electrician only, it is necessary to connect power supply meets the specification & voltage shown on nameplate.

4. Try to test running direction: press start button at “ON" in front of machine to start machine.

5. To check the face side 1 set upper roller if it is in correct direction for rotating inward to reel dough into machine, if it is in wrong direction, just to exchange connection of any two electric wires each other, then try to test it running OK.

Cautions:

1. After unpacked wooden case,, please check if machine appearance and each parts are completely shipped without damage, shortage.

2. It is necessary to hire professional electrician to perform installation and machine test running as per instruction manual.

3. It needs to keep 40 cm space each at rear side of installation and both left, right sides.

4. It must connect the Earth wire for power supply wiring, and caution that to prevent power supply cables from pressing and pulling.

5. To place flour box at position required and to dispense flour as per requirement.

6. Operation Detail and Safety Caution

Operation Detail:

1 .Firstly please clean machine before operation : please follow instruction shown on No. 7.

2 .Regarding description of operate function key, please check the indicated figure, list & number shown on No.3 description of machine partial components as above.

(1) Front collecting tray: tray to collect mould finished dough.

(2) Moulding plate: adjustable moulding press plate.

(3) Conveyor: moulding conveyor available for forward, reverse running.

(4) Start / stop switch: button for start / stop machine.

(5) Emergency stop switch: emergency push button, it can be returned back after turned rightward.

(6) Index mark of lower roller: gap of lower roller for display adjusting index mark by mm unit

(7) Flour box: movable flour dispensing box.

(8) Feeding hopper: dough feeding inlet, with adjusting device of inlet size. .

(9) Stainless steel wire net: for winding dough by stainless steel wire net, it is adjustable or without working.

(10) Cover / Rear collecting tray: can be covered or to use as a collecting tray for moulding finished dough.

(11) Guiding plate: plate for guiding purpose when dough is reverse running.

(12) Adjusting handle of conveyor: 2 rotating handles for adjust tightening balance of conveyor.

(13) Cover: both sides cover can be opened for disassembling scraper, maintaining repair machine.

(14) Adjusting handle: adjusting handle of upper roller gap (mm).

(15) Adjusting handle of conveyor forward, reverse running: handle for changing forward, reverse running of conveyor. Do not push it at central position.

(16)Adjusting handle of press plate: high, low adjusting handle for press plate of moulding dough.

3. Operating Method: a.

To adjust size of feeding inlet, upper & lower roller gap, conveyor running direction, high, low of press plate and position of collecting tray as per requirement. b.

To dissemble (lO)guiding plate or (9)stainless steel wire net depends on product demand, please see instruction as per following figures. c.

Press start button "ON" to start machine. d.

To throw dough into feeding inlet, to perform rolling moudling, then to micro-adjust each component as per requirement. e.

Press "OFF" button to stop machine.

Safety Caution :

l.When machine is running, people is not allowed to approach machine or to stretch any goods into machine.

2.This machine is limited for sheeting moulding on flour dough only, do not place hard goods or toxic goods into machine for processing.

3.Operator must wear working uniform, wear cap and to avoid clothes, hair fell into machine. 4.A11 machine cover & device can be opened only during professional technician is repairing machine.

5.During operation, each control switch button should be pressed by finger, use other tools is not allowed.

Cleaning Method and Maintenance

When daily job has finished, it needs cleaning and maintenance, to keep machine running in good condition and long life.

Cleaning Method -

1.Before cleaning machine, firstly to turn off the main power switch.

2. When cleaning machine, do not use water to spray machine directly or to use too much wet cloth, to avoid damage machine parts or danger caused by electric leakage.

3.To open the front cover, in order to clean roller scraper and rough chips.

4.To open the canvas, in order to clean flour dust and dough chips on the conveyor.

Maintenance •

1. Always to keep cleanness at machine housing, inner mechanic parts, motor and conveyor, etc.

2.To inspect rotary parts, such as motor, chain, roller etc. if there is noise and to do proper adjustment.

3.To inspect if control switch, safety device and adjusting handle works in normal status.

4. To check each fastening screws, mechanism if it at normal position.

Safety Caution :

1.Before to perform repair maintenance & adjustment, firstly to study this instruction manual carefully. In order to handle this matter without problem.

2.Repair maintenance and adjustment job always performed by professional technician, the user is prohibited to perform this job by themselves.

3.Before to perform repair maintenance, always to make sure if main power supply has disconnected

Adjustment:

After this machine has been run for a period, it needs to adjust tightening status of moulding plate, conveyor and motor belt.
