Hazard Analysis and Critical Control Points (HACCP) is a food safety
methodology which analyzes biological, chemical, and physical hazards from
raw material production, procurement and handling, to manufacturing,
distribution and consumption of the finished product. Many retailers are
implementing a HACCP process as a means to ensure the highest standards of
freshness for refrigerated products in their stores.
