SECTION II — USE AND MAINTENANCE
(A) Using Your Camtherm® Cart – Maximizing Performance
For maximum holding performance and to ensure safe food holding temperatures, pre-heat or pre-chill the cabinet
at least 1 hour or more before loading with hot or cold food. Refer to reference charts below for exact time guidelines.
1) To get started: flip power switch on back of cabinet to on.
2) If using hot/cold unit, flip hot/cold switch to hot or cold.
3) If pre-heating, set temperature dial to desired setting, minimum 150˚F (65,5˚C), maximum 165˚F (73,9˚C).
4) Note: Temperature Achieved light is for hot holding only (hot/cold model only).
5) Cold holding cabinet temperature is factory pre-set to chill down to 37˚F (2,8˚C).
There is no temperature dial setting for this.
6) Before transporting or relocating cabinet, first ensure door(s) are completely shut and latches are secure.
Then turn power off, unplug, and wrap cord.
7) Refer to chart below for recommended recovery times and holding times unplugged.
