GLOSSARY
Raw water - tap or well water supplying water treatment
devices.
Water salinity - Water salinity - defines the total
percentage of a salt in water. It is defined in miligrams per
litre [mg/l], PPMs or by electrical conductivity defined by
microsiemenses per centimetre [µs/cm]. Approximately
1mg/l = 2µs/cm

Carbonate water hardness (KH) – is caused by the
presence of the all cations like: calcium, magnesium,
sodium, potassium hydroxides etc. related with
hydrocarbonate. By removing the carbonate hardness we
exchange those cations into hydrogen ions so that
besides the water softening we receive a partial water
demineralization as well.
Jonits, resins - longlife synthetic organic compounds
(c.a.20 years lifetime). They are resistant to acids, bases
and most of solvents. They are used for water softening,
removing the carbohydrate water hardness and water
desalination. After properly made regeneration process
the resins have the same, origin parameters like before
regeneration.
Non carbonate hardness - is caused by other calcium
and mangesium salts like chlorides, sulphures, silicates,
phosphates etc. The hardness is measured in German
degrees[°dh]. It is conventionally agreed that 1°dh= 17,89
mg CaCo₃ (calcium carbonate) in water. It may be also
measured in French, English degrees or miligrams CaCo.
General water hardness (GH) – General water properties
which are received by dissolved calcium (Ca) and
magnesium (Mg) salts. General water hardness is
determined by carbonate hardness or non carobonate
hardness.

Water softening – removing all calcium and magnesium
compounds from water. The softening process is made by
using ion-exchanged deposits known also as resins.

Soft water – water with no calcium or magnesium
compounds.
The factors influencing the taste and smell of water – they
are strictly connected with the water content and dissolved
organic and chemical substances in it. Disadvantageously
to the taste and smell of the water influent the compunds of
chlorine, iron, manganese, hydrogen sulfide and products
of degradation of organic substances. Advantageously to
the taste an smell of the water influent the content of
dissolved oxygen and carbon dioxide. The water for food
use should be without any taste and smell.
Activated carbon – material of big absorbing abilities. It
absorbs chloride and organic compunds from the water
causing improper taste and smell of water.
Reversed osmosis (RO) – a mechanical water desalination
process. The water is flowing through a membrane which
causes that only the pure H 2 O water is received. All left
substances are directed to the sewage.

The water softening is a process used to remove all calcium and magnesium compounds from the water. These compounds are
responsible for water hardness.

Hard water is very disadvantageous especially to
gastronomy and hotel business. A limescale precipitates
from hard water while drying, heating, boiling and
evaporating is harmful to the devices which are in contact
with water or steam. It's a good heat insulator therefore
when it settles on heating element sit creates an excellent
thermal insulation which is resulting in higher energy
consumption – 1 mm of a limescale gives 10% higher
energy consumption. Calcium and magnesium compounds
react with detergents creating a sediment which doesn't
act in washing proces. That's why washing in soft water
allows to save 30-70% of detergents used.

Soft water perfectly protects all appliances which are in contact with
hot water or steam from limescale build-up. It increases efficiency and
elongates equipment lifespan used in gastronomy e.g. coffee
machines, dish- and glass-washers, ice-cube makers, combi-steamers,
central heating stoves, washing machines, sanitary fittings, watering
systems. Using soft water will doubly minimize consumpion of
detergents both while dishwashing and floor cleaning, toilet
equipment cleaning and laundry. Soft water improves the detergent

How does it work?
BRINE TANK

Water softening takes place in a fiberglass tube filled with a resin. Calcium and
Magnesium ions become absorbed by resin beads as the water flows through the column.
Eventually, the resin becomes saturated in calcium ions and stops being effective. The
column can be regenerated by pouring regeneration salt through it. The calcium ions are
flushed out and it allows the column to be reused.

Regeneration proceeds automatically. It's a process which purifies the resin bed from all
mechanical impurities and subsequently rinses the resin with brine which washes out
all accumulated Calcium and Magnesium ions to the sewerage.

BACKWASH – very strong stream of water flows through the resin bed from the bottom.
This breaks up the compacted filter bed and raises the accumulated particles. All
mechanical impurities are being flushed out. Loosened and washed resin is being
prepared to proper regeneration with brine.

BRINING - the brine is sucked from the salt tank and supplied to the column. The brine

SYSTEMS - CWSS
Water supply hotels or restaurants is often taken
from well water intakes. This kind of water has a
high hardness (with compounds of calcium and
magnesium contents). In that case the most
optimal is the installation of CWSS at building
water inlet.
This solution is far more efficient unlike installing
several small softening devices dedicated for
specified machines (for example for dishwasher,
coffee machine, combi steamer etc.) because
dedicated softeners secure only those devices
they are connected to. CWSS is a maintenance-free
and ensure soft water in all object's water fixtures.
CWSS secure all those elements having a contact
with water. Among others: heating boilers,
sanitary fixtures, battery taps, showers, laundries,
water heaters etc.
Using softened water causes double reduction of
detergent usage both during laundry or
dishwashing or floor or sanitary rooms cleaning.
Soft water enhances detergent cleaning effects,
hardly removable stains or contaminations are not
a problem now. We can say that complex soft
water using benefits both for the water quality and
savings as well.
Soft water improves the comfort of bathing in
hotels , it makes the skin gentle and no cosmetics
are required.
CWSS is installed behind both the water meter and
water booster. The CWSS are selected individually
depending on water parameters, temporary or
daily water consumption. There are single or
double CWSS.
1. Single CWSS type TT
The device consists of one softening column and
the brine tank. There are two cycles making
working mode: in-service cycle (softening) and
the regeneration cycle (rinse).
While regeneration mode there's water softening
stopped and we get only only untreaed water.
After the regeneration cycle is finished the CWSS is
ready to continue softening work. The time of
regeneration is c.a. 1,5 – 2 hrs. The CWSS
parameters should be chosen to ensure the
regeneration cycle not more than one time a day.
The time of regeneration should be set at the
moment of the lowest water consumption, for
example 2 a.m.

The device consists of two softening columns (working
alternately) and the brine tank. One column is softening the
water and the second one is in regneration mode. The station
works maintenance-free nonstop. There are no breaks in soft
water supplying.
The most characteristic feature at specific hotel/restaurant
objects is uneven water consumption both temporary and
daily. It is because the guest attendance varies depending on
many reasons. For example, a wedding house characterises
by high water consumption mostly on weekends only. It is
different at the restaurant located in shopping mall where the
everyday water consumption is high.
CWSS installed at main inlet should ensure efficient volume of
treated water and at the same not to cause sudden pressure
drops, especially while the highest water consumption. So
that it is extremaly important to choose the proper device
parameters.
CWSS should be chosen optimally to a specific water
hardness. Also, daily efficiency and temporary flow rate of the
device should be fitted to real values of maximal water
consumption in hotel/restaurant etc.

- an information concerning bigger events (conference, symposium)

Total desalination is a process, which removes
from water all mineral salts. Water flows through
the resin, which absorbs all ions on its surface.
Positive ions (kations) are settled on the cation
exchanger's surface and negative ions (anions)
are settled on the anion exchanger's surface. The
result is perfectly clean and desalinated water.
After specified amount of water has consumed
the desalinating resin features are exhausted. It
is necessary to replace the exhausted resin with
the new one or exchange all MVE device to new
one.
When the resin deposit is exhausted, the resin
must be replaced with new one. To replace the
resin in MVE817 system the service staff should
unscrew the top head and spill the old resin out.
The empty tank should be poured with new
resin. It is recommended to use a funnel to
make the pouring easier. Next step is to twist
the head again to the tank. Thanks to the resin
replacement the device recovers full efficiency.
The only cost is purchasing new resin.
When the resin deposit is exhausted, the
service staff may basically replace all device
MVE 817 with a new one. To do that it is
necessary to unplug the device from water
inlet and next from device's water outlet and
next replace with new device installing to
water outlet and inlet back. All device MVE 817
is to be thrown away with exhausted resin to
the waste. The cost to bear now is the
purchase of new MVE817 device.

MVE-AUTOMATIC devices are designed for total water
desalination (demineralization) and they are perfect for
glass and cutlery washers.
MVE 817-AUTOMATIC
MVE-AUTOMATIC-consists of two columns responsible for water desalination,
both columns are automatically regenerated one after the other, after the resin
is exhausted.
Factor in regenerating liquids are A60 and B60. The liquid A60 is used to
regenerate the first column and the liquid B60 is used to regenerate the second
column. After exhausting the capacity of desalination resin system draws in
each of the liquid, washes the resin and flushes out all the accumulated
compounds to sewage. By the regeneration both containers with liquids are
consumed. After regeneration device is ready for water desalination.
Regenerated resin guarantees identical water quality as with the new resin
applied,. It may be regenerated thousand times.
Before starting the device must be programmed. Programming is to introduce of
the relevant water parameters (salinity or general water hardness GH) and the
most appropriate time of regeneration..

DF SERIES - REVERSED OSMOSIS
Water is being under pre-filtration process and the purification where all mechanical, organic and chemical pollution
is removed. Then water reaches the osmotic membrane where other possible pollution and mineral salts are
filtered. Pure demineralized water is directed to the device (dishwasher) while salted water is directed to the
sewage or may be used for other purposes.
The entire system consists of a water desalination DF system that can work well with the water storage tank if
needed (option). The tank may be a pressure or non-pressure one. When using a non-pressure tank water is supplied
by a pump to the dishwasher. when the dishwasher is equipped with a rinsing pump, a storage tank is not required.
However if the dishwasher is not equipped with a rinsing pump, it is best to use a non-pressure tank and pump which
supplies water into the dishwasher. Storage tank is needed also in case of temporary demand for water is
significantly higher than the osmosis efficiency.
The correct choice depends on local conditions, but mainly on the dishwasher's water consumption.
The only maintenance service is periodical pre-purification filters replacement.

Reversed osmosis method is the most profitable way to get pure
and totally desalinated water. The desalination process takes
place in osmotic membrane. The membrane is constructed like a
sieve, which let through only clear water, while all other particles
which are bigger than the holes in the sieve (minerals salts for
example) are directed to the sewage.

Using partially desalinated water we can also get perfectly clean surface of glass and cutlery. The
partial desalination process is a very effective method of water treatment for combi-steamers,
because there are not only calcium and magnesium compounds to be removed but also other salts
which make glass sediments. Partial desalination is more economical for operation than full
desalination.
There are two kinds of MTE systems:
MTE-Ex – the replacement of exhausted resin or the device replacement (see page 30)
MTE-R – regeneration of exhausted resin made with the valve CI at the user's place, or by authorized
service (see page 31).
This system can be used for water which contains mainly carbohydrate compounds responsible for
sediment formations. Partial desalination can be applied only at specified water parameters, so ther's
a necessary to make a water tests for check if this method would be effective.

Replacement of exhausted resin model MTE-Ex
Replacement of all MTE-Ex with new one.
When the resin deposit is exhausted, the resin
must be replaced with new one. To replace the
resin in MTE-Ex the service staff should unscrew
the top head and spill the old resin out. The empty
tank should be poured with new resin. It is
recommended to use a funnel to make the
pouring easier. Next step is to twist the head again
to the tank. Thanks to the resin replacement the
device recovers full efficiency. The only cost is
purchasing new resin.
When the resin deposit is exhausted, the
service staff may basically replace all device
MTE-Ex with a new one. To do that it is
necessary to unplug the device from water
inlet and next from device's water outlet and
next replace with new device installing to
water outlet and inlet back. All device MTEEx is to be thrown away with exhausted resin
to the waste. The cost to bear now is the
purchase of new MTE-Ex device.

To obtain perfectly clean glass and cutlery it is also
important, apart of water quality, to ensure proper power
and quantity of water.
Sometimes in case of increased water consumption at the
same time (from the kitchen, hotel bathrooms etc.) there's a
possibility of sudden dynamic water pressure decrease at
dishwasher's water inlet. If the dishwasher is not installed
with a pressure increasing pump for quick rinsing, the dishes
inside are unwashed and stains or spots appear on the
dishes. In that case we recommend to apply a storing power
TANK POWER PRESSURE between the dishwasher inlet
and desalination device.
POWER PRESSURE TANK ensures efficient water
quantity at correct pressure while rinsing or scalding of glass.
It is usable at periodical water pressure decreases or too
small water quantity provided to the dishwasher.

MTE-R- regeneration of exhausted resin made with Cl steering valve at the the customer's
place in authorised service or in Mijar's premises. The regeneration process is made with the Ci
steering valve which is connected to the tank with exhausted resin. While regeneration mode,
the resin is being under rinsing proces with A60 liquid. After finishing the regeneration mode
the resin re-obtain its full efficiency and desalinating features. Regeneration process in MTE-R
devices can take place repeatedly. This kind of regeneration is very economic because the only
costs are a one-time purchase of steering valve and purchase of A60 liquid. (1 tank for a
regeneration proces)

The main advantage of that system is automatic and maintenance-free regeneration process. The
regeneration takes place right after the resin is exhausted (see the table below) at the specified time. The
resin is under flushing process with regenerating liquid A60 and flushing away all absorber compounds to
the sewage. It is one tank of the liquid required for one regeneration. Regenerated resin ensures identical
water quality as with the new resin applied. It may be regenerated thousand times.
The only thing which must be kept for proper handling is setting the correct water parameters to the
system (salination level or carbonate hardness) and most optimal regeneration time.

HOTEL
UV water sterilisation systems are advanced devices designed to eliminate bacteria, viruses and algas in
drinking water, technological water or in other liquids with no termal operations or chemical means. UV
lamps are highly effective systems as alternative for chroliding or ozoning the drinking water or water for
other purposes like swimming pool water.
UV radiation affects bacteria killing them with no water physic-chemical features changes. Special
designed lamp construction ensures 99,99% bacteria elimination.
The UV disinfection process is irradiation of water with electromagnetic waves 253,7 [nm.] long. Minimal
UV irradiation rate is 400 J/m² at nominal flow. The irradiation is effective only inside the cell and doesn't
affect as „side effect.”
