OBSERVED CLEAN SMALLWARES AND UTENSILS STORED IN LARGE BLACK PLASTIC
TUBS THAT ARE DIRTY WITH STICKY RESIDUES AND OTHER DEBRIS, CRUMBS. THE
CLEAN UTENSILS CAN BECOME CONTAMINATED WHEN STORED IN THE SOILED
STORAGE TUBS. THE PIC HAD AN EMPLOYEE EMPTY THE TWO TUBS, RUN THE TUBS
THROUGH THE DISH MACHINE, RE-WASH THE UTENSILS THAT WERE STORED IN THE
TUBS, BEFORE RETURNING THE RE-WASHED UTENSILS TO CLEANED TUBS.

dry and used for no other purpose.
(B) Cloths in-use for wiping counters and equipment shall be held between uses in a
chemical sanitizer solution, and laundered daily.
(C) Cloths in-use for wiping surfaces in contact with raw animal FOODS shall be
kept separate from cloths used for other purposes.
(D) Dry wiping cloths and the chemical sanitizing solutions shall be free of FOOD
debris or visible soil.
(E) Containers of chemical sanitizing solutions shall be stored off the floor and
used in a manner that prevents contamination of FOOD, EQUIPMENT, UTENSILS,
LINENS, SINGLE-SERVICE, or SINGLE-USE ARTICLES.
(E) SINGLE-USE disposable sanitizer wipes shall be used in accordance lable
instructions.

SOILED/STAINED, THEY SHOULD BE REMOVED AND PLACED IN THE SOILED LINEN
BAG. THE PIC REMOVED THE SOILED CLOTHS AT THE TIME OF THE INSPECTION.

(A) PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them
clean.
(B) Except spill cleanup, cleaning shall be done during periods when the least amount
of FOOD is exposed such as after closing.

OBSERVED SOME DROPPED PLASTIC SOUP CONTAINER LIDS AND OTHER DEBRIS,
FOOD CRUMBS ON THE FLOOR AREA UNDER THE ROLLING CABINET THAT HOLD THE
TOASTER AND TWO SOUP WELLS. THE PIC HAD AN EMPLOYEE SWEEP UP THE
DEBRIS UNDER THIS CABINET AT THE TIME OF THE INSPECTION. CORRECTED.
