This refrigerant is generally considered non-toxic and non-flammable; however, any gas under pressure is potentially hazardous. We at Taylor are committed to manufacturing safe operating and serviceable equipment. The many built-in safety features that are part of all Taylor equipment are aimed at protecting operators and trained service technicians alike. NEVER fill any refrigerant cylinder completely with liquid. Filling the cylinder to approximately 80% will allow for normal expansion. This manual is intended exclusively for Taylor authorized service personnel. DO NOT attempt any repairs unless the main power supply to the machine has been disconnected. Failure to follow this instruction may result in electrocution. Refrigerant liquid sprayed onto the skin may cause serious damage to tissue. Keep eyes and skin protected. If refrigerant burns should occur, flush immediately with cold water. If burns are severe, apply ice packs and contact a physician immediately. Stationary appliances which are not equipped with a power cord and a plug or other device to disconnect the appliance from the power source must have an all--pole disconnecting device with a contact gap of at least 3 mm installed in the external installation. Failure to follow this instruction may result in electrocution. Taylor reminds technicians to be cautious of government laws regarding refrigerant recovery, recycling, and reclaiming systems. If you have any questions regarding these laws, please contact the factory Service Department. DO NOT install the unit in an area where a water jet could be used to clean or rinse the freezer. Failure to follow this instruction may result in serious electrical shock. WARNING: R404A refrigerant used in conjunction with polyolester oils is extremely moisture absorbent. When opening a refrigeration system, the maximum time the system is open must not exceed 15 minutes. Cap all open tubing to prevent humid air or water from being absorbed by the oil. These machines must be placed on a level surface. Failure to comply may result in personal injury or equipment damage. If the crossed out wheeled bin symbol is affixed to this product, it signifies that this product is compliant with the EU Directive as well as other similar legislation in effect after August 13, 2005. Therefore, it must be collected separately after its use is completed, and cannot be disposed as unsorted municipal waste. This freezer is designed to operate indoors, under normal ambient temperatures of 70_--75_F (21_--24_C). The freezer has successfully performed in high ambient temperatures of 104_F (40_C) at reduced capacities. The user is responsible for returning the product to the appropriate collection facility, as specified by your local code. NOISE LEVEL: Airborne noise emission does not exceed 78 dB(A) when measured at a distance of 1.0 meter from the surface of the machine and at a height of 1.6 meters from the floor. 070321 Introduction For additional information regarding applicable local laws, please contact the municipal facility and/or local distributor. 2 Models 8752/8752P/8756/8756P/8757 Compressor Warranty Disclaimer _________________________________ It should be noted, that Taylor does not warrant the refrigerant used in its equipment. For example, if the refrigerant is lost during the course of ordinary service to this machine, Taylor has no obligation to either supply or provide its replacement either at billable or unbillable terms. Taylor does have the obligation to recommend a suitable replacement if the original refrigerant is banned, obsoleted, or no longer available during the five year warranty of the compressor. The refrigeration compressor(s) on this machine are warranted for the term indicated on the warranty card accompanying this machine. However, due to the Montreal Protocol and the U.S. Clean Air Act Amendments of 1990, many new refrigerants are being tested and developed; thus seeking their way into the service industry. Some of these new refrigerants are being advertised as drop-in replacements for numerous applications. It should be noted that, in the event of ordinary service to this machine’s refrigeration system, only the refrigerant specified on the affixed data label should be used. The unauthorized use of alternate refrigerants will void your compressor warranty. It will be the owners’ responsibility to make this fact known to any technicians they employ. Should a new alternate prove, through our testing, that it would be accepted as a drop-in replacement, then the above disclaimer would become null and void. To find out the current status of an alternate refrigerant as it relates to your compressor, call the local Taylor Distributor or the Taylor Factory. Availability and specifications subject to change without notice. 8 Models 8752/8752P/8756/8756P/8757 Installation Instructions Water Connections (Water Cooled Units Only) In all other areas of the world, equipment should be installed in accordance with the existing local codes. Please contact your local authorities. An adequate cold water supply must be provided with a hand shut-off valve. On the underside rear of the base pan, two 3/8” I.P.S. (for single head units) or two 1/2” I.P.S. (for double head units) water connections for inlet and outlet have been provided for easy hook-up. 1/2” inside diameter water lines should be connected to the machine. (Flexible lines are recommended, if local codes permit.) Depending on local water conditions, it may be advisable to install a water strainer to prevent foreign substances from clogging the automatic water valve. There will be only one water “in” and one water “out” connection for both single head and double head units. DO NOT install a hand shut-off valve on the water “out” line! Water should always flow in this order: first, through the automatic water valve; second, through the condenser; and third, through the outlet fitting to an open trap drain. Stationary appliances which are not equipped with a power cord and a plug or other device to disconnect the appliance from the power source must have an all--pole disconnecting device with a contact gap of at least 3 mm installed in the external installation. CAUTION: THIS EQUIPMENT MUST BE PROPERLY GROUNDED! FAILURE TO DO SO CAN RESULT IN SEVERE PERSONAL INJURY FROM ELECTRICAL SHOCK! Check Out Once the unit is installed, it is advisable to check the following controls and mechanical operations of the freezer and to make any necessary adjustments. If applicable, repeat these checks for the second freezing cylinder on double head units. Air Cooled Units Beater Rotation A minimum of 3” (76 mm) of clearance around all sides and 12” (305 mm) on top is required to allow for adequate air flow across the condenser(s). Failure to allow adequate clearance can reduce the refrigeration capacity of the freezer and possibly cause permanent damage to the compressor. Beater rotation must be clockwise as viewed looking into the freezing cylinder. To check rotation, perform the following steps: PLACE THE MAIN POWER SWITCH IN THE “OFF” POSITION. Failure to follow this instruction may result in severe personal injury from hazardous moving parts. Electrical Connections Each freezer requires one power supply for each data label. Check the data label on the freezer for fuse, wire ampacity and electrical specifications. Refer to the wiring diagram provided inside of the electrical box, for proper power connections. In the United States, this equipment is intended to be installed in accordance with the National Electrical Code (NEC), ANSI/NFPA 70--1987. The purpose of the NEC code is the practical safeguarding of persons and property from hazards arising from the use of electricity. This code contains provisions considered necessary for safety. Compliance therewith and proper maintenance will result in an installation essentially free from hazard! Models 8752/8752P/8756/8756P/8757 9 1. Remove the door assembly(ies), beater(s), and scraper blades. 2. Place the main power switch in the “ON” position. 3. Press the WASH key on the logic board(s). This activates the beater motor(s) only. 4. Look into the freezing cylinder(s). The drive shaft(s) should be rotating clockwise. 5. Press the WASH key to stop the beater motor(s). 050920 Introduction Gear Alignment To prevent costly parts damage and to prevent excessive mix leakage, the gear unit must be perfectly aligned. To check gear alignment, insert the drive shaft through the rear shell bearing and into the gear unit. Move the drive shaft in and out of the gear unit, using all positions of the hex end. If any binding of the drive shaft occurs, the gear unit could be out of alignment. Inspect the bolts which mount the gear unit. make sure they are tightened down. To prevent excessive mix leakage, check the rear shell bearing. The locking tab should be folded over the nut to prevent the nut from working loose. Figure 1 Mix Level Control DISCONNECT ALL POWER TO THE FREEZER. Failure to follow this instruction may result in electrocution. 1. To correct rotation on a three-phase unit, interchange any two incoming power supply lines at the freezer main terminal block only. Remove the mix tank. Place an empty 16 fl.oz. cup (473 ml.) inside the cabinet, and insert three mix probe rods into the cup. 2. Place the power switch in the “ON” position, and press the AUTO key. The freezer should not operate, and the mix level LED’s should be flashing. 3. Fill a second cup with mix or salt water. (Salt water is used to insure good continuity for the mix probes.) 4. Slowly pour the mix or salt water into the empty cup until only the two longest rods of the probe are submerged. At this point, the “MIX OUT” LED will stop flashing. 5. Press the AUTO key. The compressor, beater motor, and the mix refrigeration system should operate. The “MIX LOW” LED will continue to flash. 6. Fill the cup until all three probe rods are submerged. The “MIX LOW” LED will stop flashing and the freezer will continue to operate. 7. Press the AUTO key again, and all freezer operations will be cancelled, including the mix refrigeration system. To correct rotation on a single-phase unit, exchange leads inside the beater motor. (Follow the diagram printed on the motor.) Electrical connections are made directly to the terminal block provided in the splice box. The splice box is mounted to the base pan on the right side of the Model 8752. The splice boxes are mounted mid--level on the frame channel on the right and left sides for the Models 8756 and 8757. Electrical connections should performed by a trained service technician. be Pump Drive Rotation 1. Open the mix cabinet door and remove the air/mix pump asssembly(ies). 2. Press the PUMP key on the logic board(s). This will activate the pump motor(s) only. 3. Observe the pump ball crank(s). They should be rotating counterclockwise. If not, re--wire the pump drive rotation according to the instructions printed on the motor. Introduction 10 Models 8752/8752P/8756/8756P/8757 Running Specifications Pressures Water Cooled: High side pressure for water cooled units is determined by the water valve. The water valve should be set to maintain a compressor head pressure of 250 -- 260 PSI (1,724 -- 1,793 kPa.). Expansion Valve Setting 404A/HP62: 20 to 22 PSI (138 to 152 kPa.) for normal products at temperatures of 18 to 20_F. (-7.8 to -6.7_C.). Water Valve Adjustment Penn Valves Adjust higher or lower by turning the adjustment knob on the automatic expansion valve. Clockwise adjustments will raise the pressure, and counterclockwise adjustments will lower the pressure. Place the gauge on the high side access port of the compressor. Turning the adjustment stem clockwise will lower the pressure. Counterclockwise adjustments will raise the pressure. Note: When this adjustment is made, the unit should be in the AUTO mode of operation, and the freezing cylinder should be correctly primed. Allow adequate time for pressure to stabilize. Singer Valves Counterclockwise adjustments lower the pressure. Clockwise adjustments will raise the pressure. Low Side Pressure (Compressor) Low side pressure will equal the expansion valve setting. Mix Cabinet Refrigeration High Side Pressure (Compressor) The suction pressure at the compressor should range between 40 -- 50 PSI (276 to 345 kPa). The EPR pressures should be 69 PSI. Air Cooled: High side pressure for an air cooled unit varies depending on the ambient temperature. The board monitors mix levels and temperatures by sending commands to the control’s power board. Commands are sent via a ribbon cable, enabling the proper relays on the power board to open or close. (See illustration on page 24.) Terminal “CABLE” This is the socket for cable connection between the logic board and its power board. IMPORTANT: when attaching the cable to the board, be sure all pins are straight to ensure proper connection into their respective sockets. When the cable is attached to the board, the wires must point away from the board, in the direction of the arrow shown above the word “CABLE.” Improper connection of this cable will cause unpredictable operation. Logic Board Terminals Terminal “MIX 2” (Models 8756, 8756P & 8757) This terminal is used to tie both logic boards together for activating the mix refrigeration system. A single wire is attached to both terminals. This is necessary because only the left board is responsible for sending power to the mix refrigeration system. When the MIX REF key (left side only) is pressed, or the AUTO or STANDBY keys are pressed on either side, the mix refrigeration system is activated. Terminal “DRAW” This terminal is connected to the microswitch on the draw switch asssembly. When closed in the AUTO mode, continuity is formed between ground and this terminal, causing the compressor and the beater motor relays on the power board to close. Important: This terminal must be connected to another MIX 2 terminal. WARNING: Do not connect a Generation II logic panel to a Generation I logic panel. They are incompatible! Terminal “MIX LOW” This terminal is used to activate the MIX LOW light. The mix low terminal is connected to the shortest leg of the mix probe (brown wire). When the mix level drops below the short leg, the light will flash. Terminal “FAN” This terminal is also used to tie the two logic panels together for a fan/blower operation. Important: This terminal must be connected to another FAN terminal. Terminal “MIX OUT” Note: All power cords must be plugged in for proper fan operation. The MIX OUT terminal is connected to the medium--length leg of the mix probe (red wire). When the mix level drops below this leg and continuity is lost, the MIX OUT light flashes and all freezer operation is cancelled except the mix cabinet refrigeration and fan. Terminal “BRL PROBE” This terminal has a white barrel thermistor probe wire attached to it. Terminal “MIX 1” Note: It may take 3--4 seconds for freezer operation to cancel after the MIX OUT light flashes. This terminal has the mix cabinet thermistor probe wire (red wire) and a ground wire from the power switch attached to it. The AUTO mode must once again be activated after the mix is replenished. Controls and Systems 14 Models 8752/8752P/8756/8756P/8757 Logic Board Dip Switches Dip Switch #5 (Do not activate on the 8756/ 8757.) When in the “ON” position, this switch will allow independent operation of condenser fans for the main refrigeration and the cabinet refrigeration system. When in the “OFF” position, this switch allows both condenser fans to operate, regardless of which refrigeration systems are operating. When the dip switches point back, they are in the ON position. When the switches are pointing forward, they are in the OFF position. Relay (dip switch) functions are listed below: Dip Switch #1 Note: This switch should remain in the “ON” position on an air-cooled unit. Delays compressor operation for five seconds each time the beater motor starts (auto operation only). Example: In an air--cooled unit which uses a fan for the main condenser(s) and a separate fan for the mix condenser, the dip switch should be in the ON position (down). Dip Switch #2 Delays compressor operation for ten seconds each time the beater motor starts (auto operation only). Switch 1 2 ON ON or OFF OFF ON OFF OFF Example: In a water--cooled unit, which uses a fan for removing interior cabinet heat, and uses a separate fan for the mix condenser, the dip switch should be in the ON position (down). These switches program various beater stir cycles. The chart below indicates stir cycle times for various switch positions. Position the fine adjustment potentiometer at mid-range. This will limit the fine adjustment range to ±2_F (±1.1_C). Ideal mix temperature = 38_F (3.3_C) to 40_F (4.4_C). Turn the coarse adjustment clockwise to the maximum position. Cut-out temperature will always be 13_F (7.2_C) (cabinet) lower than the cut-in temperature. After about 5 minutes of freeze-down time, check the product temperature. When the temperature of the sample portion is approximately 1_F (.5_C) above the desired serving temperature, slowly turn the coarse adjustment counterclockwise (towards minimum) until the refrigeration system cycles off. 4. Allow the unit to operate through three refrigeration cycles without a draw. 5. After the third refrigeration cycle off, check the product temperature and make further adjustments, if necessary, to the coarse adjustment. The range for cut-in temperature is “MIN” approximately 52°F (11.0°C) and “MAX” approximately 36°F (2.2°C). Setting the Mix Cabinet Temperature: Note: Due to the sensitivity of the temperature adjustments and the amount of product in the freezing cylinder, it will be easiest to make an adjustment from a warmer temperature to a colder temperature with this control. To make a colder adjustment, first allow the compressor to cycle off. Then as the coarse adjustment is slowly turned clockwise, (colder), the red SET POINT LED will light to indicate the coarse adjustment has been lowered .25_F (.13_C). Continuing to turn the coarse adjustment clockwise (colder) will activate the refrigeration system. This indicates that the temperature setting has been lowered .5_F (.25_C). Models 8752/8752P/8756/8756P/8757 19 1. Place a thermometer in the cabinet close to the thermistor probe. 2. Turn the mix adjustment screw clockwise all the way to the “MAX” setting. 3. When the air temperature in the cabinet reaches 30_F to 31_F (-1.1_C), turn the mix adjustment screw counterclockwise until the mix refrigeration cycles off. 4. Check all connections. 2. Check the cable to verify that it is secure. 3. Verify that all pins are securely fastened in their sockets. 4. Verify that all cables correctly face away from the boards. If the cable is attached incorrectly, damage to the logic board will occur. Air/mix pump and beater motor operation will be disabled. 5. Verify probe resistance. 6. Use the self-test program. Figure 2 Each light corresponds with a particular relay. The light on the panel will not extinguish until the test is completed for that particular relay. Logic Panel Light MIX LOW MIX OUT MIX STANDBY WASH AUTO PUMP Self-Test Program In each of the tests the relay on the power board will close and the component will operate for three seconds. There is a ten second delay between each check. The Generation II controls are programmed for a self-test. The control can be used to help identify problems in the power board, the logic board, and the thermistor probes. The self-test program is not intended to, and will not take the place of a reasonable, and prudent service technician. When the self-test is initiated, all eight lights will remain on for three seconds. At this time, the processor will begin to check the power board relays as follows: The self-test program is divided into two sections. The first section is an automatic function of the micro processor and the second section is performed by the technician. The self-test program is initiated by holding down the MIX, WASH, AND PUMP keys on the logic panel while simultaneously turning on the power switch. Hold down the keys until all eight lights illuminate. If all eight lights do not illuminate, the control is defective. If the self-test cannot be initiated, the control is defective. The SET POINT light is lit, indicating that the control is reading the shake temperature potentiometer. 2. Rotate the adjustment screw back and forth from “MIN” to “MAX”. The bar graph should travel accordingly. This indicates that the potentiometer is functional. If the bar lights do not react, the logic panel is defective. Important: If the freezer’s controls have been set previously, return the adjustment to its original position. For example, if the WASH light was lit before an adjustment screw was rotated, before going to the next step, rotate the adjustment screw until the WASH light is lit again. If all or most of the power board relays fail to close, the logic panel is defective. If only one relay fails to close, the power board is defective. This test can be used to determine if a problem exists with the logic panel, the power board, or elsewhere in the freezer. In other words, if during the test the beater relay closes on the power board, but the beater motor contactor does not operate, the problem occurs after the command reaches the power board. 3. Press the MIX key once. 4. The MIX LOW light is lit, indicating that the control is reading the MIX potentiometer. 5. Rotate the adjustment screw as in Step 2. 6. Press the MIX key once. 7. The MIX OUT light is on, indicating the control is reading the STANDBY potentiometer. 8. Rotate the adjustment screw as in Step 2. 9. Press the MIX key once. Self-Test -- Part II When the first section of the self-test is complete, the control will advance to the starting point of the second section. The technician will have to complete this portion of the test. The first part of this section verifies the function of the control potentiometers (adjustment screw). During this test, the MIX, STANDBY, WASH, AUTO, and PUMP lights function in direct relationship with the “MIN” and “MAX” adjustments of the potentiometer. In other words, when the adjustment screw is turned all the way to “MIN”, the MIX light will be lit. When the adjustment is turned all the way to “MAX”, the PUMP light will be lit. If the screw adjustment is made between the “MAX” and the “MIN” adjustment, one of the other lights will illuminate depending on the adjustment. These lights create a bar graph which is directly related to the product temperature. “MIX” is warm and “PUMP” is cold. Controls and Systems 22 10. The SET POINT, MIX LOW, and MIX OUT lights are lit. The control is now reading the temperature fine adjustment. Rotate the adjustment screw as in Step 2. 11. Press the MIX key once. 12. The MIX LOW light is lit, indicating that the control is reading the “MIX 1” terminal. Models 8752/8752P/8756/8756P/8757 13. The capability of this terminal to read the thermistor probe can be checked by the following method: 14. Press the MIX key once. 15. The MIX OUT light is lit, indicating that the control is now reading the BARREL (freezing cylinder) probe terminal. a. Remove the thermistor probe wire from the “MIX 1” terminal. b. Connect the “MIX 1” terminal directly to ground (simulating a warm probe). The MIX light will illuminate. 16. Remove the terminal connection from ground (simulating a cold probe). The PUMP light will illuminate. Check the freezing cylinder probe (as in Step 13) by removing the wire from the panel. 17. Press the MIX key again, and the self-test program is terminated. c. If the lights do not react, the panel is defective. Standard Pump Speed Operation 1. The pump forces mix into the freezing cylinder. 2. As the draw handle is pulled, mix is driven from the freezing cylinder. 3. The pump forces additional mix into the freezing cylinder to replace the mix which was drawn when the draw handle was pulled. 52 RPM (60 cycle units) Spring and Poppet The air/mix pump includes a spring and poppet. In the event that the pressure in the freezing cylinder raises above 30 psi, the spring and poppet provides pressure relief. There must be a balance between the amount of mix pumped into the freezing cylinder and the amount of mix taken out of the cylinder. Pump Disable Function The adjustment screw on the draw handle dictates the speed at which the mix is released from the freezing cylinder. If the draw rate is set too fast, a larger amount of space will be created in the cylinder, allowing more Models 8752/8752P/8756/8756P/8757 When the unit is in the STANDBY mode and the AUTO key is pressed, the air/mix pump will be disabled until the unit has cycled off on viscosity. 25 Controls and Systems Horizon® Mix Pump Function cylinder. Recommended Delivery Rate Operation Standard Pump Speed 1. The pump forces mix into the freezing cylinder. 162 RPM 2. As the draw handle is pulled, mix is driven from the freezing cylinder. 3. The pump forces additional mix into the freezing cylinder to replace the mix which was drawn when the draw handle was pulled. 1/2 to 3/4 ounce of product should be drawn per second. Bacteria counts should not exceed the following figures: Educate the operator about how to prevent high bacteria counts. Note: High bacteria counts in soft serve yogurt is normal and necessary. Coliform, however, cannot be accepted in any product. The following information will help solve high coliform count problems. Standard Plate Count (SPC)............50,000 Coliform...................................................10 If the counts exceed the numbers listed, steps should be taken to locate the cause. Failure to solve the high counts will result in an unsafe product for consumption. If sample results indicate a problem, one of these areas may be a source of contamination. CAUSE OF CONTAMINATION 1. Human contamination. PREVENTION a. Wash hands and arms past elbows. b. Wear rubber gloves if cuts or skin conditions exist. c. Wash hands periodically throughout the day. 2 Residue product deposits on mix contact surfaces (milkstone build-up). a. Provide the proper brushes. b. Brush clean all parts and components thoroughly. Ignoring this will allow formation of milkstone, a porous substance which will house bacteria and can lead to contamination of fresh mix. 3. Worn, damaged, or cracked parts. a. Provide a food grade lubricant (Example: Taylor Lube). b. Inspect o-rings for holes or tears. O-rings, seals and other wear items must be supplied by the freezer company to meet food industry standards. c. During the operating hours, periodically inspect the rear drip pan for excessive leakage. 4. Improper cleaning and sanitation procedures. a. For cleaning procedures, scrub the sink and strainers thoroughly before each use. The level of solution in each basin must allow the largest component to be submerged. Sanitize and prime the freezer prior to freezing the product. After sanitizing a freezer, use fresh mix to flush remaining sanitizer from the freezing cylinder. b. Provide the proper brushes, lubricants, and single service towels. c. Store sanitizer in a cool, dry place. Use chemicals according to their labels. Do not neglect daily cleaning practices: wipe the external areas of the freezer periodically throughout the day, remove the design caps and sanitize the area, check the drip trays and splash shield. 5. Mix stored improperly. a. Rotate stock to use older date code mix first. Shelf life of mix is normally 10 days. b. Mix must never be stacked outside or under direct sunlight while waiting to be placed in the cooler. c. Place the mix directly in the cooler. Always leave one inch between the mix and other products to allow air to circulate around the product. d. Mix must not remain at room temperature for long periods of time. e. Hopper storage must maintain a temperature of 40_F. (4.4_C.). Storage temperatures above 45_F. will allow cell division in as little as one hour. f. Once the mix is placed in the hopper, covers must be properly installed to maintain adequate refrigeration and to prevent airborne contaminants from entering the mix.
