IMPORTANT: Use caution when handling the Chopping Blades as they are extremely sharp. Always hold the Chopping Blade Assembly by the shaft, not the blades themselves. 2 Place the Chopper Bowl on a clean, dry, level surface. 3 Hold the Lower Chopper Blades by the shaft and place it over the spindle inside the Chopper Bowl. 4 Carefully press down the Upper Chopper Blades over the shaft until it is tightly nested over the Lower Chopper Blades. Warning: To reduce the risk of injury, always assemble the blades inside the Chopper bowl as describe above. 5 Always ensure the Motor Housing is unplugged before adding or removing parts. 6 To disassemble the Chopping Blade Assembly, carefully lift the Upper Chopper Blade off the shaft. Always hold the Chopping Blade Assembly by the shaft, not the blades themselves. Care and Cleaning • Ensure that the unit is unplugged from the electrical outlet before cleaning. • Wipe the Motor Housing with a damp cloth. Dry thoroughly. Do not use any abrasive cleaners or scouring pads on the Motor Housing as this will damage the finish. • Wash the Chopper bowl, Chopper Bowl Lid and both Chopping Blades (except Motor Housing) in warm water using a mild detergent (or see dishwasher instructions below). IMPORTANT: Use caution when handling the Chopping Blades as they are extremely sharp. Dry each part thoroughly before use. Dishwasher Use All plastic components deteriorate through the prolonged use of a dishwasher for cleaning. However all parts of your processor are tolerant to dishwasher use (excluding the Motor Housing). If using the dishwasher, place parts only on the top rack. The Motor Housing can be wiped clean with a damp cloth and then dried thoroughly. Never immerse the Motor Housing in water or any other liquid. Serve in bowls or ice cream cones. 13 Baby Food Peas Asian Vinaigrette Makes 1 1/2 cups Makes about 1/2 cup INGREDIENTS INGREDIENTS 2 cups fresh or frozen peas, preferably organic, thawed 1/2 cup water 3 tablespoons rice wine vinegar 2 tablespoons soy sauce 2 tablespoons peanut oil 1 tablespoon toasted sesame oil Juice of 1/2 lemon Salt and freshly ground pepper to taste METHOD 1. 2. 3. 4. Season to taste with salt and pepper before serving. 15 Chino Farm Carrot and Ginger Soup Makes about 8 cups 1 pound orange carrots 1 pound yellow carrots 1 pound white carrots 1/4 cup peanut oil 1 tablespoon minced garlic 1 tablespoon minced ginger 1 tablespoon minced green onion Pinch red pepper flakes 1 tablespoon salt 1/2 teaspoon freshly ground white pepper 1/2 teaspoon turmeric 1 tablespoon honey, or to taste 8 cups vegetable stock 1 cup heavy cream 4 ounces butter Oil, for deep-frying 1/2 cup julienne ginger METHOD 4. 5. 6. 7. Makes about 8 cups INGREDIENTS INGREDIENTS 1. 2. 3. Savory Squash Soup Peel the carrots and slice thinly. In a stockpot, heat the oil and sauté the garlic, minced ginger, green onions and pepper flakes for 1 to 2 minutes or just until glossy. Do not allow to develop color. Add the carrots, salt, pepper, turmeric and honey. Sauté for 2 minutes, stirring constantly. Add the stock and bring to a boil. Lower to a simmer and add the cream. Cook for 40 minutes or until carrots are tender. Fit QuadChop with chopping blades then transfer mixture to the QuadChop; add the butter. Cover with chopper bowl lid and place motor on top; chop on HIGH for 10-15 seconds or until pureed to desired consistency. Strain soup into a new stockpot. If the soup is too thick, add extra stock then taste and adjust seasoning with salt, pepper and honey Keep warm. Preheat oil to 300°F. Deep-fry the ginger and drain on plate lined with paper towel. Ladle 1 cup of soup into heated bowls. Garnish with fried ginger before serving. 16 Garnish: 2 butternut squash (about 3 3/4 pounds) 1 Cranberry Relish 1 acorn squash (about 1 3/4 pounds) 1 Cardamom Cream 6 tablespoons (3/4 stick) unsalted butter 1/2 recipe Spiced 1 white onion (about 4 ounces), Caramelized Pecans peeled, trimmed, and finely diced 4 tablespoons pumpkin seed oil 1/2 teaspoon kosher salt 1/8 teaspoon freshly ground white pepper 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger 1/8 teaspoon ground cardamom 4 cups homemade chicken stock or vegetable stock, heated 1 cup heavy cream 1 sprig of fresh rosemary METHOD 1. 2. 3. 4. 5. 6. 7. 8. Preheat the oven to 350°F. Cut each squash in half and discard the seeds. Brush cut sides with 2 tablespoons of melted butter. Season with salt, pepper, and nutmeg. Arrange the squash cut side down in a roasting pan and bake until tender, about 1 hour; let cool. Fit QuadChop with chopping blades then scoop out the insides of the squash and transfer to the QuadChop. Cover with chopper bowl lid and place motor on top; chop on HIGH for 10-15 seconds or until pureed to desired consistency; reserve (you should have about 4 cups of pureed squash). In a medium stockpot, melt the remaining 4 tablespoons of butter. Over low heat, sauté the onion. Do not allow it to brown. Add the pureed squash and cook over very low heat until heated through, stirring occasionally. Do not allow it to bubble up. Season with the salt, pepper, ginger and cardamom. Pour in the stock and bring to a boil, still over low heat, stirring often then cook for about 20 minutes. In a small saucepan, heat the cream with the rosemary sprig. Remove the rosemary and pour the cream into the soup. Transfer to a blender or food processor and process, in batches, for 2 or 3 minutes. Adjust the seasoning to taste. Note: If desired, bake small squash until tender, scoop out, and use as individual serving bowls. To serve, ladle the soup into heated bowls. Place a tablespoon of Cranberry Relish in the center, top with a dollop of Cardamom Cream, then sprinkle with chopped pecans. With a sharp knife, cut the avocados lengthwise in half, cutting around the pit. Twist the 2 halves between your hands to separate them. With a sharp-edged tablespoon, scoop out and discard the pits. Scoop the avocado pulp from each half into the chopper bowl, season to taste with salt and pepper then cover with chopper bowl lid. Place motor on top then chop on HIGH until smoothly blended, stopping once or twice to scrape down the bowl. Carefully transfer the guacamole to a serving bowl. Serve immediately. Marinate in the refrigerator for at least 4 hours. Preheat the grill or a grill pan on high. On each skewer, thread a tomato, meat, onion, pepper, meat and mushroom. Repeat until you have 16 prepared skewers. Season the skewers with salt and pepper. Grill to desired doneness, about 3 to 5 minutes per side for medium to medium-rare. Serve with mint pesto. For the mint pesto, fit QuadChop with chopping blades; place all mint pesto ingredients into the chopper bowl. Cover with chopper bowl lid and place motor on top; chop on LOW for 10-15 seconds or until a smooth paste is achieved. Taste and adjust seasoning if desired.
