DESCRIPTION:
The RM series refrigerated cold pan eliminates
the mess and expense of ice in your cold food
displays. In addition, this cold pan, 9” deep, has
copper tubing wrapped around its side walls to
meet the strictest health department codes. The
drop-in pan can be installed in virtually any
counter and can be provided as fully self-contained - just plug it in and turn it on - or remote,
where there's a need to locate the compressor at
a different location.
The pan is fully insulated for maximum efficiency and energy savings, and is provided
with a factory applied gasket so that is can be
installed in the finest wood fixtures without
marring the counter top. The pan is constructed of stainless steel and is provided with a 3/4”
stainless steel drain. The cold pan accommo-
dates standard 12" x 20" pans, perfect for any
cold food serving application.

SPECIFICATIONS:
TOP: Constructed of 18 gauge, type 304 stainless
steel, die stamped with a raised perimeter bead.
There shall be a solid vinyl gasket under the beaded
edge to form a seal to the counter top, thus preventing seepage or marring of the counter top.
LINER: The inner liner shall be 18 gauge, type 304
stainless steel with 3” recessed top, one piece construction, all welded, ground and polished to a uniform finish. All corners are coved with a minimum
1/4" radius. The liner has copper tubing firmly soldered to the top 3” of all sides. A 3/4" dia. drain with
strainer, 4" PVC nipple, and valve is provided.
INSULATION: The pan is fully insulated with high
density polystyrene, 1" thick on all sides, 2" thick on
the bottom and enclosed with a 22 gauge galvanized
steel outer lines. The entire unit is removable without the use of tools.
REFRIGERATION SYSTEM: The compressor housing
shall be fabricated from formed angles /and bolted to
the base of the unit. A fully self-contained condensing
unit is provided with a hermetically sealed compressor
and a thermostat control. The system is fully charged
with HFC free refrigerant and ready to operate.
NOTE: Proper ventilation must be provided in counter.
ELECTRICAL: (RM series only) The unit will be wired
for 15 amps., 120 volt, single phase operation with an
on/off thermostat switch and pilot light. A 6' long, 3wire cord and plug (NEMA 5-15P) will be
provided.

Construction, Hardware and Insulation
Cabinet exterior front, one piece sides, louver assembly and doors are constructed
of 20 gauge stainless steel with #4 finish. Cabinet interior and door liners are
constructed of stainless steel (anodized aluminum in the A-Series). The exterior cabinet top, back and bottom are constructed of heavy gauge aluminized steel. A set of four
(4) adjustable 6" high stainless steel legs are included.
Doors are equipped with a gasket protecting metal door pan, removable plug
cylinder locks and guaranteed for life cam-lift, gravity action, self-closing metal,
glide hinges with stay open feature at 120 degrees. Hinges include a concealed
switch to automatically activate the interior incandescent lighting. Guaranteed for
life, work flow door handles are mounted horizontally over recess in door which limits
protrusion from door face into aisleways. Doors have seamless, polished metal
corners.
Easily removable for cleaning, vinyl magnetic door gasket assures tight door seal.
Anti condensate heaters are located behind each door opening.
Both the cabinet and door(s) are insulated with an average of 2" thick high density,
non-CFC, foamed in place polyurethane.

Refrigeration System
A top mounted, self-contained, balanced refrigeration system using R-134a
refrigerant is conveniently located behind the one piece louver assembly. It features
an easy to clean front facing condenser, thermostatic expansion valve, air-cooled
hermetic compressor, plenum effect blower coil, large, high humidity evaporator
coil located outside the food zone and a top mounted non-electric condensate
evaporator. Biased return air duct protects against introduction of warm kitchen air,
promoting even temperature maintenance and efficient operation. A 9' cord and
plug is provided. Standard operating temperature is 34 to 38°F.
Controller
The easy to use water resistant INTELA-TRAUL® microprocessor control system
is supplied standard. Unit is NAFEM Data Protocol communication (NDP) ready.
Optional hardware required to be NDP compliant. Third party software required
for network connection. It ­includes a 3-Digit LED Display, Fahrenheit or Celsius
Temperature Scale Display Capability, and an RS485 data port. In addition it
includes audio/visual alarms for: Hi/Lo Cabinet Temperature, Door Open, Clean
Condenser, Evaporator Coil and Discharge Line Sensor Failures, and Power Supply
Interruption.
Interior
Standard interior arrangements include three (3) wire shelves per section, mounted
on shelf pins. Shelves are full-width, and do not have any large gaps between them
requiring the use of "bridge" or "junior shelves." Recommended load limit per shelf
should not exceed 225 lbs. Optional tray slides may be purchased in combination
with, or in lieu of these. Both standard and optional interior arrangements are
completely installed at the factory.

In order to assure optimum performance, the condensing unit MUST have an adequate supply

How It Works:
The convection fan pulls air in through the grease filter [1]
which removes the majority of particulates from the air flow.
The air is then heated and returned to the cavity through the

SPECIFICATIONS:
TOP: Constructed of 18 gauge, type 304 stainless
steel, die stamped with a raised perimeter bead.
There shall be a solid vinyl gasket under the beaded
edge to form a seal to the counter top, thus preventing seepage or marring of the counter top.
HOT FOOD WELLS: Individual hot food wells shall be
18 gauge type 304 stainless steel, one piece construction, all welded, ground and polished to a uniform finish. All corners are coved with a minimum 1/4” radius.
Each well is provided with an 850 watt heating element
(1000 watt on the WIH-1).
INSULATION: The pan is fully insulated with high
density polystyrene, 1” thick on all sides, 2” thick on
the bottom and enclosed with a 22 gauge galvanized
steel outer liner. The entire unit is removable without
the use of tools.
ELECTRICAL: The unit is provided with an individual thermostat control with a pilot light for each well.
All heating elements and controls are pre-wired, and
a 6’ long, 3-wire cord and plug is provided, extending
from the control box located under the unit, on operator’s left. Available for single phase power only.

DESIGN

REFRIGERATION SYSTEM
• Factory engineered, self-contained, capillary
tube system using environmentally friendly
(CFC free) 134A refrigerant.
• Extra large evaporator coil balanced with higher
horsepower compressor and large condenser;
maintains 33°F to 38°F (.5°C to 3.3°C) for the
best in food preservation.
• Sealed, cast iron, self-lubricating evaporator
fan motors and larger fan blades give True
reach-in’s a more efficient low velocity, high
volume airflow design. This unique design
ensures faster temperature recovery and
shorter run times in the busiest of food service
environments.
• Bottom mounted condensing unit positioned
for easy maintenance. Compressor runs in
coolest and most grease free area of the kitchen.

CABINET CONSTRUCTION
• Exterior - Stainless steel front. Anodized quality
aluminum ends, back and top.

door are foamed-in-place using Ecomate. A high

For breakfast, lunch or dinner, the Ultra-Max™ throttling thermostatic
griddles provide flexibilty for a variety of menu items. Perfect for high
volume operators.
Construction:
These griddles feature 1” thick highly polished steel griddle plate with 5”
tapered stainless steel splash guard and 3-1/2” wide front access grease
trough with 6 quart grease drawer capacity. Models 860T and 872T
house two 6 quart grease drawers. Includes a 30,000 BTU aluminized
steel burner every 12” of width controlled by throttling control valve with
standing pilot light, 3/4” N.P.T. male gas connection with convertible
pressure regulator, and 4” adjustable legs. These units are approved for
installation within 6” of combustible surfaces.

Typical Specifications
Gas griddles are constructed of stainless steel, valve knobs are protected by a stainless steel bull nose front. Griddle plate is a 1” (2.54 cm) thick
highly polished steel plate with 5” (7.6 cm) high tapered wrap-around stainless steel splash guard. Unit has 3-1/2” (8.3 cm) wide front grease trough
with grease chute and a 6 qt. (5.68 L) capacity stainless steel grease drawer. Models 860T and 872T house two each 6 quart grease drawers. Units
are equipped with a 30,000 BTU aluminized steel burner for every 12” (30.5 cm) of width and are controlled by a throttling control valve with a standing
pilot light and 3/4” N.P.T. male gas connection with a convertible pressure regulator. Griddles are supplied with 4” (10.2 cm) high stainless steel legs
that have a 1-5/8” (4.5 cm) adjustment. Units are approved for installation within 6” (15.2 cm) of combustible surfaces and are cULus Classified and

Special Instructions Keyboard: This feature will allow our student customers to use a electronic key board (on the screen) to make special requests on their order (Sauce on side, no butter on toast, etc.). The special instructions keyboard is activated by a button next to each line item on order review and allows our student customer to enter text (18 characters) for each item that is passed to the ODS and kitchen receipt.
Previous Orders Module: This feature will provide our student customers the ability to enters his/her phone number to display what the last three orders placed. Our Student Customers will be able to either pick one of the past (Favorite) orders or continue on to place a new order. Previous order with 86’ed/removed items will not display. The system is designed to filter previous orders so only orders that have 100% of their items available for purchase at that moment, even if the student customer comes back a year later and the whole menu has changed Page 3

Installation and Training
Units responsibility: All equipment requires one or two 110 outlets and a network (cat 5) cable to the internet. The Order Status Monitor ( LCD Screen) will need to be mounted to a wall. There is a Client IT Document detailing out the configuration requirements. Copies of the installation documents are available and will be sent out prior to the delivery of your equipment so there is ample amount of time to solicit the support of your Client IT department Responsibility: Installers will configure the hardware with the software so the user interface is working correctly with all of the components. Time will be allocate for train the onsite staff on the use of the system and mynextep.net. In addition to there will be several videos built into mynextep.net. The total amount of hours to be included in installation and training is based upon the equipment selected.

STATION
The Kitchen Equipment Contractor shall provide accurate 1/2"=1'-0" stub-outs plans showing exact sizes
and locations of all service stubs through walls and/or floors. Services of fixtures shall shall come out of
walls whenever possible allowing clearance for traps, valves, switches, and the like.
Traps, drainlines, grease interceptors, shut-off valves and connecting piping shall be provided and installed
by the Plumbing Sub-Contractor.
Conduit, junction boxes, outlets, disconnects, and connecting wiring shall be provided and installed by the
Electrical Sub-Contractor. Interwiring of refrigeration components and remote controls such as found on a
garbage disposer shall be installed by the Electrical Sub-Contractor.
Blowers, ductwork and duct connections shall be provided and installed by the Heating and Ventilation
Sub-Contractor. Controls for such systems shall be provided and installed by the specified sub-contractor.
