The oven hood serves to cover the top of the oven and to extract the product of
combustion to the outside. At the top of the hood there must be a vent duct
installed leading to a roof top or wall mounted extractor fan. If ducting is not in
place notify the customer that ducting and an extraction fan must be installed and
operational before the start-up can be completed.
Controls Compartment
Within this compartment are the electrical & gas supplies and all electronic
controls. If utilities are not connected notify the customer that the start-up can
not be completed until they are connected and inspected. Incoming gas supply
Door and Bake Chamber
Heated bake chamber and rack lift and rotation carrier.
The oven should sit level to within one eight (1/8") of an inch. If it does not please notify the customer to have the installers return
and level the oven.

Keep the oven door open at this time.
There should be an audible "Beep" from the oven controls, the extractor fan should
operate, the oven interior light(s) should come on. The control display should read Door
Open.

Place a piece of 18" x 26" parchment paper directly on the hood filters, if the extractor
fan is operational there should be enough suction to hold the paper in place.

Inspect Heaters and Power

With the oven door closed the controller will show the Manual recipe screen. The rack
carrier will lift and rotate and the convection blower motor will start.
If the control display still shows Door Open when the door is closed an adjustment to the
door switch will be required (See Illustration - 9).
Provided that the extractor fan, door switch and air switch are all functional the
contactors will close and the oven will begin to heat.

If an oven rack is available install one into the rack carrier (see illustration - 7A & 7B)
If a rack is not available measure the distance between the floor and the lowest bottom
edge of the carrier. It should be 69" when the carrier is in the lowered position.
With the rack installed in the carrier, close the oven door and allow the rack to lift and
start rotating freely without the wheels dragging on the floor.
Step 7
Inspect rack upper height
If a rack is not available, close the oven door and allow the carrier to lift and begin
rotating. At the controller press the POWER key. Open the oven door and measure the
distance between the floor and the lowest edge of the carrier, it should be 70.5" +/- 1/8".

Note: Used oven racks can greatly affect these adjustments as the rack heights may vary as much as 2". If the customer's racks are
used adjust the rack carrier using the tallest and shortest racks. If the racks are too short notify the customer to procure new
casters.

Check voltage at transformer and at contactors

Adjust door switch actuator or weight (see illustration 9).
Check oven control temperature setting.
Check white connecter on top of oven, ensure that all
pins are making contact (illustration - 10 and).
Inspect switches at the lifter actuator located on top of
the oven.
Inspect pointer switch at top of oven.

With the oven on and the door closed inspect the blower motor rotation. It must be
counter-clockwise as viewed from the top of the motor, re-phase power supply to change
rotation if necessary.
Inspect that the vent damper cover is installed and that the wiring harness is connected.

will energize and lift the vent cover allowing the bake
chamber to evacuate the steam.
At the end of the bake the alarm will sound.
