• Identify which cookers have been set up
to cook which products.
• Select the cooker to be used for the
product that is to be cooked.
A dedicated fryer and
filtering unit must be

this could cause oil to
boil over from cookpot.
Stirred fines will also
produce spotted chicken,
which is unacceptable.
Check Oil
• Check shortening level before cooking
each round of chicken. Adjust shortening
as needed. Refer to Adjust Shortening

finished product from
being undercooked or not
to standard.

• When the display reads "droP" again,
slowly lower the basket into the oil.
• The cooking cycle has ended when the
alarm sounds and the display reads
"DONE".
• Press the relevant button to end the
cooking cycle.
Start Cooking Cycle
• Do not close and lock the lid, unless you
are using an 8 Head Henny Penny. On
an 8 Head you will close the lid. Please
ensure that all the cook programmes
reflect that the Solenoid is OPEN.
• Press the relevant button to start the
cooking cycle.
Never cook any product
for less time or at lower
temperature than the
standard. Undercooking
chicken can result in poor
product and potential
health risks.
Never cook any products
for less than the
specified time at a
lower temperature than
specified.
Remove Basket from Cookpot
For Henny Penny 4-Head Cooker:
• Remove basket; hang it on rim.
For Henny Penny 8-Head Cooker:
If the cooking cycle is
ever interrupted due to a
power outage, program
mistake, or otherwise oil
in any fashion, the
chicken in the fryer
MUST be discarded.
Record Amount Cooked and Time
• Basket will remain hanging on lid.
For Collectramatic/ Wells
Pressure Fryer:
• Lift basket, using a drain hook.
• Place hook handle in lid lock block.
• Record actual number of heads cooked
and time out of cooker, on MP&C chart.

seconds over the cook
pot, or the end product
may be too greasy.
Rack Zinger Wings
• Rack the cooked wings on a solid bun
pan with a rack and move to the Upright
holding cabinet or the Display cabinet
(HCW3/5) or Prince Castle Unit.
• Record the 60 Minute holding time on
a Hot & Fresh tag and immediately
place the wings in a dry, upright
holding cabinet or the Display Cabinet
(HCW3/5/8) on a solid bun pan with a
rack. For Prince Castle Holding Unit,
select the appropriate key.
• Drain 5 minutes before serving to be
sure excess oil is drained and a quality
product is served.
• Discard any left-over wings at the end of
the 60 minute hold time.
• Why is top stirring so important when
cooking chicken?

shortening level and adjust as
necessary?
• If the cooking cycle is interrupted, what
should you do with the chicken?
• How long should all chicken be drained
for?
Clean Up
• Leave the cooker in "CooL" more if not
cooking again within the next 10 minutes.
• Wipe exterior surface of fryer with clean
pink/red cloth and degreaser (do not get
degreaser in cookpot). Remove all oil
and breading residue, then wipe with
sanitiser.
• Clean all smallwares using the 3-step
cleaning method.
