Before long, the company came to specialise in enamel products, and Gaggenau’s recipe for its sturdy oven enamel became the basis for the success of its charcoal and gas ovens, which it continued to manufacture until well into the 20th century. In 1961, Gaggenau was taken over by the visionary entrepreneur Georg von Blanquet, under whose leadership it became a premium international brand. Von Blanquet was excited by the idea of custom-made fitted kitchens, something which was revolutionary for that time. A passionate cook in his spare time, von Blanquet accepted no compromises in his quest to create professional appliances incorporating a plain and functional design – a creed to which Gaggenau has remained faithful to this day. A variety of glass composites are used as raw materials for the typical blue enamel of our ovens. 7 Craftsmanship. Gaggenau appliances are crafted by hand in a process involving many stages and assembled piece by piece in our workshops. Manufacturing our ovens involves countless steps which can only be carried out manually, such as the assembly of fronts and cable looms. Even the control modules on our 200 series ovens can only be polished manually, for instance. Our philosophy demands loving attention to all details. Only the toughest, best-quality materials are suitable for consistent use in a kitchen over a period of many years. The grinding unit of our fully automatic espresso machine is a good example – it operates almost without wear, and its innovative design makes it unusually quiet. These details, used in the selection of materials and processes, may not be visible, but make a recognisable difference to the taste. That’s because the grinding unit’s three different grinding zones guarantee an ideal grain size distribution and thus enable the aroma to develop perfectly. It is made of high-quality ceramic material and is extremely long-lived. 10 11 Innovations. 12 No other company has revolutionised common kitchen practices as much as Gaggenau: built-in ovens, glass ceramic cooktops, pyrolytic self-cleaning, the Combisteam oven for the home and oven doors that can be opened from the side. The list of our achievements is remarkable. But that certainly doesn’t mean we’re resting on our laurels. More than 30 staff in research and development are already working on further ideas. As a result, the net volume and the energy efficiency can both be increased. 13 Design. On the international stage, Gaggenau is a regular recipient of design prizes. After all, engineers and designers work hand-in-hand at Gaggenau. They create objects that set the benchmarks with regard to functional and aesthetic criteria. One successful example of this is provided by the solid aluminium door racks of our Vario cooling 400 series. They are purposefully recut in order to create uniquely precise contours. As a result, simplicity meets state-of-the-art design. Par for the course at Gaggenau. The metal cutter heads with which the aluminium is reworked. This enhancement makes the material a pleasure to see and touch. 14 15 16 The Gaggenau products. 17 18 Baking. Very large ovens have traditionally been used in gastronomy. Besides roasting, baking and grilling, they are also used for preparation or to keep individual meals warm while others are still cooking. It is this wide range of requirements that provides the inspiration for our domestic kitchens. This combination of oven and Combi-steam oven enables all conceivable culinary challenges to be mastered to perfection. The best results are obtained when the appliances are built in at eye level so that the cook is provided with an ideal view. The high-visibility glass frontages are made from high-quality transparent glass capable of resisting temperatures of up to 485°C, such as those that occur during pyrolysis, the automatic self-cleaning. At the press of a button, the current temperature inside the oven appears on a temperature gauge. Other handy features, the likes of which will delight even professional chefs, are shown on the pages that follow. 19 20 200 series ovens. The distinct look of the appliances of the 200 series ovens is defined by the compact LCD control module with its simple use of menus, digital clock and timer. The multiple-glazed doors can be opened at full height from the side, either to the left or to the right depending on how you choose to install them. Frontages are made from glass and backed with stainless steel or aluminium. The panorama view and halogen lighting ensure the cook is provided with optimum visibility of the interior. The series uncompromisingly brings ultra-modern professional technology into private kitchens. Whether it’s a combination of an oven, a Combi-steam oven and a warming drawer one above the other or a side-by-side combination of 45-centimetre-high appliances such as a fully automatic espresso machine and a Combi-steam or steam oven – a multitude of perfect-looking combinations is possible. 21 Combi-steam oven BS 281. The BS 281 has a fixed inlet and outlet water connection. Five humidity levels can be combined with temperatures of up to 230°C, meaning that these ovens can do everything: steaming, baking, simmering, braising, regenerating, extracting juice. The BO 281 has the widest range of features of the ovens in the 200 series – here with an aluminium-backed glass frontage and a width of 76 cm. The same 60 cmwide model is shown on pages 36/37, where you will also find a detailed description. Warming drawer WS 282. The WS 282 has space for a dinner set for twelve persons. The interior is food-safe. Frontage: Aluminium-backed glass frontage (also available with stainless steel backing). Dimensions: 76 cm wide; 27 cm high; net volume of 56 litres. Temperatures: 40 °C to 80°C. Ideal for defrosting, keeping warm and using residual heat for cooking. 22 23 Oven BX 280. The BX 280 consists of two ovens with a total of 17 different heating methods. This means that several dishes can be prepared simultaneously. Overall, the appliance has a net volume of 220 litres, which means 110 litres per cooking compartment. See pages 38/39 for more details. 24 25 Pull-out system with roaster. Baking trays, wire racks, pans and even the rotisserie spit are fully extendable thanks to this effortless new system. If you want to baste a roast, for example, one simple move is enough. The pull-out system can be used on every level and its cast iron frame can easily be cleaned with the oven’s pyrolytic function. The Gaggenau Gastronorm roaster (GN 2 / 3) is also directly incorporated into the system. It is not only ideal for all ovens with a roasting function, but also for Combi-steam and steam ovens and induction cooktops. The roaster’s lid also serves as a casserole dish or as a piece of cookware. 26 27 Core temperature probe. The core temperature probe lets you cook meat, fish and pastries or pies to perfection. Simply insert the tip of the probe into whatever it is you are cooking and it will measure the temperature in the centre, which will then appear on the function display. As soon as the set value for the inside temperature is reached, the heating element switches itself off automatically. A signal will then sound immediately and at intervals to inform you that the core temperature has been reached. It is a convenient device that can be used both for Gaggenau ovens and for Gaggenau Combi-steam ovens. 28 29 30 Combi-steam oven BS 250. The use of pressureless steam is one of the most effective cooking methods there is. In the Combi-steam oven BS 250, this can be combined with hot air, meaning that these ovens can do everything: steaming, baking, simmering, braising, regenerating, extracting juice. The use of pressureless steam is one of the healthiest cooking methods and the best way to retain vitamins, minerals, consistency and colour of food. Meat is tender and succulent, while seafood is never too dry and vegetables are turned into a delicacy. Everyday meals that easily stick to the surface or disintegrate become easier to make than ever. Steam is ideal for blanching spinach, skinning tomatoes or gently reheating meals which have already been cooked. The use of hot air in cooking is ideal for crispy roasts and gratins – simply switch off the steam shortly before the end of the cooking time to allow everything to brown at a high temperature. The result: the outside will be crispy and the inside succulent – just like it should be. 35 Oven BO 271. The BO 271 has the widest range of features of the 60 cm-wide ovens in the 200 series. Commercial brick ovens are traditionally fired from below, with the heat transmitted through the stone base. The same principle is used here. A separate heating element heats the compact ceramic stone from below to temperatures of up to 300 °C. There is no heating from above with this oven, so that your pastries will taste Danish, pizzas Italian and bread like it’s from the local baker’s. The baking stone and heating element are available as special accessories. 38 39 Warming drawer. Gourmets regard Gaggenau warming drawers as a secret compartment which can do much more than merely heat plates. The interior is made from hygienic stainless steel and glass, and it’s food-safe. At temperatures between 40 °C and 80 °C, they can be used for browning roasts, getting pastries to rise or keeping soups warm, and are also ideal for gentle defrosting. Warming drawers are available in two different sizes and can be combined with the oven, Combi-steam oven, or the fully automatic espresso machine, as required. The WS 282 model shown here is in the 200 series design and is ideal for combination with an oven as shown on pages 22/23. The warming drawer holds up to twelve dinner plates including soup bowls. 40 41 42 Professional oven EB 388. Top chefs love this Gaggenau classic. Though you wouldn’t know it from looking at it, the EB 388 is our oldest model. The design has been so timeless for the past 20 years that it still sets standards. And now as then, it’s manufactured almost entirely by hand – a real professional appliance. Dimensions: 90 cm wide; net volume of 78 litres; space for three to four joints, large-sized game or a small lamb. Eleven heating methods: Electronic temperature control from 50°C to 300°C. A special feature of the EB 388 is that top heat can be combined with 1/ 3 bottom heat, and bottom heat with 1/ 3 top heat. Ideal for finishing off a roast, or when baking or making gratins. It is consumed in a dazzling array of varieties and at all times of the day – and night. Meeting every individual wish requires more than just an outstanding coffee machine – it also calls for the instinctive touch and years of experience of a professional barista. Both of these qualities are united in our new fully automatic espresso machine CM 250. Without needing any sort of warm-up phase, it is ready to produce all imaginable coffee specialities – espresso, latte macchiato, cappuccino and milk coffee – within a few seconds. Special requests are no problem either. The CM 250 can even remember your favourites – just as you’d expect from your own personal barista. 48 49 Fully automatic espresso machine CM 250. The CM 250 prepares every variation of espresso and milk-mix drinks, as well as the classic cup of coffee, warm milk and hot water for other beverages including tea. The frontage design combines perfectly with the appliances in the 200 oven series. Frontage: Aluminium-backed glass frontage. Dimensions: 60 cm wide; 45 cm high. Operation: The desired drink at the push of a button. Thanks to the integrated milk system the cup need not be moved. Personalisation function: Makes it possible to automatically prepare six individual beverages according to one’s personal taste and save them to memory. Lighting concept: Up to seven different lighting scenarios. Grinding unit: The grinding unit with high-quality ceramic discs is extremely long-lived. It grinds fresh coffee beans into superfine powder almost silently. Heating system: A continuous flow heater ensures that the appliance requires no warm-up phase. When needed, the water reaches the optimal brewing temperature within seconds. Aroma brewing technology: Presses the coffee powder together and whirls it during the brewing process so that all the aromas can develop freely. Even professional chefs and gourmets have grown to treasure our state-of-the-art induction technology, not forgetting the classic gas cooktop. Induction appliances react just as fast as gas appliances, while generating much less ambient heat. That’s why nowadays both technologies can be found side-byside in many professional kitchens. The issue of energy supply is often the crucial factor in deciding which option to go for. The electricity needed for glass ceramic cooktops or induction appliances is available just about everywhere, whereas a gas con nection cannot be taken for granted. But help is at hand, because all Gaggenau gas cooktops can also be operated with bottled gas! This is a great way to install a gas cooktop next to a large glass ceramic cooktop. Use this chapter to read up on the countless advantages of Gaggenau cooktops. 55 Vario cooktops 400 and 200 series. The Vario series feature perfectly specialised appliances for every conceivable cooking challenge: classic glass ceramic, gas and induction cooktops and special appliances for grilling, deep frying and steaming, as well as suitable ventilation elements. What’s more, everything can be combined. Appliances from the professional 400 series are 38 cm wide and made of brushed stainless steel. An illuminated orange ring surrounds the knobs on the front. Appliances from the 200 series are 28 cm wide and are made of shot-blasted stainless steel. Here, the control knobs are integrated into the panels of shot-blasted aluminium. 56 57 58 Gas cooktop VG 421. The perfect blend of sophistication and functionality. B urners: Both a high output and a standard output burner, each with two flame rings for all types of cookware. Smooth-surface cast pan support: For the hassle-free moving of cookware from one burner to the other. Automatic fast ignition: The flame immediately ignites at the desired setting without having to keep the knob pressed. Two independently-controlled cooking zones. Automatic pot detection: For pots with a diameter of up to 28 cm. The heat develops directly at the bottom of the pot and therefore doesn’t have to be transmitted from the cooktop to the pot. Teppan Yaki VP 421. For frying or cooking directly on the metal surface. Two cooking zones: Each with an output of 1150 watt. For grilling without the grease – directly on the wire rack. Two grilling zones: Independently controlled for simultaneous grilling and keeping warm. Covered heating elements: Reduces grease burning. For healthy steaming, warming, thawing, heating up and even simmering without losing vitamins. Doesn’t just work with water, but also with stock or white wine. Electronic steam control: Saves time and energy as only the amount of steam needed is actually generated. Cooking on two levels: Two cooking inserts can be used for simultaneously steaming different foods while ensuring that the taste of one is not transferred to the other. Freshness is one of the most important ingredients when one is preparing dishes of the highest quality. It’s also one of the most sensitive. Just one second’s distraction is enough to irreparably overcook it. Baking and cooking with steam is one of the gentlest preparation methods. That’s because cooking with pressureless steam largely retains the colour, vitamins and minerals of vegetables. Meat and fish cannot dry out, and the natural consistency is retained so it tastes just the way it should. Further information on steam-baking and cooking can be found on page 135 and in our glossary. Flavour. Both with storage and cooking, it is important to retain the food’s unique flavour. With mushrooms for instance, any soil or leaves should be removed using only a fine mushroom brush before cleaning them with a damp cloth. Afterwards, they should be cooked or prepared as quickly as possible. To give them a more intense taste for later consumption, they can also be dried – for two hours on a baking tray at around 80°C with recirculation. Dried mushrooms can be kept in airtight containers for months on end, and even the s mallest quantity is enough to enliven soups and stews. Recipes. There are two types of cooks – on the one hand there are the traditional types who prefer classic recipes from their country’s national cuisine and, on the other, there are the more experimental ones – the type who, for example, don’t shy away from creating a delicacy from maize and caviar, which they call “liquid ravioli”. The Vario series of cooking appliances offer a wide range of cooktops for both types of cook. These can be assembled entirely according to individual requirements and added to at any time – so you can switch from a classic gas cooktop to Teppan Yaki or an induction wok. This makes Vario cooktops the ideal option for all kinds of recipes. Smells and odours. The smell of baking cakes is generally a welcome aroma, but other odours arise during cooking which are not so pleasant. Many tips exist on this subject. In the case of cabbage for instance, adding a bouquet of parsley or a walnut to the water while cooking is recommended to reduce the odour. This holds for all types of cabbage, including Brussels sprouts, cauliflower or savoy cabbage. However, confusion prevails when an odour is drifting through the refrigerator and affecting other foods. Here, there is no simple cure – only first-rate technology. For this reason, many of our cooling appliances feature a ventilation system with an activated charcoal air filter. The appliances of the Vario cooling 400 series have been additionally equipped with a stainless steel interior to prevent the build-up of odours. This appeals to the eyes as well as the nose. Vitamins. Herbs and spices such as parsley, dill, sweet basil and garlic flowers refine every good meal. They are also rich in vital vitamins, trace elements and minerals. The importance of stable storage of these natural materials is widely known. In order to create ideal conditions for many different types of food, we’ve incorporated a variety of climate zones inside our cooling appliances. These enable temperatures and humidity to be individually controlled and adjusted to meet the individual needs of each type of food. 100 Cooling. Professional chefs know that there are great differences in how food needs to be stored. Some foodstuffs require that little bit longer to mature while others favour a particularly cool environment. Exclusive drinks are stored at cool temperatures but need to be brought up to drinking temperature with care and precision. In order to meet the highest demands, we’ve continued to develop our range of cooling appliances unabated. 101 102 Stainless steel interior. The interiors of all the appliances in our Vario cooling 400 series are panelled in stainless steel – a material chosen for more than just its visual qualities. Stainless steel also guarantees 100 per cent hygiene. Giving off no harmful substances itself, when in contact with oxygen and moisture it can work to neutralize odours. This added benefit takes place at the molecular level and – in the refrigerators at least – remains completely invisible to the human eye. In the freezers, by contrast, the stainless steel is covered by an extremely thin sheen, resembling a frost pattern that provides visible proof of the appliance’s functionality. 103 Bottle trays made from untreated beech. These adjustable racks offer plenty of storage space and have a variety of uses. Made from solid anodised aluminium, they are particularly hygienic and easy to clean, while also preventing odour transfer from food. Anti-clump ice system A Activated charcoal air filter In order to keep cooling appli ances and wine climate cabi nets free of odours, the air circulates through an antibacte rial activated charcoal air filter that removes and captures odour particles. In ventilation systems with recirculation, the filter removes odours from the cooking steam before the air is recirculated into the kitchen. Actual temperature display Precise temperature control and monitoring are especially im portant when preparing certain dishes. The actual temperature display allows you to check the temperature in the cooking com partment whenever you want. If, for example, you turn down the temperature, it enables you to see when the new desired tem perature has been reached in order to get the maximum bene fit from residual heat. Not even all commercial appliances have this unique Gaggenau feature, which is highly appreciated by discerning home chefs. 126 Adjustable brewing chamber The brewing chamber can be adjusted to accommodate a coffee quantity of between 7 and 14 g, allowing you the freedom to choose between weak and strong coffee or however you like it. Air cleaning catalyst A catalyst in the oven’s interior rids the air of grease particles and odours. This means that the kitchen no longer smells of in tensive oven odours. The heated catalyst also delivers an opti mal performance at low temp e ratures. A unique Gaggenau feature. Air extraction/air circulation Most Gaggenau ventilation hoods are available as air ex traction or air circulation appli ances. In both cases the air, which contains grease particles and odours, passes through a grease filter that protects the inside of the hood and the extraction pipes from deposits. On the air extraction version, the pre-filtered air is conducted through the wall into the open air or into a ventilation shaft. On the recirculation version, the odours are absorbed by an addi tional active charcoal filter so that nothing but odour-free air is conducted back into the kitchen. For best efficiency the charcoal filter should be changed twice a year. This prevents ice cubes from clumping together in the Vario RF 463 freezer. It involves mov ing the ice cubes at regular intervals. Aqua sensor This reduces the consumption of fresh water without com promising the cleaning results. With normal soiling, up to six litres of water can be saved, depending on the programme chosen. The Aqua sensor de tects whether the water is clean enough for the next wash cycle. If so, the water change proce dure is skipped. Regardless of the water’s cloudiness level, the system also detects small dirt particles. To do so, it uses an infrared sensor that detects fats, oils and proteins, as well as an additional green light sensor that recognises substances such as tea residue or bits of spinach. Aquastop A multi-active and networkindependent system of protec tion devices prevents damage caused by water. With all our dishwashers, users are no longer required to manually turn the water tap on/off (which is otherwise necessary). Even if the appliance is switched off, the discharge pump is immedi ately activated if there is a leak or flooding. All this with a life long performance guarantee. Aroma-Whirl brewing technology This technique ensures an in tensive coffee taste. During the brewing operation, the coffee powder is whirled at high pres sure to ensure all coffee grains are exposed to water and all flavours are released. Automatic cleaning and descaling programme The coffee machine has a com puter-controlled cleaning and descaling programme. The most important steps are shown on the display screen and the rest is controlled automatically. The only requirement is to en sure the appropriate cleaning or descaling agent is used. Automatic defrosting in the freezer compartment See No-Frost technology. Automatic defrosting with evaporation of condensation water The cooling compartment evap orator is defrosted automatically at regular intervals. The tempe ratures in the cooling compart ment remain virtually unchanged during this process. The small quantity of condensation water is led into a container via an outlet channel where it evapo rates. The minimum storage temperature is kept constant in the freezer compartment during defrosting. Automatic detergent function The dishwasher’s control system automatically detects when de tergent tablets are being used instead of individual detergents. The programme is adjusted to suit the particular conc entration of components, thereby ensur ing optimal cleaning and drying results. This function does not have to be set manually and guarantees great results regard less of the water hardness. Automatic programmes with weight specification These provide excellent results when cooking or defrosting fresh or deep-frozen food in the microwave. Simply select the desired programme and enter the weight of the meal. B Baking stone This accessory turns your oven into a professional brick oven. The baking stone is heated to temperatures of up to 300 °C by a separate heating element. Ideal for bread or pizza. Baking tray spray head For cleaning large items such as baking trays, wire racks, metal filters or vases in the dishwash er. The upper basket is removed from the dishwasher and the baking tray spray head – which is supplied as standard – is fitted. The even distribution of the water jets ensures optimum washing results. Booster function This is used for quick boiling on induction cooktops. The boost er function increases the power in each cooking zone by 50% for a short period of time. Since this additional power is taken from an adjoining cooking zone, the function is only used if the adjoining cooking zone is not being used. Built-in appliance Fully integrated cooling appliances: Can be fully inte grated into a built-in niche, flushfitted with the furniture elements on the side, and covered with furniture panels. C Capacity display for filter cartridge Baking stone. It can transform your oven into a professional brick oven. A separate heating element provides the necessary heat. If a descaling system has been built into the water inlet, the fil ter will have to be changed at regular intervals. The appliance’s electronics calculate the capa city in accordance with the water hardness. Whenever the machine is switched on, the remaining capacity is briefly shown on the display. Cast pan support with pecial enamelling s With Vario gas appliances this is one-piece, while with larger gas cooktops it is two or threepiece; prevents even small pots and pans from toppling over. Not suitable for cleaning in a dishwasher. Catalytic special enamelling The special enamelling at the back of ovens means that ovens without the pyrolytic system are now easier to clean. During the process of catalysis, dirt is broken down by oxidation with atmospheric oxygen at tempera tures upwards of 200°C. This cleaning takes place while the oven is in normal use. If the oven is very dirty, you are advised to clean the non-coated surfaces by hand, and then heat the oven up to about 200 °C for a few minutes. This is a particularly good way of dissolving fatty stains. The pyrolytic system is the only system capable of optimum oven cleaning. 127 Cleaning programme in the Combi-steam oven Container for second coffee type Soiling inside the oven is soft ened with the help of steam. The inside of the oven can then be easily cleaned. In addition to fresh beans, a second ground coffee type can be used. Cooking timer D Deep fryer Basket hangers: Two baskets can be inserted into the cover for draining simultaneously. Coanda effect This aerodynamic technique is used by Gaggenau to extract the cooking fumes which oc cur at the front of a cooktop more efficiently. Part of the air flow generated by the fan exits through the top of the ventila tion hood and is guided down wards over the rounded front edge, intercepting fumes which might otherwise get past the front of the ventilation hood. This new air conduction system enables efficient air purification even at lower power levels. As a result, less energy is used and less temperate air is removed from the room. At the same time, the noise level is reduced considerably. Condensation drying During the dishwasher’s drying cycle, the hot steam condenses in the form of droplets on the sides of the heat exchanger – which is filled with cold water – and the water then runs off. The heat exchanger exploits the residual heat for drying purpos es by siphoning off the water into a container on the side. Compared to conventional ap pliances, this procedure reduc es energy consumption by 15 per cent, and results in hygienic drying without any additional energy or an external air supply. 128 The time at which you want one or more cooking zones to be automatically switched off can be selected up to 90 minutes in advance. The integrated clock can also be used as a shortterm timer, irrespective of the appliance’s other functions. In the case of appliances from the Vario cooktop 400 series, the cooking timer is available as an accessory via the connecting strip with timer. Each connect ing strip can be used to operate two appliances. Cooled housing with overheating protection Gaggenau ovens have a tem perature protection system to protect the appliance and the fitted units from overheating as well as an automatically cooled housing, which continues to cool down the appliance after the oven has been used. Core temperature probe with automatic shut-off The core temperature probe in ovens and Combi-steam ovens controls the temperature in the centre of food. Appliances switch themselves off once the desired core temperature has been attained. This ensures that no matter what is being cooked, it is always cooked just the way it should be. The core tempera ture probe can also be re moved. Cleaning level (Vario 400): Water for cleaning the deep fryer can be brought to the correct temperature of around 40°C in the appliance itself. Fat melting setting: This gen tle, smoke-free heating method enables fat to be used consider ably longer. It is equally suitable for use of oil or solid fat. Swing-out heating element: For easy cleaning of the stain less steel vat, the heating e lement can simply be pulled out and up. Three-zone, professional kitchen design: · · · F oam expansion zone: The upper part of the frying basin is widened to prevent the oil from overflowing during the deep-frying of food contain ing water or which is deepfrozen. D eep-frying zone: Located directly above the electron ically controlled, swing-out heating element. C old oil zone: Food parti cles which break off during deep-frying sink into the cold oil zone under the heating element, where the oil tem perature is lower than in the deep-frying zone. The parti cles cannot burn and release no flavour into the oil. This means that fat can be used for much longer. Defrost assistance in the freezer compartment During defrosting, the bottom drawer of the freezer serves as a collector for the condensation water. Descaling programme The vaporiser container, which is used to generate steam in the interior of a Combi-steam oven with a water tank, or a steam oven, can be descaled effort lessly using this programme. Simply fill the water tank with a descaling solution and the pro gramme takes around 30 minutes. Door opening angle in Vario cooling The wide-opening doors, which open to a 115 degree angle, are truly unique – the particularly sturdy hinges make it possible. Where necessary, these hinges can also be fixed at 90 degrees. Drawers and shelves can then be fully extended. Downdraft ventilation An interesting and highly-effec tive alternative to classic ven tilation hoods. Downdraft venti lation is integrated directly into the cooktop and it siphons off cooking vapours right there where they emerge. Even the steam from tall pots is effec tively removed if the lid is left slightly open at the side towards the ventilation. If you value clear contours and unrestricted head room in your kitchen, down draft ventilation is definitely the most unobtrusive solution. The design of Gaggenau downdraft ventilation units is the perfect match for cooktops from the Vario 200 and 400 series. All downdraft ventilation units are configured with separate re mote fan units for air extraction. Drying programme With this function, the inside of the Combi-steam oven can be dried with hot air. The drying procedure takes about 20 min utes and is recommended after each steaming or cleaning pro cedure. Dosage assist Integrated into the top basket, the dosage assist ensures that detergent tablets are fully dis solved in a controlled manner. This is a prerequisite for ensur ing the best possible cleaning results. Tablets can no long er fall between plates or into the cutlery basket. What’s more, the dosage chamber is positioned in a way that prevents scraps of food from dropping into it dur ing loading. Yet another advan tage: the jet spray no longer directly hits the inner door and the appliance is quieter. Dynamic cold air distribution A ventilator ensures an even temperature distribution across the whole cooling compartment, thus ensuring longer food-stor age times. With dynamic cold air distribution with Multi-AirFlow, an additional air channel in the door and additional vents in the cooling compartment en sure faster and more constant temperature distribution. E Eco In this operating mode, all energy-dependent functions of the oven are optimised to make them especially energy-saving. For example, the light is switched off or any available residual heat is used for baking or roasting. Electric grill Independently controlled heating elements: This enables you to grill in the front section while the rear section is used for keeping warm. Both glow bars can be folded up for clean ing the lava stone container. With the 400 series wire rack, the heating elements are covered so that smoke emissions are very low since grease is prevented from dripping onto the heating elements. Downdraft ventilation. A highlyeffective alternative to classic ventilation hoods. Downdraft ventilation is integrated into the cooktop and it siphons off cooking vapours right there where they emerge. Solid cast roaster: Practical accessory for grilling and c ooking on a smooth surface, e.g. shrimps, or vegetables. Also just the thing for preparing egg-based dishes such as pan cakes or crêpes. Stainless steel container with lava stones: With a per forated base so that grease can drip into the removable drip tray. The stainless steel con tainer and the grease drip tray can be cleaned in the dish washer. The lava stones need to be changed when they become heavily soiled. Electronic boiling point detection This calibration enables the electronic system to detect the boiling point automatically. This enables the same cooking results to be achieved, regard less of the altitude of the instal lation location above sea level. 129 Electronic flame monitoring with automatic re-ignition If a burner’s gas flame is extin guished accidentally, it is reignit ed immediately, and should the automatic re-ignition of the flame fail, the gas supply for all burn ers is interrupted immediately: Maximum safety due to the principle of ionisation. Electronic temperature c ontrol Precise temperature control prevents temperature peaks in ovens which might impair cook ing of delicate dishes. With cooling appliances, precise tem perature setting enables longer storage times. Operation of all settings and special functions is via the keyboard, and the tem perature is displayed digitally. Solid cast roaster. Practical accessory for grilling and c ooking on a smooth surface. F Fan unit Downdraft ventilation units are operated via a separate fan. Fan units can be installed, depend ing on the construction type, in kitchen furniture, in another adjoining room, in the cellar, loft or outside, on the wall or roof. As in the case of an inte grated fan, the functions are controlled via the control panel of the ventilation unit. The re mote fan units are supplied for air extraction. Fast cooling Similar in function and effect to the fast freezing function. Auto matic fast cooling generates the maximum chilling power, there by minimising the warming up of items already stored in the refrigerator when new items are added. The appliance automat ically reverts to the standard mode. 130 Fast freezing This maximum power setting is for the quick freezing of unfrozen items, while also preventing al ready frozen items from warming up when new items are added to the compartment. What’s more, fast freezing has a beneficial im pact on the durability and qual ity of frozen food after thawing. This setting ensures that the cell structure of frozen food is not damaged by the freezing process, thereby preserving the food’s taste and freshness. The appliance automatically reverts to the standard mode. Fast ignition Press the knob on the gas cooktop, turn to the desired setting and release – the elec tronics immediately ignite the flame and keep it burning with out the user having to keep the knob pressed. Fixed inlet and outlet water connection During installation, the Combisteam oven is connected direct ly to the water inlet and outlet. This means that fresh water is always available for all cooking tasks and that you don’t have to fill and empty a water tank. Flex Plus drawer: It is available as a special accessory for all dishwashers with 6 programmes. Used as a third loading level above the upper basket, it is ideal for large items of cutlery, cooking utensils or espresso cups. When fitted with this draw er, the dishwasher’s capacity increases to 14 place settings. Lower basket: With dividable glass holders, folding spines, foldable racks and a large cutlery basket, this provides plenty of leeway to load the appliance as you see fit. Upper basket: The extra extendable, smooth running pull-out rack and Rackmatic mean there’s virtually no limit to the possible loading combi nations. Thanks to its ball bear ing mounted telescopic rails, the basket can be easily pulled out – even when carrying a heavy load. What’s more, dishes and glasses are easy to access, even when they are at the back of the appliance. All folding spines, foldable racks and glass support bars can be fully folded, thereby ensuring even greater flexibility. Freezing capacity The maximum amount of unfrozen goods that can be cooled down to at least –24 °C within 24 hours. Flex Plus basket system For greater versatility and con venience when loading and unloading. This system is partic ularly flexible and can accom modate plates with a diameter of up to 33 cm. All dishwashers with 6 programmes feature this system as standard. Fresh cooling In order to preserve appear ance, taste and nutrients for longer, the fresh cooling com partment is kept up to 3 °C cooler. This means that fresh meat, ham, salami and cheese can be stored for almost twice as long as in conventional cool ing systems. Fresh cooling close to 0°C Creates storage conditions for fresh food similar to a profes sional cold storage unit. The temperature in the fresh cooling zone is kept consistently at just above 0 °C. Unwanted decom position processes are slowed down, food is kept fresh for an average of twice as long as in conventional cooling systems, and there is no danger of food being spoiled through overcooling. Frying sensor The frying sensor function lets you make fried food that is healthier and uniquely delicious. This is because the frying sen sor ensures that the tempera ture remains constant – enabling the food to be browned evenly on all sides. At the same time, the constant temperature prevents the pan from overheat ing. This saves energy and is healthy because no fumes are produced and the fat doesn’t burn. Once a particular cooking zone has been selected, the frying sensor function is acti vated by touching the graphic thermometer symbol on the cooktop. As soon as the ideal temperature has been reached for starting to fry, there is an audible signal. Apart from the pre-set frying level “min”, three other levels can be chosen – “med”, “med+” and “max” de pending on the type of food you want to fry. Fully automatic rinse programme Function display 300 series ovens All functions and the time are shown clearly on the display screen of the 300 series ovens. The digital clock can also be used as a short-term timer, irrespective of the function set for the appliance. The timer functions allow both the length of the cooking process and the time at which the oven is to be switched off to be programmed up to 24 hours in advance. G Gaggenau enamel Practically nothing sticks to this special blue enamel surface. A simple wipe with a wet sponge and a little washing-up liquid generally suffices for cleaning after using the oven. Thanks to their Gaggenau enamel surface, the grill pan and oven tray can also be cleaned easily in the dishwasher. Gastronorm Gastronorm roaster: For sear ing and braising on induction cooktops and in Gaggenau ovens with the roasting function, insofar as they are equipped with the pull-out system. The top and bottom parts of the cast aluminium Gastronorm roaster in the GN ⅔ format can also be used independently of one another. The multi-layered mate rial ensures even heat distribu tion and is easy to clean thanks to the non-stick coating. Flex Plus basket system. For great versatility and convenience when loading and unloading. Whenever the coffee machine is switched on or off, all water pipes – including the coffee dispenser – are rinsed. A big plus for both hygiene and a fullbodied coffee taste. 131 Glass basket (special accessory) Grease filter in front of hot air fan This special basket prevents cups and glasses from tilting over during washing and can accommodate up to twelve long-stemmed wine or cham pagne glasses, or 24 cups. The fumes which occur during baking and frying are caught by a removable grease filter, which can be cleaned simply and easi ly in the dishwasher. For ovens with the pyrolytic system, no filter is necessary since dirt in the area around the hot air fan can be removed by pyrolysis. Glass care Plus technology Gaggenau enamel. Practically nothing sticks to this special blue enamel surface. To clean, it usually suffices to wipe it with a wet sponge and a little washing-up liquid. Prevents glass corrosion, even when washing fragile glassware. The constant temperature con trol and lower drying tempera ture protect glass and the dec orative elements of crockery. Several components ensure this: the heat exchanger immedi ately balances out the temper ature peaks that can damage glass. Furthermore, fresh water is added as required to ensure that the water’s hardness is constantly held above 5°DH during the wash cycle. This prevents glasses from losing their sheen due to the water being too soft. This is coupled with the Flex Plus basket system, which ensures that glasses drip-dry even more effectively by holding them in an optimal position, and Zeolite technology for low temperature drying – a procedure that delivers firstclass drying results, even at low temperatures that are gentle on glass. Grease filter As with all Gaggenau ventilation hoods, the air containing grease and odour particles first passes through a grease filter, which removes up to 95 per cent of the grease from the air. This prevents any deposits forming on the inside of the hood or ventilation pipes. Stainless steel grease filter: The filter can be easily removed for cleaning in the dishwasher. 132 Grease filter saturation indicator H Halogen lighting For extra bright, clear light in the oven interior. Each phase during the baking, roasting or steaming procedure can be monitored with glare-free light. Hard-chromed cooking surface See Teppan Yaki. A signal on the control panel reminds you that the grease fil ter needs to be cleaned. Soiled filters are not as effective and increase the noise level of the ventilation system. Heating element This is inserted into the socket inside the Gaggenau oven for focussed heating of the baking stone or Gastronorm roaster. Grinding gear Freshly ground coffee beans are a prerequisite for tasty coffee or espresso. The full coffee aroma develops through the high-qual ity conical grinding gear. You can choose between six grind ing levels – from fine to rough – depending on the user’s indi vidual preferences. Hot air Ground coffee portioning Refrigerators: A humidity fleece or a regulator ensures that the natural humidity is retained. This creates ideal storage conditions, particularly for fruit and vegetables, salad and fresh herbs. The appear ance, taste, vitamins and nutri ents are retained for much longer. The strength of coffee can be set individually from “very mild” all the way up to “extra strong” (coffee quantity between 7 and 14 g). The setting is indicated in the function display. See Steaming. Humidity control For calibrated control of humid ity in cooling appliances or wine climate cabinets. Wine climate cabinets: The defrost function of state-of-theart refrigerators reduces humid ity in the interior. By switching on the ventilator, humidity can be retained in the appliance so that drying out is avoided. I Ice and water dispenser This dispenser for ice cubes, crushed ice and chilled water, can be removed while the door is closed. Glasses, large jugs or sports bottles can be filled up via the water dispenser. The integrated ice dispenser is located in the freezer compart ment. These appliances require a fixed inlet water connection. Induction cooktops Induction is a method of heat transfer that makes optimum use of energy. Induction involves a precise and responsive power delivery via a magnetic field, and also speeds up cooking times – just like gas. Since the induction method means that only the bottom of the pot is heated, there is no loss of un used heat. Compared to glass ceramic cooktops, induction cooktops hardly heat up at all, so that spilled food and liquid hardly ever burn. Pots and pans of all shapes and sizes are suit able for use on a cooking zone – the system automatically de tects the diameter of the pot’s base and only heats the appro priate area. Once the pot is removed, the zone doesn’t emit any more energy until the next pot is placed on it. The booster function provides more power – raising the energy delivered to a cooking zone by 50 % for a brief period. Pots and pans which are suitable for induction cooking can be identified either by their labelling or by the fact that a magnet placed on the pan’s base sticks to the base. Info-Light In fully integrated dishwashers, a red dot of light projected onto the ground indicates that a rinse programme is in operation. The tiny red light disappears when the programme ends. This helps to prevent the unintentional and premature opening of very quiet dishwashers. Interior for wine climate cabinets Bottle trays in beech and aluminium: The untreated beech ensures that no aroma transfer can occur. The wood is rounded off to protect the sensitive labels. Interval ventilation Innowave This sophisticated feature, which is also known as inverter technology, offers microwave power settings with variable energy outputs. Compared to conventional appliances, it is a much more gentle way of preparing food as users can choose between high, medium and low power settings. This means fast and consistent results when both cooking and thawing. Since the heat pen etrates gently, food which is overcooked at the top or on the edges will become a thing of the past – no more half-cooked food which is still frozen in the middle. In fact, your food will both look and taste better. When interval ventilation is a ctivated, the ventilation hood automatically switches to the preselected output level for five minutes each hour. This means that used or stale air can be regu larly extracted from the room – also at night or during long absences. Intensive mode Three power settings and an intensive mode can be activated via individual control buttons on the ventilation appliances. Depending on the particular model and setting, the intensive mode automatically reverts to the previously selected power setting after three, five or ten minutes of operation. Ice and water dispenser. Glasses and large jugs can be filled up with ice cubes, crushed ice or cooled drinking water while the door is closed. Interior light A bright white light evenly illu minates the interior from above, meaning that users have a better view of the appliance’s contents. 133 K Knobs Knobs of the Vario cooktops 400 series. Since knobs need to be both pressed and turned to activate the corresponding function, all appliances are protected against unintentional switching on. Before a knob can be turned, it must be pushed through a clearly perceptible stop position. Active cooking zones are indi cated by an orange illuminated ring. Vario appliances of the 400 series: Since knobs need to be both pressed and turned to activate the corresponding function, all appliances are pro tected against unintentional switching on. The temperature selection knobs on electrical appliances may then be turned in either direction, even past the zero setting. The setting select ed for a cooking zone using a particular knob position is then retained. Active cooking zones are indicated by an orange illu minated ring. On gas appliances, the knob can only be turned in one direction; ring illumination is not possible in this case. Vario appliances of the 200 series: The gas appliances are protected against unintentional activation because their control knobs have to be both pressed and turned. Load sensor Ensures the optimal use of water, thereby reducing expend iture on water and electricity. The system works with a rotation sensor that measures the water level in the pump well. It drops as the load increases, because more water is required for wet ting the dishes. This is detected by the load sensor, which then promptly triggers an appropriate water intake. This prevents the pump from running idle, thereby avoiding the noise peaks that would otherwise occur. Long-term timer This function can keep dishes warm in the oven at a selected temperature (such as 85 °C) for any period between 24 and 74 hours without the user having to operate the appliance. The other touch key functions – with their convenient setting options – only become visible when needed. The digital clock can also be used as a short-term timer, irrespective of the function set for the appliance. The timer func tions allow both the length of the cooking proc ess and the time at which the appliance is to be switched off to be programmed up to 24 hours in advance. All settings are stored for a few seconds after the cooktop is switched off. Consequently, if the appliance is switched off unintentionally, all previously entered values can be easily restored. Memory recipes This function, which is available in both ovens and Combi-steam ovens, allows you to save all settings for a prepared dish so that they can be easily retrieved at any time. Six dishes can be programmed, and up to five dif ferent steps or settings can be saved for each dish – at the push of a button after every successful cooking step. If the core temperature probe is used, the respective core tem peratures are saved instead of the cooking times. This ensures the same delicious outcome every time, even if portion sizes vary. Microwave cooking As connoisseurs know, micro waves have become indispens able – for everything from heating up pre-prepared por tions of food to making hot drinks in a glass, from bringing food from the refrigerator to serving temperature in no time at all to the quick thawing of frozen foods. The key element of any microwave is the mag netron. This creates magnetic waves, the energy of which is evenly spread out in the cooking compartment by means of a wave distributor. When the microwaves hit the item being cooked, they cause the water molecules within the food to oscillate at high speed. The oscillating molecules create friction, which in turn generates heat. In microwaves, the heat is therefore generated inside the items being cooked – and not from outside, as is the case in conventional ovens. Multiple glazing with safety glass The glazing in the oven door in volves up to four adjacent panes of glass. The temperature of the outer pane remains low, even when the pyrolytic process is at its maximum temperature. N No-Frost technology If you own an appliance with No-Frost technology, you can say goodbye forever to the tedious task of emptying and defrosting the freezer compart ment – a job which has to be done about every six months with conventional appliances. What’s more, there is no more frost build-up on frozen goods. O Options for dishwashers Energy Save: This option uses Zeolite technology to reduce electricity consumption, thereby saving up to 15 % of energy. Extra Dry: For improved drying performance, especially for plastic items such as Tupper ware. This optimised drying efficiency is achieved with the combined help of Zeolite tech nology, a higher water tempera ture during the clear rinse and an extended drying cycle. Intensive: For washing heavily soiled pots and pans in the bot tom basket while gently clean ing fragile glasses in the upper basket at the same time. By in creasing the spraying pressure by 20%, as well as running addi tional wash cycles and heating phases, this option transforms the entire lower basket into an intensive zone. At the same time, the water pressure and temper a ture in the upper basket are consistent with the selected programme. Power: The main programmes can be sped up considerably with this option whenever items – even those that are heavily soiled – are needed again in a hurry. When combined with Standard Eco, the best perform ance (washing and drying effi ciency class A according to the Euro label) is produced in a mere 57 minutes with Vario dishwashers, and in 59 minutes with Power dishwashers. That’s equivalent to a time saving of up to 60 %. Auto programmes run up to 30 % faster. Options menu Specific functions, such as switching to a certain cooking zone, can be adjusted to suit individual cooking habits. The maximum power limit of the cooktop can also be set via the options menu, as can the child lock, which completely deacti vates the control panel if re quired. P Programmes for dishwashers Auto: Depending on the level of soiling, this programme – with the help of the Aqua sensor – automatically selects the correct temperature, length of the wash cycle and amount of water need ed to deliver optimal results, while also ensuring the efficient consumption of water and en ergy. You can choose between different temperature ranges: 65°C to 75°C for heavily soiled pots and pans, 45°C to 65°C for normally soiled dishes or a gentle 35°C to 45°C for glasses. Pre-rinse: This programme softens stubborn food stains before the actual wash cycle, thereby delivering the best possible washing results. Quick 45°C: This programme omits the prewash and has a shorter drying cycle. This means that lightly soiled items are practically dry and ready for use within a mere 30 minutes. Pot detection In induction cooking, only the bottoms of pots and pans are heated. The system detects the diameter of the magnetic base of each individual pot and only that precise area is heated. This means that you are free to use pots and pans of all sizes with out wasting any energy. Once the pot/pan is removed from the activated cooking zone, the zone won’t emit any more energy until the next pot/pan is placed on it. Standard Eco: This wash programme operates at a tem perature of 50 °C to 55 °C instead of 60 °C to 65 °C, so it consumes less water and energy compared to regular standard programmes. Presentation light In order to showcase their valu able contents in the best pos sible fashion, all the wine climate cabinets include a presentation light that can be optionally activated. The use of cold light prevents any temperature in crease in the interior. 135 Pull-out system The pull-out system with pyrol ysis-safe cast iron frame allows safe and easy access to the food inside the oven. Thanks to its fully extendable double tele scopic pull-out rack, it makes light work of moving even heavy and cumbersome food out in front of the cooking compart ment. It makes no difference if the food is on a baking tray, wire rack or glass tray, skewered on the rotisserie spit or braising in the Gastronorm roaster. The pull-out system can be installed on every oven level. Only the two easily detachable extension rails need to be cleaned. The remain ing cast iron frame is easily cleaned by the oven’s pyrolytic system. Q Quick boil timer Roasting zone This is used for heating up or boiling quickly. The heat is in creased to the maximum level. The duration can be individually set to last between one and 20 minutes. If no specific dura tion is selected, the glass ceramic cooktop automatically switches back to the cooking setting after approx. three minutes. Induction cooktops switch back after approx. one minute. R Pyrolytic system Rackmatic The inevitable soiling of the oven’s interior caused by grease spatters when roasting or grill ing is removed by this cleaning programme, which operates at 485°C. The length of the programme is set by the manu facturer. Needless to say, the oven door is locked during cleaning. Once the oven has cooled down, all you need to do is to wipe the interior with a damp cloth. When the auto pyrolytic system is in operation, the appliance automatically gauges the level of soiling in the oven’s interior. It then auto matically selects the optimum cleaning time. Even when fully loaded, the height of the dishwasher’s upper basket can be easily adjusted by up to 5 cm. This means that larger items – such as tall glasses in the upper basket or plates in the lower one – can be easily and flexibly accommo dated without having to rear range everything. Regeneration See Steaming. Regeneration electronics Instead of automatically regen erating the water softening system after each wash, regen eration is only activated when the need arises. This is calcu lated by electronics that emit a signal when the next dose of salt solution has to be added to the water softening system. This means that the optimal amount of water and salt re quired to counteract the re- 136 spective water hardness is used. This keeps costs down and is kind to the environment. Two cooking zones of a glass ceramic cooktop can be switched on so they are inter connected, thus enlarging them to the dimensions of a roasting tin. The Gaggenau cast roaster is custom-made so that it fits the 18 x 41.5 cm roasting zone perfectly. On induction cook tops, they are interconnected automatically if appropriately sized cookware is placed on the roasting zone. Rotisserie spit Uniform grilling from all sides – just the thing for poultry, a rolled roast or a leg of lamb. The rotisserie spit ensures that meat gets crispy and brown on all sides. For best results, select grilling or top heat as the operating mode. The spit is suitable for meat weighing up to 6 kg. Run-on function Just the thing for effective room ventilation. Once activated, the function ensures that the ventila tion appliance runs on for up to ten minutes after use on any setting, before automatically switching itself off. S Safety glass shelves Glass is hygienic and ensures good visibility. The shelves can be adjusted in height to enable the cooling compartment to be segmented as required. Some appliances also have a motor ised shelf. Safety lock The safety lock mechanism in Gaggenau ovens terminates any heating mode after 12 hours of inaction on the part of the user, assuming that the longterm timer has not been acti vated. Most cooktops and Vario appliances switch themselves off after a particular period of inaction on the part of the user. The trigger period depends on the selected output level. Sealing flaps The suction vent in the down draft ventilation system in the Vario 400 series is sealed when the system is not in use. When the ventilation is switched off, the flaps remain open for a few seconds until the fan comes to a full stop. The flaps then close automatically. Sensor control All the settings of the cooking zones are easily adjusted with one touch. The levels of the individual cooking zones are graphically displayed on the glass ceramic surface and the operating status is indicated aswell. And the cooktop is secure against being switched on accidentally by children or while cleaning. The inadvertent placing of objects on the con trol panel is also not enough to switch on the appliance. By touching the main switch during operation, all the cooking zones are immediately switched off. If a cooking zone is switched on unintentionally, it will automatic ally switch itself back off after 20 seconds if no further buttons are pressed. Soft-Light The uniform cooktop illumina tion, which comes with ventila tion appliances, automatically goes on and off gradually, and it can be dimmed manually from maximum illumination while cooking to atmospheric back ground lighting. Settings menu Many settings for the oven/ Combi-steam oven can be changed here, depending on the model. The time, display prop erties such as brightness and key tones, and activation of the Super-Quick function, can all be set here. In the clearly arranged menu, which has one control level, options are displayed by icons and, on some models, using a clear text display. The desired setting can be selected conveniently at the push of a button. Spit Side-opening oven door Stainless steel grease filter The door of the appliance is fitted with a thermally insulated pane of clear glass so that you can keep an eye on what is cooking. The handle on the side is protected against high tem peratures. The door itself swiv els open to a full 180 degrees, thereby facilitating easy access from the front. The direction in which you want the door to open must be specified when ordering the appliance, since the side on which the door hinge is positioned cannot be subsequently changed. See Grease filter. Single portion cleaning The water pipes are rinsed each time coffee is prepared, and not just when the machine is turned on or off. This means no residual water, 100% hygiene and a full coffee flavour. See Rotisserie spit. Stainless steel cooking interior The seamless stainless steel cooking interior of the Combisteam or steam oven meets the highest hygiene standards. The 60 watt halogen lighting provides a splendid light setting for whatever you are cooking. Stainless steel interior Safety glass shelves. Glass is hygienic and ensures good visibility. The warming drawer has a hygienic stainless steel surface for both preheating dinnerware and keeping meals warm. All the Vario cooling appliances of the 400 series are similarly lined with stainless steel on the inside. When combined with oxygen, stainless steel also reduces the formation of odours. Steam and hot water function For quick preparation of cap puccino, tea or other hot drinks. No time is wasted, even with latte macchiato – milk is frothed and then the coffee brewed straight afterwards without any interruption. 137 Steamer Unlike the steam oven or Combisteam oven, the steamer can also be used for reducing stock or wine. Not just water. Boiling point detection: The appliance automatically recog nises the boiling point, which is dependent on the altitude above sea level. Cooking inserts: The basic set comprises one perforated and one unperforated cooking insert. In this way, two meals with different cooking times can be staggered so that they are ready at the same time. Electronic steam control: This ensures that only as much steam is produced as is required for the cooking process. Steamer. For the gentle steam ing of meat, fish and vegetables. Two cooking inserts – one per forated and one unperforated – are part of the basic set. Electronic temperature ontrol: Temperature control c in increments of 5 °C enables cooking at a precisely set tem perature between 45 °C and 95 °C or steaming at 100 °C. Delicate dishes such as fish are kept at a constant temperature below boiling point to prevent them from disintegrating. Like wise, meals can be defrosted, heated up gently or kept warm for a long period without any loss of taste. Glass cover: Enables the cooking progress to be moni tored at all times. As Gaggenau steamers do not use pressure, the glass cover can also be removed during steaming. Pasta basket: Cooks pasta to perfection. To strain, simply drain the water. Steaming Almost everything which is normally boiled in water can be cooked much more healthily in steam, ensuring that vitamins and minerals are preserved. Whatever you are cooking, it 138 will taste more natural, have a more intense taste and consistency, and colour will be better preserved. Several Gastronorm inserts containing different foods to be steamed can be inserted simultaneously into the Combi-steam or steam ovens. The steam prevents taste being transferred between the individ ual meals. By combining steam with hot air, as in the Gaggenau Combi-steam oven, the full range of cooking options are available: Combi-steaming: Combining steam with hot air between 30°C and 230°C ensures many types of meat come out par ticularly succulent and tender. In this operating mode, the inte rior of the oven is hermetically sealed and humidity prevents the meat from becoming too dry. A roast will cook in its own juices at a very low humidity level. Dough fermentation: The correct conditions for getting dough to ferment are a low temperature of no more than 50 °C with humid air. Hot air: This corresponds to the hot air in a conventional oven. The interior of the oven is ventilated by an opening which allows any humidity to escape. This is particularly important, for instance, with cakes and fresh fruit, which need to give off humidity during baking to prevent the pastry becoming too soft. Juice extraction: Juice from berries and other fruits can be extracted conveniently using a perforated cooking insert. The juice is caught in a non-perfo rated insert positioned below it. Low temperature cooking: This is a professional cooking method for cooking meat to per fection. It is initially browned, before being cooked slowly and gently over a long cooking time. A large piece of roast beef for example, is cooked better than with any other cooking method – tender and pink throughout apart from a millimetre-thin edge and unbeatably succulent. And after it is cooked, the meat can also be kept warm for a long time so it remains perfect. Low temperature steaming: Steaming with 100 % steamsaturated air at low temper atures guarantees optimum heat transfer without drying out and is therefore ideal for cooking fish. Protein is prevented from either congealing or escaping. As a result, fish is always tender and succulent with a natural pro tein taste and its consistency is retained. Misting: At the push of a button, a measured quantity of steam is injected into bread or confec tionery. This is particularly use ful when baking bread, rolls and pastries, or when baking bread which has been frozen. Regeneration: Steaming with out pressure is also the perfect way to regenerate meals which have been prepared beforehand, without impairing the quality. It beats all other reheating meth ods hands down. Steam-baking: Steam and hot air at higher temperatures can also be used for baking and braising. The humidity prevents meat from drying out, particu larly with poultry, bread or pas tries, and browns the surface so it is crispy. The hot steam trans fers the heat twice as effectively as hot air and also reaches the interior of whatever you are cooking, enabling your meals to taste more professional than ever. Steam removal: At the push of a button, the inside wall of the appliance is cooled down with cold water and the steam vapour condenses within around 20 seconds. This reduces the emission of steam when the door is opened. Thawing: Steam and low tem peratures are ideal for the gentle thawing of deep-frozen food. Storage time after a malfunction It indicates the time needed for the temperature in a fully loaded freezer compartment to rise to –9 °C in the event of a mal function. Shorter times apply when the freezer compartment is not full. Hard-chromed cooking surface (Vario cooktops 400 series): Just like a good cast pan, it will show signs of use, but the surface will always remain easy to clean and does not wear. Stainless steel sandwich cooking surface (Vario cooktops 200 series): For the maxi mum cooking area with even heat distribution in the compact dimensions of the 200 series. When used, this surface will also take on an individual look but this will in no way impact on its operation. Turn-on/turn-off timer A turn-on/turn-off timer can be programmed so that the coffee machine turns itself on auto matically, performs the rinse programme and increases the temperature to the preprogrammed setting. The ma chine is then ready for opera tion. The turn-off timer on the machine can be set for between one and twelve hours after it was last used. Twist-Pad control Super-Quick cooking zones Once switched on, the desired heat is quickly attained and just as swiftly reduced. Super-Quick ensures an even heat release and is easy to regulate. What’s more, a red light which increas es in size allows you to monitor the heating progress. T Temperature regulation Warming stage: Regulated setting, keeps meals warm with greater precision than in a pot. Thermoelectric flame monitoring Automatic ignition of the flame on operating the knob. The knob must be held for a short time, until the thermo-element has reached the required tempera ture for a stable flame. Should the gas flame go out unintention ally, the gas supply to all burners is automatically interrupted. See Electronic temperature control. The manoeuvrable magnetic knob on the Twist-Pad makes cooktop control particularly easy. To activate a particular cooking zone, briefly move the knob towards the zone in ques tion and then turn it to select the desired power setting. LED displays in the cooktop show the selected setting. The magnet always returns the knob to its idle position in the middle of the Twist-Pad. The knob can be removed to facilitate cleaning the smooth-surface cooktop. The main switch – along with additional functions such as the timer, frying sensor or booster – are activated via sensor buttons. Thermo block pressure pump system Teppan Yaki For roasting and cooking Japa nese style, directly on the smooth metal surface – a more precise cooking procedure than with a pan or grill. With an adjustable surface temperature control – either across the whole surface or, as is the case with the Vario 400, just half of it. Cleaning setting: The water for cleaning the Teppan Yaki VP 230 can be heated up to the desired temperature of about 40°C directly on the appliance itself. The thermo block ensures that water always has the ideal tem perature for coffee or steam. The quantity of water needed is released at high pressure into the brewing chamber, allowing the full coffee aroma to unfold. Time delay The electronic timer allows you to specify when the wash p rogramme is to begin – up to 24 hours in advance. Twist-Pad control. A manoeuvrable magnetic knob makes control particularly easy. The knob is removed to facilitate cleaning the smooth-surface cooktop. 139 U Universal pan This pan for collecting meat juices completes the micro wave set. It is also suitable for cooking or defrosting. It in cludes an accessory attach ment for grilling. Water level warning An acoustic signal is emitted when the water tank in the steam oven is empty. The display will show a tap symbol. The heating process is then interrupted. The water tank has to be filled and reinserted in order to continue cooking. Water tank UV protection In order to prevent daylight from altering the bouquet of wine, the glass doors of the wine climate cabinets also include UV protection. V Water tank. With a capacity of 1.3 litres, a sufficient supply of water is assured in Combi-steam ovens and steam ovens in the absence of a fixed connection. Vacation mode for refrigerators and freezers An energy-saving programme can be activated in order to keep your foodstuffs cooled or frozen while you are away for longer periods. W Water filter with saturation indicator If your tap water is not of the best quality, it’s possible to retrofit your coffee machine with a water filter. This accessory ensures a better taste. A saturation indi cator will remind you when the filter has to be changed, which is a simple task. The cooling appliances with ice makers can also be retrofitted with a water filter with saturation indicator as a special accessory. 140 With a capacity of 1.3 litres, the water tank in Combi-steam and steam ovens ensures a sufficient supply of water in the absence of a fixed inlet and outlet water connection. Since the steam is generated in the cooking compartment, the water tank is protected against calci fication to the greatest possible degree. The tank is easy to handle and transparent, mean ing that the water level can be checked at a glance. Due to hygiene considerations, the tank has to be emptied after every cooking session: it should not be cleaned in the dishwasher. Z Zeolite technology Thanks to this state-of-the-art technology, the Vario dishwasher supports a huge range of op tions. Zeolite is a silicate mate rial which, thanks to its porous structure and special properties, absorbs moisture very quickly. This releases heat which can be used for several purposes – such as shortening the pro gramme times, enhancing the drying performance or conserv ing energy.
