Model 130B and 131B operate on 120 volts, using 17.3 amps, 2000 watts, and 60 Hertz. Model 131B with the 240 suffix operates on 240 volts, using 8.6 amps, 2000 watts, and 60 Hertz. Both models are designed for single-phase AC service.

Place the cabinet near warm ovens, away from drafty areas and ventilating systems. Plug the cord end into a proper wall outlet. Fill the water pan with 2 quarts (1.9 liters) of water if humidity is required.

Turn on the POWER switch, then turn the thermostat to #10. Preheat the cabinet for 30 minutes, then place food inside and turn the thermostat to #8.

Turn the thermostat off, then turn the POWER switch off.

The proper food holding temperature is 140°F (60°C) or higher.

Unplug the power cord, remove the hot unit from the cabinet, and allow the cabinet to cool. Use a soft, damp cloth with mild detergent and hot water to clean the dirt. Rinse with hot water and wipe dry. For fingerprints, grease, and oil, use a mild abrasive cleaner or oily or waxy cleaner applied with a soft, clean cloth. For water spots, use a mild abrasive cleaner applied with a damp cloth, then rinse and dry.
