SET UP CHECKLIST

Concession Set Up
 Get the key to the concession cabinets, concession stand and frig/freezer from
Bob’s office. The keys are located behind his office door.
 Move concession stand out of the ball room to concession area
 Move the popcorn machine out of ball room to the concession area. The
popcorn machine stays on the cart.
 The popcorn cart should have paper plates, popcorn salt, pretzel salt, water
sprayer, popcorn, oil, popcorn bags, napkins and gloves on the shelf of the
cart. Move the plates, pretzel salt and water sprayer to the kitchen.
 Unlock the concession stand. Open up the back and lift up the sides. The
doors come underneath the sides to act as support. Make sure the sides come
up flat when you move the doors or the corners will scrape.
 All concessions items to sell are inside the stand except for the frozen pretzels.
The pretzels are located in the Booster’s freezer. There is no need to restock
anything in the concession stand.
 Move 1 garbage can and one “returnable can” garbage can to concession area
 Start a batch of popcorn (see instructions)
 You must stay at concessions until the people show up to work.
 Take Bob’s keys back to his office.
How to Make Popcorn
 Turn all red switches on
 Make sure the kettle latch is secure. The arm with the black handle should be
resting on the latch.
 Raise Lid up to the top of the machine so it attaches to the magnet.
 Using the large white measuring spoon, pour one spoonful of oil into the
kettle and let it heat up a couple minutes. If you can’t find the measuring
spoon, use approximately 1/3 of the small plastic blue cups.
Do not add the popcorn salt to the hot oil!
 After the oil has heated a few minutes pour in 1 level cup of popcorn and
bring the lid straight down so the kettle is covered.
 Close front doors
 The popcorn is done when there are 2-3 seconds between pops.
 Turn off the first two red buttons (stirrer and kettle heaters)
 Raise the lid straight up so it attaches to the magnet on the top of the machine.
 Rotate the black knob arm clockwise. The arm should push away from the
latch again.
 Sprinkle with the popcorn salt and mix up
 You can leave the 3rd red button on (heat lamp) if necessary.





Cleaning out the Popcorn Machine
Make sure the lid is attached to the top of the machine. Rotate the black knob
arm clockwise to tip the kettle on it side. Wipe out using paper towels. Make
sure you wipe down the bottom sides and the lid of the kettle.
Remove any large popped kernels and let the unpopped kernels go through the
holes on the floor of the machine.
Wipe down the inside sides of the machine with wet paper towels. DO NOT
USE CLOROX WIPES.
Clean out any loose popcorn
Wipe out oil measuring spoon or discard oil cup.
Working Concessions
 Concessions $$ and $20 for Pizza are located in the top drawer on the left side of the
stand
 Pizza – Order 2 pizzas from Hungry Howie’s to be delivered. Their number is is 9921900 and is located on Romeo Plank and 23 mile. Tell them you are calling from St
Peters. If there are two games, you MAY need to order 1 or 2 more depending on how
fast the pizza is selling. They need about 30-45 minutes notice to deliver or it may just
be easier to send someone to get the pizza. If you pick up, the pizza can be picked up in
10 minutes. We have an arrangement with them that the pizza is $5 and we pay them
from the cash drawer (there should be money in the envelope that says Pizza). Save the
receipts in the Pizza envelope in the cash drawer.
 Popcorn –
o YOU SHOULD START BAGGING THE POPCORN AT THE START OF THE
4TH QUARTER OF THE LAST GAME. THIS WILL ALLOW THE KETTLE TO
START COOLING OFF SO IT IS EASIER TO CLEAN OUT. IF
CONCESSIONS ARE NOT BUSY AFTER BAGGING ALL THE POPCORN,
YOU CAN START CLEANING THE MACHINE (SEE INSTRUCTIONS).
 Hot Pretzels – Pretzels are located in Booster freezer. Everything you need to make the
pretzels should be by the microwave, but if not check the popcorn cart or the stand.
o Make sure you ask the customer if they want salt on their pretzel. If they do, take a
frozen pretzel, put it on a paper plate, spritz with water and sprinkle the pretzel salt
on it. Cook in the microwave for 1 minute.

in drawer ($30 in 5s & $20 in 1s), fill out deposit slip
4. Deposit slip and money in an envelope and leave in the
cash drawer
5. Put tabletop items down below
6. Wipe Concession stand and lock it
7. All items including concession stand back in ball room
and lock cabinets, frid/freezer
8. Floors swept in the gym and the concession area
9. Garbage tied and in front of kitchen
After Game Clean Up
 Clean out popcorn machine (see instructions in binder) and put back in the
ball room
 Place concession products back inside of concession stand. Wipe down the
top of the stand.
 Take out $20 from the concession money needed to pay for the pizza for the
next game and put it in the pizza envelope in the drawer. If there is already
$20 in there, then you don’t have to leave any. Record the amount on the
bottom of the deposit slip where it says “Less cash Rec’d” (found in this
binder).
 Leave $50 in bills in the tray ($30 in 5s, $20 in 1s if possible). Count the rest
of the bills. You don’t have to count the change. Fill out a Deposit slip and
put it with the money in an envelope. Put the envelope in the cash drawer.
 After the products are put back in the stand and money is counted, lock the
stand and move back to ball room.
 Lock up the Refrigerator/Freezer
 Have someone sweep the gym floor and under bleachers. The teams will put
away the bleachers.
 Sweep concession and kitchen area. There is a broom and dust pan located in
the tray room of the kitchen against the wall right when you walk in.
 Close up garbage bags that where used (not “can” one) and leave the bag by
the cans outside the gym for the custodial staff to take.
