What is “crAfT beer?”
DinINg Room & BAR featurEs
That’s a hard question to answer these days but here are a
few guidelines for the beers we may carry:
• Craft beer is that which is brewed with a goal of
“aesthetic character”
• Craft breweries are authentic, independent, honest and
committed to excellence
• A micro-brewery is a brewery which produces a limited
amount of beer
• Not the “big boys” of the beer industry!
Due to an ever-increasing demand for craft beer, we cannot
always guarantee these beers will be in stock. Trust us, we
will try as hard as we can to get them and micro-breweries
around the world are also working hard to keep up with this
And watch for the (AB) and try an Alberta beer

AKA “Saskatchewan’s Champagne”! At Pilsner we have not changed since our
beer was 1st brewed in 1926 by Fritz Sick right here in Lethbridge, Alberta. Why?
It’s right there on the bottle…“old style”. Those are more than just words on a

Who knows what will be revealed when we dig deep? It’s all about getting down to the
bare bones of things. That’s exactly what this Kölsch does. Alberta barley combined with
a portion of wheat showcases the complex interplay between malt and hops. Crowned
with a delicate white head and almost imperceptible light fruit aromas, this beer is utterly

unmalted Quebec wheat and pale barley malt, to which spices and natural
aromatics are added, along with a light hopping. The Blanche is only partially

suspension. It is the recent winner of World’s Best Belgian Style Witbie at the
World Beer Awards in London, UK.

Folding Mountain Brewing (AB) Three Season Honey Wheat Ale (473mL)
4.3% $8.25
Straw coloured beer, slightly veiled, dry with grainy aromas and passion fruits
undertones. Inspired by the Belgian tradition, this saison-style beer begins
its presence with a beautiful straw colour. Slightly veiled, it is dry with cereal

brings notes of citrus fruits and passion fruit while leaving room for the
aromatic character of the yeast used.
Anchor (US) Steam Beer 4.8%
Anchor Steam® Beer owes its deep amber colour, thick, creamy head, and rich,
distinctive flavour to a historic brewing process like no other. It is a process that
combines deep respect for craft brewing tradition with many decades of evolution
to arrive at a unique approach: a blend of pale and caramel malts, fermentation with
lager yeast at warmer ale temperatures in shallow open-air fermenters, and gentle
carbonation in our cellars through an all-natural process called kräusening.
Big Rock (AB) Honey Brown Lager 5%
Bernd chose to brew his honey beer as a dark lager, using a blend of pale and caramel
malts. The slow lager process coated out the subtle molasses notes of the barley sugars.
He balanced them with a dry note of hops and, at the last moment, added a very light
touch of honey.

step forward with this one and added a hint of pure Canadian maple syrup for a creamy
taste that is smooth, not sweet.
New Belgium Brewing (US) Fat Tire Amber Ale 5%
Named in honour of our co-founder’s bike trip through Europe, Fat Tire Amber Ale
marks a turning point in the young electrical engineer’s home brewing. Belgian beers
use a far broader palette of ingredients (fruits, spices, esoteric yeast strains) than
German or English styles. Together with co-founder Kim Jordan, they traveled around
sampling their homebrews to the public. Fat Tire won fans with its sense of balance:
toasty, biscuit-like malt flavours coasting in equilibrium with hoppy freshness. Fat Tire:

Innis & Gunn (UK) Original Oak Aged Beer 6.6%
For 30 days this honey-hued beer sleeps in hand selected oak barrels, locked inside
a bonded warehouse, gradually assimilating the subtle flavours that reside in the
wood. Barrels are then emptied and maturation continues for a further 47 days in
a marrying tun where these natural flavours infuse and fall into perfect balance.
This 77-day process is unique and produces a delicious, refreshing beer: Aromas of
vanilla and toffee, hints of citrus, with a malty, lightly oaked, palate. Deftly balanced
and light in texture, soothing and warming in the finish.

Why start with a session ale? Here at Blindman Brewing we’re fans of all styles. We
like big, bold, barrel-aged stouts. We savour the puckering sour bombs. We revel in
bitter early-boil hops that scrape our tongues. But what do we drink in between, or

Mill Street Tankhouse Ale 5.2%
Like traditional pale ales, Tankhouse Ale has a deep copper-red colour. We use five
different malts to produce a complex malty texture. The most dominant character
of our Pale Ale is the hop. The spicy Cascades is used to give an assertive hop

remained his favourite drink of choice.

Sweet banana and fruit flavours are balanced against a citrus hop background that
finishes dry. Perfect for the summer, but great all the time!
New England-Style beers are American Pale Ales and IPAs that are most often
described as hazy and juicy. The haze is due to the higher protein malts that are
used as well as yeasts-like our English house yeast-that do not flocculate as well as
the standard American Ale yeasts. This leaves particulates in the beer that give it
the noted hazy appearance.
Sweet banana and fruit flavours are balanced against a citrus hop background that
finishes dry. Perfect for the summer, but great all the time!
A juicy citrus and grapefruit flavour profile. As if fresh Citra and Mosaic hops were
squeezed straight into the bottle.
A trophy beer that’s a testament to our homebrew roots. Our Sculpin IPA is a great
example of what got us into brewing in the first place. After years of experimenting,
we knew hopping an ale at five separate stages would produce something special.
The result ended up being this gold-medal winning IPA, whose inspired use of hops
creates hints of apricot, peach, mango and lemon flavours, but still packs a bit of a
sting, just like a Sculpin fish.
This cloudy-orange beer is the taste of liquid summer sunshine. Refreshing kumquat
immerses the palate with citrus and tropical fruit, while biting hops interplay with
bready malt. A touch of acidity from the kumquat zest finishes things off with a smile
and wink. Whenever you find yourself yearning for those hazy summer days and warm
electric nights, here you will find solace.

Industrial Ave is where it all started for Medicine Hat Brewing Company back in 1912.

that we must claim as questionable because once you reach a certain point, ibu’s are
immeasurable without a spectrophotometer – Industrial Ave is in that range.
Super Stellar IPA gets its juice from the combination of Mosaic & Citra hops. Juicy

6 oz $8 9 oz $11 bottle $32
We are zealous believers in the decadent and forbidden flavours of this sinfully

forgotten vineyards throughout California. This wine elicits fervent, fecund and
frenzied tongue enveloping pleasures. A wine of substance, it’s a Cardinal Zin not
to drink at the altar of this decadent, spicy zinfandel. This is a refined pleasure, with
intense flavours of blackberry mingling with soft creamy touches of oak, vanilla and
dry herbs. It’s full on the palate, but not heavy and the fruit is constant from the first
sip to the end of the finish.
Banrock Station Shiraz (AU)

oak and spice complexity, ultimately finishing dry and soft.

where exceptional soil and climate conditions have created a bright, greenishyellow wine, rich in peaches and citric fruit aromas. It is a fresh, semi-dry and
balanced wine.
Our winery is widely considered the North American expert of this
wonderfully expressive grape. The 2010 Chenin Blanc is summertime in the
