Opening and disconnecting
• Open the left door (turn key clockwise).
• Open the right door by pushing the spring lock
(1a) upwards and swinging out the door.
• Switch the machine OFF with the main switch
(1b).

Cup magazine and ingredient canisters
Cup magazine
• Lift the cup dispenser slightly and tilt it towards
the front (2).
• Remove lid and fill cup magazine with cups.
• Put lid back on and tilt back cup dispenser.
Coffee vending unit
• Open the door of the coffee vending unit (3).
• Remove the coffee BIB-packs (3), if necessary
and replace them.
Instant ingredient canisters
• Turn the spouts of the canisters with the open
ends pointing upwards (4).
• Take the canisters by the handles and pull
them slightly up and then outwards (5).
• Take the lids off and fill canisters with
ingredients.
• Put the lids back on and relocate canisters.
• Turn the spouts of the canisters with the open
ends pointing downwards (6).

Cleaning parts
It is recommended to have a cup grid as an
exchange kit (hygiene kit).
Cup carrier
• Swing out cup carrier (7).
• Remove and rinse the complete cup grid (7) in
hot water, relocate it and swing back cup
carrier.

• Open the left door (turn key clockwise).
• Open the right door by pushing the spring lock
(1a) upwards and swinging out the door.
• Switch the machine OFF with the main switch
(1b).
Cup magazine and ingredient canisters
• Load cups (2) (see daily cleaning).
• Open the door of the coffee vending unit (5)
and remove the BIB-packs (5).
• Take out the instant ingredient canisters (3/4)
(see daily cleaning) and fill with ingredients but
let the canisters stay out of machine.

Cleaning parts
It is recommended to have mixing funnels,
funnel extensions, whipper housings with
impellers, distributor block with hoses, pot grid
and trough with hose as an exchange kit
(hygiene kit).
Soak all parts, which will be disassembled, at
least for 15 minutes in a bucket with hot water
with cleaning agent*.
Coffee vending unit
• Push down the red lever of the mixer motor
support (6). Remove the hose of the trough
from the distributor block and remove the
complete trough (6), which is held by magnets
and clean it.
• Lift and remove drip tray for cleaning (6).
• Clean the cooling compartment with a wet
cloth and a brush (7).
• Dry the cooling compartment.

Do not pour any water or cleaning agent

• Reinsert the trough and the drip tray.
• Reinsert the BIB-packs (8).
• Close the coffee vending unit door (8).
Instant ingredient mixers
• Remove the funnel extensions (9a) and the
mixing funnels (9b) by lifting and rotating them.
• Remove whipper housings (9c) by roating a
quarter clockwise leaving the hoses back on.
• Remove the impellers (9d) by rotating counter
clockwise.

Cleaning inside and outside
• Clean the instant container shelf, the sensors of
the drip tray and the bucket with a clean, damp
cloth and wipe dry (15).
• Clean the door and housing inside and outside,
and finally the bottom with a clean, damp cloth.
• Flush all parts, which have been soaking,
thoroughly with clean and warm water.
Check that no dirt or cleaning agent remains
on the parts.
• Dry all parts with a dry cloth.

Distributor block
• Remove the hot water hose (10a) from distributor
block (10b).
• Rotate the wing head screw (10c) a quarter to the
left.
• Remove the distributor block (10b).
Cup catcher plate
• Clean cup catcher plate (11a) and cup guides (11b)
with a damp cloth.
Cup carrier
• Swing out cup carrier (12).
• Remove, clean and relocate the cup grid (12) (see
daily cleaning).
The pot grid
• Remove the complete pot grid (13a) from inside of 15
door by turning its handle out of its engagement
and clean it.
• Wipe clean steel drip plate (13b) with damp cloth.
Drip tray and bucket
• Empty and clean drip tray and bucket (14) (see
daily cleaning).
Drip tray and bucket
• Remove the drip tray (8), empty it, clean it in hot
water and dry it.
• Take out the bucket (8), empty it and wipe it off
with a damp cloth.
Cleaning inside and outside
• Clean the door and housing inside and outside,
and finally the bottom with a clean, damp cloth
(9).

Mounting the cleaned parts
• Remount all parts.
Rinsing
• Switch the main switch of the machine ON (10a).
• Push the rinse button at the lower part (10b).
After a few seconds the display shows that the
machine is now in rinsing/cleaning mode.
• Close the doors.
• Swing the cup carrier out and place a pot (min.
1.5 l) on the pot platform (11).
• Press the selection button "Coffee with sugar".
The display shows "Machine Rinse" and the
trough of the coffee vending unit and mixer
systems will now be rinsed with hot water.
• Afterwards press the selection button "coffee with 12
sugar" once more for initialising a second rinsing
process.
• Remove and empty the pot.
• Open the left door.
• Push the rinse button at the lower part again
(10b) to leave the rinse mode.
• Close the left door.
• Swing cup carrier back in place.

Mounting the cleaned parts
• Remount all parts and relocate canisters.
Check that the outlet spouts of the ingredient
canisters (16) are turned back in place, and
that the bucket and drip tray with sensors are
well positioned.
Last check
• Clean the machine with a damp cloth on the
outside (12).
• Perform a test dispensing.
There is the risk of being scalded by hot
water. Observe the safety precautions in
the operating instructions.

Rinsing and last check
Switch main switch (17a) on and push rinse button
(17b).
Close the doors.
Place a pot, min. 1.5 l on pot platform.
Press "Coffee with sugar".
Afterwards press the selection button "coffee with
sugar" once more for initialising a second rinsing
process.
Remove and empty the pot.
Open the left door.
Push rinse button at the lower part again and
close door.
Swing cup carrier back in place.
Clean the outside of the machine with a damp
cloth.
Perform a test dispensing.
Cleaning the machine
• Observe the cleaning instructions.
• Clean the machine preferably at the end of the day
• After cleaning, dispense and check a drink (see "Last
check").
• Fill in the cleaning record card.
• When the display indicates an error message (7),
observe the reference card.
• Only use the recommended cleaning agents that
have been approved for the food industry (slightly
disinfecting, preferably liquids, tabs, eventually grains.
Avoid powders).
Filing
• After opening, write the date of opening on the
package
• File the "best before"-date of the package used to fill
the machine.
• File completed cleaning record cards (5).
• File service and maintenance reports.
Training
• Train staff on HACCP guidelines (6).
• Keep the reference cards with the machine.
• Implement the activities in the work schedules.

HACCP Guidelines
Declaration: This Cafitesse 3000 machine is cleaned in compliance with the corresponding
cleaning instructions.

Ensure hygienic handling:
wash hands, preferably with a disinfectant (1)
use hygienic gloves
after cleaning, do not touch surfaces of parts that
may come into contact with food
- always use a clean cloth when cleaning
- keep the working area tidy.
Handling of instant ingredients
• Check the package for integrity and damage.
• Store the ingredients dry, cool and dark.
• Use the packages within the recommended time
period (see the "best before"-date on the package).
• Always use packages according to the "first-in-firstout"-principle.
• Thoroughly close an opened package to keep the
quality and preventing contamination.
• Ingredients should be stored separated from cleaning
products.
• The ingredient canisters should be cleaned
occasionally (see operating instructions).
• Do not fill more ingredients than needed until the
next cleaning.
Handling of BIB-packs
• Check the pack for damage and shake it 10 times
vigorously before use. (2)
• Observe the user instructions on the pack.
• Mark the actual date on the pack and insert the pack
into the dispenser.
• Use packs within the recommended time period (see
indications on the pack).
• Always use the packs according to the 'first-in firstout' principle. (Observe the 'best before date' on the
pack)
Storage of BIB-pack
• Store coffee in a freezer at -18 °C. (3)
• Thaw coffee in a refrigerator at +6 °C. (This takes
approx. 3 days) (4)
