others, this has resulted in the creation of our Silence® series: It
includes everything you need to make every passionate chef’s heart

right up to pots for vegetables and soup, as well as steaming units.
The products appear in timeless stainless steel, in part with a non-stick
coating, depending on the needs and application method. The series’

For the crêpes batter
250 g flour
500 ml milk
3 eggs
1 pinch of salt
2 twigs of thyme
For the porcini
mushroom filling
200 g porcini (dried)
200 g mushrooms
100 g pancetta
150 g crème fraîche
1/2 bunch of parsley
2 tbs. butter
Salt, pepper
Grana Padano
For the basic batter, place flour, milk, eggs and the pinch of salt in a mixing
bowl and stir to a silky, liquid batter. Fold in thyme leaves and let the mixture
rest for about an hour at room temperature.
Meanwhile clean the mushrooms and cut in slices, cut the pancetta in fine
strips. Heat 2 tbs. of butter in a pan at medium heat and fry the mushrooms
in it. Add the pancetta after about two minutes and fry until crispy. Add salt
and pepper. Add crème fraîche and bring to a boil once. Finally, chop the
parsley finely and also add 2/3 of it to the mushroom mixture.
Stir the batter once again after the resting phase, and add milk if it is too
viscous. Then use a ladle to pour some of the mixture into a crêpes pan
and fry the batter from both sides until golden brown in colour. Now place
a little bit of the mushroom filling in the centre of the crêpe and fold in the
protruding edge. Garnish with parsley and a little bit of parmesan, et voilà:
crêpe aux champignons.

them, and you can also enjoy them raw. With just a few simple steps, they
unfold their full aroma. The delicate flavour is supported by herbs and spices,
and they are the perfect side dish or tasty main dish on the table. Generally
speaking, mushrooms can be found all year round. However, certain varieties
have peak season between March and November: porcini in May, chanterelles
in June, mushrooms in late summer. For everyone who would like to gather their
own mushrooms, RÖSLE has developed aids like the sharp mushroom knife
or the practical mushroom brush – indispensable if you want to turn the little
offshoots into a tasty meal.
MUSHROOM KNIFE
When collecting fresh mushrooms, the RÖSLE
mushroom knife is an indispensable companion. The
curved design allows intuitive handling, and with the
fold-out, curved blade, mushrooms can be cut directly,
without crushing them. The brush at the end of the
knife, which can also be folded in, is an ideal aid to
remove the worst of the dirt. For cleaning, the brush
can be removed via a coupling mechanism.

INGREDIENTS
PREPARATION

Clean the mushrooms and place them in a casserole dish.
4 Portobello mushrooms­
½ bunch of parsley
1 clove of garlic
30 g Gruyère
½ chilli pepper
8 tbs. olive oil
Salt, pepper
Mix the olive oil with the finely cut parsley, crushed clove of
garlic and the chopped chilli pepper in a small bowl. For those
who prefer it, the chilli pepper’s seeds can first be removed –
then the dish will not be so hot.
Season the mixture with pepper and salt, and thoroughly
rub it into the mushrooms to ensure they absorb the aromatic
marinade from all sides.
Now sprinkle the spicy cheese over the mushrooms and place
the dish, together with the mushrooms, in the oven. Using top and
bottom heat, bake at 200 °C / 392 °F for about 20 minutes until
the cheese has melted and the mushrooms have the right texture.

weighing is not the most important aspect when cooking. Much
rather, it’s all about creativity, flavour ideas and the whole process of
preparing the meal as such. Regardless, the following often applies:

ELEGANT MECHANISM
The RÖSLE digital scale convinces with the
perfect combination of design and technology.
The slide mechanism is simple to use: Slide
the weighing surface with slight pressure in
the arrow direction until it clicks into place
and the display becomes visible. The scale is
now ready for use. If it is not in use for more
than 5 minutes, it automatically switches itself
off. Once finished, slide the weighing surface
back and store the scale in the cupboard or on
the open kitchen rail.

Now with an improved spiral whisk. Thanks
to the flexible stirrer, efficient and quiet frothing
is guaranteed, also when one happens to bump
into the edge of the container. In addition to this,
the dual speed frother has two speed levels: fast
(12,000 rpm) for milk froth or milkshakes and slow
(8,000 rpm) for vinaigrettes. The optimal milk
froth is acquired at a milk temperature of 60 °C /
140 °F, the perfect topping for a delicious
cappuccino. Often, for a tasty salad dressing, all
you need is oil, vinegar, salt, pepper and lemon
juice. Just like at your favourite Italian.
