L’installation doit être conforme aux codes locaux ou, en l’absence de codes locaux, au code national du gaz ANSI Z223.1 ou le code d’installation du gaz naturel CAN/CGA B149.1 ou le code d’installation du gaz propane CAN/CGA B149.2.

Cet appareil a été inspecté et vérifié avant d'être expédié. Sur réception, vérifier immédiatement s'il y a dommage et ce, en présence du livreur. Déballer et vérifier s'il n'y a pas de dommages cachés. S'il y a dommage, faire immédiatement une réclamation.

Notre garantie se limite au remplacement des pièces défectueuses en usage normal. Aucune réclamation ne sera acceptée pour dommage résultant d'une mauvaise installation, d'une opération inadéquate ou d'un service non-autorisé avant l'installation.

Au branchement ou débranchement du service d'alimentation de l'appareil, utiliser une deuxi-

ème clé afin de prévenir tout mouvement de la tuyauterie interne. Après le raccordement, ouvrir le service d'alimentation et vérifier s'il y a des fuites aux joints avec de l'eau savonneuse.

Ne pas se servir d'une flamme pour vérifier les fuites de gaz.

AJUSTEMENT DE LA VEILLEUSE

L'orifice de la veilleuse est différent selon le type de gaz d'alimentation de l'appareil. Il est possible d'ajuster la flamme de la veilleuse par le mécanisme prévu à cet effet situé sur la valve de sécurité. La veilleuse doit produire une flamme bleue et encercler le thermocouple.

VÉRIFICATION DE LA PRESSION

La pression normale devrait être de 3,5 " W.C. pour le gaz naturel et de 10" W.C. pour le gaz propane. Pour mesurer la pression de gaz, utiliser l’ouverture désignée sur la valve de sûreté.

Les brûleurs devraient toujours fonctionner à capacité maximale pendant la vérification de la pression. Faire fonctionner tous les autres équipements connectés sur le système d’alimentation de gaz à capacité maximale et lire la pression. Ensuite, fermer tous les autres appareils et prendre une autre lecture de pression. Si la pression varie de plus de 1" W.C., installer un régulateur de pression (non fournie) entre le système d’alimentation de gaz et l’appareil. Ajuster ensuite le système à la pression prescrite.

Le régulateur doit être installé entre le circuit de gaz et la tubulure de sortie de l’appareil, à l’extérieur de l’appareil, pour empêcher les variations de pression de gaz lorsqu’il y a d’autres appareils branchés sur le circuit.

Cet appareil et la valve d’arrêt située derrière la porte doivent être déconnectés du système d’alimentation de gaz pendant le test de pression du système lors de tests excédant ½ psi

(3,45 kPa).

L’appareil doit être isolé du tuyau d’alimentation de gaz en fermant la valve d’arrêt pendant les tests de pression du système pour tout test à une pression supérieure à ½ psi (3.45 kPa).

Garder l’entrée d’air ou de gaz libre de toute obstruction. La chambre à combustion doit avoir une entrée d’air adéquate.

Lors de l’installation de l’appareil, les jeux minimum autour de l’appareil (spécifiés sur la fiche signalétique et à la figure ci-dessous) doivent être respectés. L’appareil doit être installé de niveau en ajustant les pieds ajustables de l’appareil, sous une hotte de ventilation. Ne pas obstruer la sortie de gaz d’échappement ou la ventilation d’air.

A=B: Jeu de chaque côté = 3"

D: Jeu à l’arrière = 6"

Pour une friteuse équipée de roues, l’installation doit être faite avec un connecteur conforme aux Normes sur les Connecteurs pour Appareils Mobiles au Gaz CGA-6.16 pour le Canada, et aux normes « Standards for Connectors for Movable Gas Appliances » ANSI Z21.69 aux

États-Unis, et un connecteur à débranchement rapide conforme avec la Norme pour les

Connecteurs à Débranchement Rapide Pour Usage Avec Gaz combustible CAN/CGA-6.9 au

Canada et la norme « Standards for Quick Disconnect Devices for Use With Gas fuel », Ansi

Z21.41 aux États-Unis.

Le mouvement de l’appareil doit être limité sans l’aide du connecteur ni du connecteur rapide ou le tuyau d’alimentation de gaz. Cela peut-être fait en attachant une chaîne plus courte que le tuyau d’alimentation au mur arrière. La friteuse doit être retenue pour éviter qu’elle bascule et qu’elle éclabousse l’entourage de liquide chaud. La façon de la retenir peut se faire à l’installation en insérant la friteuse dans une batterie d’équipements, en fixant la friteuse au mur arrière avec une chaîne et un anneau.

OPÉRATION

Avant d'utiliser la friteuse, nettoyer le bassin avec un bon nettoyeur pour l'acier inoxydable spécialement conçu pour l'entretien des friteuses, afin de ne pas contaminer l'huile ou la graisse. Fermer la valve à graisse et remplir le bassin de graisse fondue ou d'huile.

Pour vider le bassin de la friteuse plein d’huile ou de graisse, attendre que l’huile se refroidisse pour éviter de se faire éclabousser d’huile chaude lors du versement, mettre un contenant assez grand sous la valve de drainage qui se trouve derrière la porte. Enfin, ouvrir la valve de drainage.

Il est à noter que l’appareil est retenu pour éviter de basculer et ainsi éclabousser l’entourage d’huile chaude.

Les accidents associés au transport de l’appareil lorsque le bassin est rempli de liquide peuvent causer des dommages et des blessures. Pour prévenir un accident lors du transport de l’appareil, vider le bassin de la friteuse de son liquide tel qu’expliqué au second paragraphe de la section opération de ce manuel.

Pour une friteuse équipée de roues, si le système de retenue de la friteuse a été enlevé, il faut le réactiver lorsque la friteuse est revenue à sa position de fonctionnement originale.

PENDANT L’UTILISATION, IL EST TRÈS IMPORTANT DE NE PAS APPUYER LE BOUT

DES PANIERS SUR LA CHEMINÉE DE LA FRITEUSE POUR ÉGOUTTER LES FRITES.

AFIN D’ÉVITER QUE DE L’HUILE SE DÉPOSE SUR LES PAROIS DE LA CHEMIÉE CAR

L’ACCUMULATION D’HUILE SUR LES PAROIS INTERNES OU EXTERNES DE LA

CHEMINÉE PROVOQUERA UNE INCENDIE DANS LA FRITEUSE.

POUR ALLUMER

• Tourner le thermostat à la position d’arrêt "OFF" et attendre 5 minutes.

• Tourner le bouton de la valve à la position de veille "PILOT".

• Appuyer et retenir le bouton de la valve lorsque vous allumez la veilleuse.

• Retenir le bouton de la valve environ 45 secondes, et libérer. Si le pilote ne demeure pas allumé, répéter la procédure.

• Tourner le bouton de la valve à la position "ON".

• Régler le thermostat à la position requise.

POUR LES UTILISATEURS DE GRAISSE SOLIDE

Un cycle de fonte est nécessaire lors de l’utilisation de graisse solide pour éviter de faire craquer le bassin et ANNULER LA GARANTIE à cause d’un excès de chaleur sur les parois des tubes chauffants. Cet excès de chaleur est causé par le fait que la surface des tubes n’est pas en contact avec l’huile.

Voici la démarche à suivre pour effectuer le cycle de fonte:

• Couper la graisse en tranches suffisamment minces pour qu’elles passent entre les tubes.

• Enlever les paniers et la grille de fond.

• Remplir le bassin de tranches de graisse.

• Ouvrir le thermostat pendant 20 secondes.

• Fermer le thermostat pendant 20 secondes.

• Répéter les 2 instructions précédentes jusqu’à ce que les tubes chauffants soient entièrement couverts en permanence de graisse fondue.

POUR ÉTEINDRE

• Tourner le thermostat et le bouton de la valve à la position "OFF".

• Fermer la soupape d'alimentation manuelle de gaz.

Une table de température de cuisson est fournie à l’avant dernière page pour assurer une cuisson adéquate des aliments et réduire la consommation d’huile. Hors des périodes de cuisson, il est préférable de diminuer la température à 250 o

F / 122 o

C pour réduire la consommation de gaz et conserver l’huile plus longtemps.

ENTRETIEN

VÉRIFIER S’IL Y A UNE ACCUMULATION D’HUILE COLLÉE SUR LES PAROIS INTERNES

ET/OU EXTERNES DE LA CHEMINÉE. FAIRE NETTOYER LA CHEMINÉE PAR UNE

ENTREPRISE DE SERVICE D’ENTRETIEN SI C’EST LE CAS CAR UNE ACCUMULATION

D’HUILE COLLÉE SUR LES PAROIS DE LA CHEMINÉE PEUT CAUSER UNE INCENDIE.

Garder aussi propres que possible toutes les surfaces du bassin de la friteuse pour éviter de carboniser les surfaces chaudes et ainsi contaminer l’huile ou la graisse.

Pour nettoyer les taches, remplir le bassin avec de l’eau et ajouter un détergent commercial approprié, laisser bouillir et nettoyer avec une brosse en frottant vigoureusement. Vider le bassin et rincer à l’eau chaude.

Changer et filtrer régulièrement l’huile ou la graisse, spécialement après avoir utilisé l’huile pour frire de la viande, dans le but d’éviter de contaminer les aliments à frire. Il est possible de détecter la détérioration de l’huile par un changement de couleur, d’odeur ou par l’observation de mousse lorsque l’huile est remuée.

Les surfaces apparentes en acier inoxydable et les autres parties extérieures de l’appareil doivent être nettoyées avec un savon doux ou tout autre nettoyant commercial doux conçu à cet effet.

Installation must conform with local codes, or in the absence of local codes, with the national fuel gas code ANSI Z223.1 or the natural gas installation code CAN/CGA B149.1 or the propane gas installation code CAN/CGA B149.2

This appliance has been inspected and tested before leaving our factory. Upon receipt of shipment, check immediately for apparent damage, then in the presence of the carrier, unpack and check for concealed damage. If any damages are discovered, a claim should be made immediately with the carrier.

Our guarantee is limited to the replacement of parts found to be defective in normal use of appliance for purpose intended. No claims will be accepted for damages, or consequential damages, resulting from faulty installation, improper operation or un-authorized service work.

When connecting or disconnecting gas line to or from fryer, use a back-up wrench to prevent any movement of internal gas piping. After hook-up is made, turn on gas supply and check all connections for leaks with a water and soap solution. Do not use an open flame to test for gas leaks.

PILOT BURNER ADJUSTMENT

The pilot burner orifice is different depending on gas use. The adjustment of the pilot burner flame is done on the safety valve in order to produce a non-blowing blue flame surrounding generator cartridge.

PRESSURE VERIFICATION

Operating gas pressure should be 3.5" W.C. for natural gas and 10" W.C for propane gas. In order to verify the gas pressure, use the designed outlet on the safety valve for unit with safety valve and for unit without safety valve use the special plug on the gas line or the pilot burner line. The burners should be working at maximum capacity during the pressure verification. Turn on all other gas equipment connected to the gas line system. Check gas pressure on dial of pressure gauge with all equipment on "HI", then turn all other equipment off except fryer and check again. If pressure fluctuate s by more than 1" W.C., the pressure regulator must be installed between supply line and fryer and the pressure adjusted to give the desired rating.

The pressure regulator has to be installed between the gas circuit and the pipe that exceeds the back of the fryer. This regulator prevents pressure variations when other gas equipment are connected to the gas circuit.

The fryer and its shut-off valve located behind the door must be disconnected from the gas supply piping system during any pressure testing of that system at test pressures in excess of

½ psi (3.45 kPa)

The fryer must be isolated from gas supply piping system by closing its shut-off valve during any pressure testing of that system at test pressures in excess of ½ psi (3.45 kPa).

Keep the inlet air or gas free of restriction. The combustion chamber must have adequate inlet air.

When installing this appliance, the minimum clearances to combustible (specified on the rating plate and the last page of this manual) must be maintained and respected at all time. Install equipment on level floor. Adjust leveling legs if necessary. This unit should be installed under a ventilation hood. Do not obstruct the flow of combustion and air ventilation.

A=B: Clearance on each side = 6"

D: Clearance on back = 3"

For a fryer equipped with casters, the installation must be done with a connector that complies with the Standard for Connectors for Movable Gas Appliances, ANSI Z21.69 or CGA-6.16, and a quick-disconnect device that complies with the Standards for Quick Disconnect Devices for

Use With Gas fuel, ANSI Z21.41 or CAN/CGA-6.9. The movement of the fryer must be limited without depending on the connector and the quick-disconnect device or its associated piping to limit the fryer movement. The fryer must be restrained.

The fryer must be restrained to prevent it tipping in order to avoid splashing hot liquid. The fryer may be held in place by connecting it to a battery of other appliances, by installing it in an alcove or by tying it down with adequate restraints.

OPERATION

Before operating the fryer, clean the fryer tank thoroughly with a commercial stainless steel cleaner made especially for fryers to prevent contamination of frying oil. Close drain valve and fill fry tank with oil or melted fat, up to the edge of the surging or foaming area.

To empty a tank filled with old fat or oil, wait until the oil or fat has cooled. Be carefull to avoid splashing when emptying if the oil or fat is hot. Put a container under the drain valve behind the door and open the drain valve.

Check that the appliance is restrained to prevent tipping and splashing of hot liquid.

The hazards associated with moving the fryer with liquid in the vessel can cause damage or injury. To prevent accidents, empty the tank before you move the fryer, see paragraph 2 of this section for instructions on how to empty tank.

After moving a fryer equipped with casters, make sure to reconnect the restraints once the appliance has been returned to its originally installed position.

WHEN DRAINING FAT FROM THE BASKET, DO NOT SUPPORT THE BASKET ON THE

EDGE OF THE CHIMNEY IN ORDER TO PREVENT THE FAT TO STICK ON THE WALLS

OF THE CHIMNEY. ACCUMULATING FAT ON THE EXTERNAL OR INTERNAL WALLS OF

THE CHIMNEY WILL CAUSE A FIRE IN THE FRYER.

TO LIGHT

• Turn the thermostat to "OFF" position and wait 5 minutes.

• Turn knob on valve to "PILOT" position.

• Press and hold knob on valve while lighting pilot.

• Hold knob on valve for approximately 45 seconds, then release. If pilot does not remain lighted repeat operation.

• Turn knob on valve to "ON" position.

• Set thermostat as required or desired.

WHEN USING SOLID FAT

A melting cycle is necessary when using solid fat to prevent from cracking the tank and VOID

YOUR WARRANTY, due to high temperature on the surfaces of heating tubes because the heated surfaces of the tank is not in contact with melted fat.

Here is the method of melting cycle:

• Cut grease cubes in thin slices that can pass between tubes.

• Remove the baskets and the bottom grill.

• Fill the tank with slices of grease.

• Open the thermostat for 20 seconds.

• Then, shut the thermostat for 20 seconds.

• Repeat the two last operations until the heated tubes are permanently and completely covered with melted grease.

TO SHUT-OFF

• To shut-off, turn thermostat and knob on valve to "OFF" position.

• Turn-off the manual shut-off valve.

You can read the table annexed to this manual to bake foods correctly. When the fryer is not in use, reduce the temperature to 250 o

F / 122 o

C to save energy and keep a good oil or fat quality.

MAINTENANCE

CHECK IF THERE IS AN ACCUMULATION OF FAT STICKED ON THE EXTERNAL AND/OR

INTERNAL WALLS OF THE CHIMNEY. THE FAT MUST BE REMOVED BY A SERVICE

AGENCY TO PREVENT A FIRE IN THE FRYER.

Keep all surfaces in the fry tank as clean as possible to avoid carbonizing of the heating surfaces and consequent fast breakdown of the oil.

To remove burned-on fat, fill fry tank completely with water, add a commercially available cleaning compound as instructed and let solution boil as instructed and remove any fat with stiff brush while boiling. Rinse unit thoroughly with hot water.

Change and filter fat as often as necessary especially when frying meat to prevent contamination of food. You can detect the deterioration of oil or fat by a change of colour, of smell or if it foams. You can use a testing kit especially for oil or fat quality.

Do not bend capillary tube of thermostat or hi-limit device (located on the hot tubes in the tank).

All exterior stainless steel surfaces are best cleaned with a mild soap solution and a soft cloth.

You may also use any of the commercial stainless steel cleaners available for this purpose. Do not use harsh abrasives on stainless steel front to prevent damage to fine grain finish.

We maintain a large service organization. All across North-America, there are authorized independent service agencies. Consult your dealer about the most convenient service location near you.

For servicing, open the front door of the fryer.
