Warning
Keep this user guide with your appliance. If the appliance is ever sold or transferred to another person, ensure that the new owner receives the user guide.
Please become familiar with these recommendations before installing and using your oven. They were written for your safety and the safety of others.
•
SAFETY GUIDELINES
— This oven was designed for use by private persons in their homes. It is intended solely for cooking foodstuffs. This oven does not contain any asbestos-based components.
— This appliance is to be used by adults. Make sure that children do not touch it and that they do not treat it as a toy. Make sure that they do not touch the appliance’s control panel.
— When you receive the appliance, unpack it or have it unpacked immediately. Give it an overall inspection. Make note of any concerns or reservations on the delivery slip and make sure to keep a copy of this form.
— Your appliance is intended for standard household use. Do not use it for commercial or industrial purposes or for any other purpose than that for which it was designed.
— Do not modify or attempt to modify any of the characteristics of this appliance. This would be dangerous to your safety.
— Keep young children away from the appliance while it is in operation. In this way you will avoid the danger of them being burned by knocking over cooking recipients.
Moreover, the front of your appliance is hot during use.
— Never pull your appliance by the door handle.
— Before using your oven for the first time, heat it while empty for approximately 15 minutes. Make sure that the room is sufficiently ventilated. You may notice a particular odour, or a small release of smoke.
All of this is normal.
— During cooking, ensure that the door of your oven is completely closed so that the seal can do its job properly.
— When in use, the appliance becomes hot.
Do not touch the heating elements located inside the oven. In doing so, you would run the risk of suffering serious burns.
— When placing dishes inside or removing them from the oven, do not place your hands close to the upper heating elements, use heat-protective kitchen gloves.
— At the end of cooking, do not pick up dishes (grills, rotisserie...) with bare hands.
— Never place aluminium foil directly in contact with the oven shelf (see the chapter on oven description), the accumulated heat may cause deterioration of the enamel.
— Do not place heavy weights on the open oven door, and make sure that children are able neither to climb nor sit on it.
— In order to avoid damaging your oven controls, do not leave the door open when it is in operation or still hot.
— The oven must be turned off when cleaning inside the oven.
— Intensive and prolonged use of the appliance may give rise to the need for additional ventilation, by opening a window, or by increasing the power of the mechanical fan.
— Additionally to the accessories supplied with your oven, only use dishes which resist high temperatures (follow the manufacturer’s instructions).
— After using your oven, make sure that all the controls are in their stop position.
— Never use steam or high-pressure devices to clean the oven (electrical safety requirement).
— For your safety, your oven is equipped with an AUTOMATIC STOP, if you forget to turn off your oven by mistake. After 10 hours of operation, the AS (Automatic Stop) feature is activated and your oven stops running. AS appears instead of the time and a series of 2 successive beeps is emitted for a short time.

— This appliance’s packing materials are recyclable. Recycle them and play a role in protecting the environment by depositing them in municipal containers provided for this purpose.
— Your appliance also contains many recyclable materials. It is therefore marked with this logo to indicate that used appliances must not be mixed with other waste. Recycling of the appliances organised by your manufacturer will thus be undertaken in optimum conditions, in accordance with European directive EC/2002/96 relating to electrical and electronic equipment waste. Consult your local authority or your retailer to find the drop-off points for used appliances that is nearest to your home.

CHOICE OF LOCATION

The above diagrams determine the dimensions of a cabinet that will be able to hold your oven.
The oven can be installed under a work top or in a column of cabinetry (open* or closed) having the appropriate dimensions for built-in installation (see adjacent diagram).
Your oven has optimised air circulation that allows it to achieve remarkable cooking and cleaning results if the following guidelines are followed:
• Centre the oven in the cabinet so as to guarantee a minimum distance of 5 mm between the appliance and the neighbouring cabinet.
• The material or coating of the cabinet must be heat-resistant.
• For increased stability, fix the oven in the cabinet by means of 2 screws through the

BUILD-IN
To do this:
1) Remove the rubber screw covers to access the mounting holes.
2) Drill a 2 mm Ø hole in the cabinet panel to avoid splitting the wood.
3) Attach the oven with the two screws.
4) Replace the rubber screw covers (they also serve to absorb the shock caused by closing the oven door).
(*) If the cabinet is open, its opening must be

ELECTRIC CONNECTION
The appliance must be fitted correctly to guarantee electrical safety. During fitting and maintenance operations, the appliance must be unplugged from the electrical grid; fuses must be switched off or removed.
The electrical connection should be performed before the appliance is installed in the cabinet.
Ensure that:
- the electrical installation has sufficient voltage
- the electrical wires are in good condition
- the diameter of the wires complies with the installation requirements.

CHANGING THE POWER CABLE
— The power cable (H05 RR-F, H05 RN-F or H05 VV-F) must be of sufficient length to be connected to the build-in oven while it sits on the floor in front of the cabinet.
To do this the appliance must be disconnected from the electrical network:
— Open the inspection flap located at the lower right of the back cover by unscrewing the two screws, then pivot the inspection flap.
— Strip 12 mm along each wire of the new power cable.
— Carefully twist together the strands.
— Loosen the screws from the terminal board and remove the power cord to be replaced.
• Introduce the power cable through the side of the cover in the cable clip located to the right of the terminal board.
— All the strands of the electrical wires must be secured tightly under the screws.
— The phase wire on the L terminal.
— The green-yellow coloured earth wire should be connected to the terminal .
— The neutral wire (blue) on the N terminal.
— Screw down tightly the screws on the terminal board and check the connection by pulling on each wire.
— Attach the cable with the cable clip located to the right of the terminal board.
— Close the inspection flap using the two screws.

ACCESSORIES
• Anti-rocking safety grid (fig.1)
The grid can be used to hold all dishes and moulds containing foodstuffs to be cooked or browned.
It can be used for barbecues (to be placed directly on the grid).
FRONT
• Multi-purpose dish (fig.2)
It serves as a cake dish and has a sloped edge. It is used for cooking pastries such as cream puffs, meringues, cup cakes, puff pastry, etc.
Inserted under the grill, it catches juices and grease from the grilled food. It can also be used half-full of water for double-boiler cooking methods. Avoid placing roasts or meats directly in the dish because this is certain to cause significant spattering on the oven walls.

• Sloped 45 mm dish equipped with a special grid for grilling (fig.3)
It serves to collect juices and fat from cooking meat or fish placed directly on the grid during a grill or pulsed grill sequence.
Never place this dish on the floor of the oven (it may damage the enamel) unless it is in the grill position (the bottom heating element does not turn on when the oven is set for grilling).

Warning
Before starting a pyrolysis cleaning cycle, make sure that any accessories that are not pyrolysis safe have been removed from the oven (sliding rails, baking trays, chrome-plated grills, and so on) as well as any cookware. The side grills, as well as the plate specially coated in pyrolytic enamel are pyrolysis safe and may be left inside the oven during pyrolysis.

Thanks to this system, you can totally remove your enamelled dish and easily access your preparations while they are cooking.

• Rotisserie (fig.5)
In order to use it:
• place the hollow dish on the grid on shelf support number 1 to catch the cooking juices or on the bottom heating element if the item being roasted is too big.
• slide one of the forks onto the spit; skewer the piece of meat to be roasted; slide on the second fork; centre and tighten by screwing the two forks.
• place the spit in its cradle.
• push slightly to insert the point of the spit in the guide slot located at the back of the oven.
• remove the handle by unscrewing, in order to be able to close the door. After cooking, screw on the spit handle once again in order to remove the roast without burning yourself.
Warning
Before starting a pyrolysis cleaning cycle, make sure that any accessories that are not pyrolysis safe have been removed from the oven (sliding rails, baking trays, chrome-plated grills, and so on) as well as any cookware. The side grills, as well as the plate specially coated in pyrolytic enamel are pyrolysis safe and may be left inside the oven during pyrolysis.

USING THE PROGRAMMER
•How to set the time
When supplied with electricity
The display flashes at 12:00 (fig.1).

Set the time by pressing the + or - buttons (holding your finger on the button allows for rapid number advancement)
Example: 12:30
Confirm by pressing “START” (fig.2).
The display stops flashing.

- To set the time on the clock
Press the “Reset time” button, which stays on until it is set.
The time display flashes, indicating that it is now possible to adjust the time.
Set the time by pressing the + or - buttonsto move the time displayed forward or backward (fig.1).

Press the “START” button (fig.2).

Warning
If the “START” button is not pressed, the adjustment will be automatically recorded after a few seconds.

•Instant cooking
— The programmer should display only the time. It should not be flashing.
Choose the cooking type by pressing the “COOKING MODE” button, then the + or - buttons.
Example: “White meat” position (fig.1). The button stays on during setting.

Press the “START” button
The oven display shows the cooking mode by illuminating the elements that are operating
(hearth, grill, convection, etc.) as well as the set temperature -> the oven turns on and the temperature indicator is displayed.
Place your dish in the oven based on the recommendation shown in the display.
Example: “White meat” position
-> shelf support 2 recommended.
Your oven recommends the usual temperature for the chosen cooking mode.
The temperature can be adjusted by pressing the “TEMPERATURE” button, then the + or - to reach the desired temperature. The “TEMPERATURE” button stays on during setting.
Example: “White meat” setting at 190° (fig.2).

After these settings, the oven will heat:
These rising temperature indicator symbols show the gradual temperature increase inside the oven.
A series of beeps will be emitted when the oven reaches the selected temperature.
The chosen temperature and the temperature of the oven will appear alternately.
Warning
After a cooking cycle, the cooling fan continues to operate for a period of time in order to guarantee optimal oven reliability.
Warning
All types of cooking are done with the door closed.
Warning
Do not hang a towel or cloth on the oven handle.

PROGRAMMED COOKING

Cooking with immediate start and programmed duration
- Select the desired cooking mode and adjust the temperature (fig.

).
Example: “White meat” position temperature 200°C.
- Press the “Cooking time” button (fig.

The digital display flashes 0:00 to indicate that you can now adjust the setting.
- Press the + or - buttons to set the desired time.
Example: 25 min cooking time.
The “Cooking time” button stays on during setting.

The cooking time is recorded automatically after several seconds or is validated by pressing the control button. The display stops flashing.
The countdown of the cooking time begins immediately after it has been set.
The end of the cooking time (start time + cooking time) is automatically displayed.
In this case: End of cooking at 13:00
After these three steps, the oven heats up:
The thermometer begins to fill up.
A series of beeps will be emitted when the oven reaches the selected temperature.
At the end of cooking (end of programmed time),
- The oven stops,
- 0:00 flashes,
- a series of beeps sounds for a few minutes. The beeps can be stopped by pressing the “STOP” button.

Cooking with delayed start and chosen cooking end time
Proceed as with programmed cooking.
- After setting the cooking time, press the “Delayed start” button.
The end of cooking time flashes to indicate that it is now possible to set it.
- Press the + or - buttons to set the desired end time.
Example: end of cooking at 13:30 (fig.

). The “Cooking end time” button stays on during setting.
The cooking end time is recorded automatically after several seconds or press the “Start” button. fig.1
After these 3 steps, the oven heating is delayed so that cooking ends at 13h30.
At the end of cooking (end of programmed time),
- The oven stops,
- 0.00 flashes,
- a series of beeps sounds for a few minutes. The beeps can be stopped by pressing the “Stop” button.
The display returns to the time of day

USING THE TIMER FUNCTION
Your oven’s programmer can be used as an independent timer that allows you to count down a

The display stops flashing and the timer starts working, counting down the time in seconds.
Once the time has expired, the timer emits a series of beeps to notify you.
The beeps can be stopped by pressing the “STOP” button or they will stop automatically after a few seconds.
Warning
It is possible to change or cancel the timer at any time.

USING THE “BOOSTER” FUNCTION
If you open the over door during cooking, to baste a joint of meat for example, a loss of heat occurs in the oven’s cavity.
Your oven has been designed to compensate for the heat lost by opening the door by regaining the chosen temperature as quickly as possible.
As soon as the door is closed, the oven temperature quickly rises and the “Booster” indicator on the left side of the display lights up until the set temperature is reached (fig.1). In this way, the quality of your cooking is preserved. fig.1
NOTE: The “BOOSTER” function can only be used for the following functions: “White meat, Fish,
Red meat, Vegetables, Cake, Brioche”.

SETTING THE BRIGHTNESS OF THE DISPLAY
You can adjust the brightness of your display. To do this:
- Set and confirm the time on your programmer to 0:10.
- Press and hold down the “Cooking time” button until and hold it down.

Validate by releasing the “Cooking time” button.
After having adjusted the brightness to your liking, return your programmer to the current time of day (fig.2).

LOCKING THE DISPLAY
You can adjust the brightness of your display. To do this:
- Press and hold down the “Cooking time” button until is displayed. All buttons light up for one second.
Your display is locked (fig.1).
To unlock it, repeat this step. -> the lock symbol disappears (fig.2).

Red meat
(recommended temperature 240°C min 35°C max 275°C)
•Cooking is controlled by the upper and lower heating elements without the fan.
•Requires preheating before placing the dish in the oven.
•Recommended for slow, gentle cooking: rich game... For retaining the juices in red meat roasts. For simmering in a covered stew pan dishes that were begun on the hob (coq au vin, stew).
White meat
(recommended temperature 200°C min 35°C max 275°C)
•Cooking is controlled by the upper and lower heating elements and by the fan.
•Rapid temperature increase: Some dishes can be placed in the oven while it is still cold.
•Recommended for meats, fish and vegetables, preferably placed in a terracotta dish.
Poultry
(recommended temperature 200°C min 180°C max 230°C)
•Cooking controlled, alternately, by the upper element and by the fan.
•Preheating is unnecessary. Roasts and poultry are juicy and crispy all over.
•The turnspit continues to operate until the door is opened.
•Slide the drip tray onto the bottom shelf support.
•Recommended for all spit-roasted poultry or meat, for sealing and thoroughly cooking legs of lamb or sides of beef. To retain fish steaks’ moist texture.
Barbecue
(recommended temperature 275°C min 180°C max 275°C)
•Cooking controlled by the upper element without the fan.
•Preheat the oven for 5 minutes. Slide the drip tray onto the lower shelf support in order to collect any fat.
•Recommended for grilling chops, sausages, toast or prawns placed right on the grill.
Fish
(recommended temperature 180°C min 35°C max 275°C)
•Cooking is controlled by the upper and lower heating elements and by the fan.
•Rapid temperature increase: Some dishes can be placed in the oven while it is still cold.
•Recommended for meats, fish and vegetables, preferably placed in a terracotta dish.
Piece of meat to be roasted
(recommended temperature 210°C min 180°C max 230°C)
•Cooking controlled, alternately, by the upper element and by the fan.
•Preheating is unnecessary. Roasts and poultry are juicy and crispy all over.
•The turnspit continues to operate until the door is opened.
•Slide the drip tray onto the bottom shelf support.
•Recommended for all spit-roasted poultry or meat, for sealing and thoroughly cooking legs of lamb or sides of beef. To retain fish steaks’ moist texture.

(recommended temperature 180°C min 35°C max 275°C)
•Cooking is controlled by the upper and lower heating elements and by the fan.
•This position allows you to cook identical or different types of food on up to 2 levels.
•After preheating the oven, cook the food as indicated in the cooking guide.
Gratin
(recommended temperature 260°C min 180°C max 275°C)
•Cooking controlled by the upper element without the fan.
•Preheat the oven for 5 minutes. Slide the drip tray onto the lower shelf support in order to collect any fat.
•Recommended for grilling chops, sausages, toast or prawns placed right on the grill.
Vegetable (ECO)
(recommended temperature 200°C min 35°C max 275°C)
•Cooking is controlled by the upper and lower heating elements without the fan.
•This position allows energy savings of around 25% while preserving the quality of the cooking The ECO position is used for the energy label performance.
•You will save energy throughout the cooking cycle, but it may take longer.
Biscuits
(recommended temperature 170°C min 35°C max 275°C)
•Cooking is controlled by the lower element combined with reduced input from the grill and use of the fan.
•Cooking heat from the bottom with a small amount of heat from the top. Place the grid on the lowest shelf support.
•Recommended for moist dishes (quiches, juicy fruit tarts, etc). The crust will be thoroughly cooked on the bottom. Recommended for dishes that rise (cakes, brioche, kugelhopf...) and for soufflés that will not be stuck by a crust formed on the top.
Cake
(recommended temperature 180°C min 35°C max 275°C)
•Cooking is controlled by the lower element combined with reduced input from the grill and use of the fan.
•Cooking heat from the bottom with a small amount of heat from the top. Place the grid on the lowest shelf support.
•Recommended for moist dishes (quiches, juicy fruit tarts, etc). The crust will be thoroughly cooked on the bottom. Recommended for dishes that rise (cakes, brioche, kugelhopf...) and for soufflés that will not be stuck by a crust formed on the top.

IMMEDIATE PYROLYSIS CLEANING
Check that the programmer is displaying the time of day and that it is not flashing.
Just press the “PYRO ECO/MAX” once for PYRO MAX or twice for “PYRO ECO” (fig.1).

In “Pyrolysis” the oven will be unavailable for 2:30 hrs (2 hours of pyro + 30 minutes cooling), in
“PYRO MAX” or 2 hrs (1:30 hrs of pyro + 30 minutes cooling) in “PYRO ECO”. (This duration is not modifiable.) This time includes the cooling time until the door can be unlocked.
The display indicates the time at which your oven will become available to you.
The in the display indicates that you are in a pyrolysis or ECO cycle.
During the pyrolysis cycle, a padlock symbol appears in the display indicating that the door is locked (fig.2).
When the pyrolysis cycle is finished, the display shows 0:00 for the duration: see (fig.3).

Press the “STOP” button. The display returns to time of day.
When the oven is cool, use a damp cloth to remove the white ashes. The oven is clean and once again ready for the cooking application of your choice.
Warning
Before starting a pyrolysis cycle, remove the grids, trays and wire shelf supports from the oven and clean any major spills.
Do not hang a towel or cloth on the oven handle.

Follow the instructions described in the section “Programming for immediate pyrolysis”, then:

CLEANING THE OUTER SURFACES
To clean both the electronic programmer window and the oven door, use a window washing product applied to a soft cloth.
Do not use abrasive cleaning products or hard metallic scrapers for cleaning the oven’s glass door, which could scuff the surface and cause the glass to shatter.

CLEANING THE DOOR
Warning
Before removing the glass window, allow the appliance to cool down.
- Open the door completely and block open using two red stops (fig.1).
They are supplied with your machine in the plastic pack.

- Remove the first attached window as follows:
Insert the two red stops in the A slots designed for this (fig.2).
Lever these parts to prise the window away

- Clean votre window using a soft sponge and washing-up liquid.
Do not soak the window in water.
Do not use abrasive creams or scouring sponges. Rinse with clean water and dry off with a lint-free wiper.

- If necessary, remove all the door’s interior windows. This unit is made up of one or two windows depending on the model, with a black rubber stopper at each corner (fig.4).
- After the cleaning, replace the four rubber corners taking care to follow the markings on the window:

* top right: R
- If your oven is equipped with just one interior window, this will be found next to the clipped on window.
- Place the interior window unit in the door so that L and R are on the hinge side.
- Clip on your last window by placing the
”P.Y.R.O.L.Y.S.E” marking towards you (fig.5).
- Remove the red plastic stops.
Your appliance can now be used again.

CHANGING THE CATALYTIC PANELS -

Unhook the wire shelf support (B fig.2) at the front by lifiting it ( diagram A fig.1). Pull the shelf support structure towards you, lifting it so as to unhook the rear attachment ( diagram B fig.1).
Remove it from the 2 holes (C fig.2) in the catalytic panel and from the oven cavity. Then remove the catalytic panel (A fig.2). Replace the new elements (shelf supports) by performing these operations in reverse.
- Replace the back panel
Completely unscrew the screw (E fig.2) located at the top of the back panel (D fig.2).
Tilt the panel forwards in order to remove it from the oven cavity. Fit the new panel by repeating these steps in reverse.

PYROLYTIC OVEN
- By using high temperatures, this type of oven destroys dirtiness caused by spattering or overflow.
- The smoke released is destroyed as it moves through a catalyser.
You should not wait until the oven is overly coated in grease to initiate a cleaning cycle.
In what situations should you perform pyrolysis?
- If your oven emits smoke during preheating or releases large volumes of smoke during cooking.
- If your oven releases an odour when cooled after various cooking applications (lamb, fish, grills, etc...).
Pyrolysis is not necessary after each cooking cycle, but simply when the level of dirtiness warrants it.

CHANGING THE BULB
Warning
- Disconnect your oven before performing any task on the bulb to avoid the risk of electric shock and, if necessary, let the appliance cool down.
Tip
To unscrew the port and the bulb, use a rubber glove, which will make disassembly easier.
The bulbs are located on the ceiling of your oven’s cavity.

ADVANTAGES AND PRINCIPLE
Cooking in the “EASY COOK” mode MUST START WITH THE OVEN COLD; waiting until the oven cools down completely is recommended before starting a second cooking cycle in the same mode (if not, “ ” and cooking time flash in the display, “AUTO” scrolls across the display and a series of beeps prevents you from starting another cooking cycle).
With the “EASY COOK” function, you no longer have to select the temperature and cooking time.
These two parameters are automatically calculated by your oven in order to give you optimal cooking.
The “EASY COOK” cooking mode works in two phases:
1) The first phase (acquisition) during which the oven will use its electronic sensors to record the specific cooking data for your dish.
This phase is represented by in the right side of the display with animated “ ”.
This can last 5 to 40 minutes depending on the dish.
DO NOT OPEN THE DOOR DURING THIS PHASE or you may disturb the recording of data.
2) During the second phase (calculation), the oven determines the necessary cooking time.
“AUTO” scrolls across the display. The oven indicates the remaining cooking time as well as the actual time that cooking will be finished. You can open it if you want to do something to the food
(basting, flavouring, etc).
3) When the cooking finishes, it starts to beep.

VEGETABLES
For a smoother potato gratin, pre-cook the potatoes sliced into rounds in milk or milk + cream for about twenty minutes.
To prepare stuffed tomatoes: after cutting off the tops, remove the seeds, sprinkle some salt inside them and put them upside down on a mesh so they drain before stuffing them.
FISH
When buying it, it should smell pleasant and not too “fishy”.
The body should be firm and rigid and the scales should be firmly stuck to the skin; the eyes should be bright and rounded and gills should appear shiny and moist.
CHICKEN
Choose a dish size suitable for the chicken so the fat does not burn.
BEEF (MEAT IN GENERAL)
You must take all meat out of the refrigerator well before cooking it: cold-hot temperature shocks toughen meat; this way you will produce a roast beef that is golden outside, red inside and warm in the middle. Do not salt before cooking: salt absorbs the blood and dries out the meat. Use spatulas to turn the meat: if you pierce the meat the blood drips out. Always let meat sit after cooking for 5 to
15 minutes: wrap it in a sheet of aluminium and place it just inside a warm oven.
This allows the blood drawn toward the outside during cooking to return to the heart and moisten the roast.
Use earthenware roasting dishes: glass promotes grease splattering.
Do not cook in the enamelled drip tray.
PIZZA
To prevent cheese or tomato sauce from dripping in the oven, you can place a piece of parchment paper between the grid and the pizza.
TARTS/QUICHES
Avoid glass and porcelain dishes: because they are too thick, they extend the cooking time and the bottom of the crust is not crispy.
With fruit, the bottom of the tart risks becoming soggy: just add a few spoonfuls of fine semolina, crushed biscuit crumbs, almond powder or tapioca, which will absorb the juice during cooking.
With high-water content or frozen vegetables (leeks, spinach, broccoli or tomatoes) you can sprinkle in a tablespoon of corn flour.

VEGETABLES
Tomatoes stuffed with goat’s cheese.
8 tomatoes
300g of fresh goat’s cheese
4 soup spoons of olive oil
1 small bunch of fine herbs (chives or basil) salt, pepper.
Wash the tomatoes, take off the top and carefully take out the pulp.
Turn them over to let them drain well.
With a fork, mix the cheese and olive oil, add the finely chopped herbs, salt and pepper.
Replace the tops and arrange them on a plate. Put them in the oven.
Serve hot on a bed of green salad.
FISH
Black sea bream with dry cider: 1 x 1.5 kg sea bream.
500 g button mushrooms.
2 sour apples.
2 shallots.
2 tablespoons heavy cream.
100 g butter.
1/2 litre cider. Salt, pepper.
Gut and scale the fish. Place it in a buttered dish on the finely minced shallots and sliced mushrooms. Add the cider, salt and pepper and some cubes of butter. Put it in the oven.
In the butter cook the unpeeled quartered apples. When cooking is complete, transfer the fish to a warm dish, strain the juice and deglaze the dish with the cream.
Add the cream to the juice, serve with apples and mushrooms.
ROAST BEEF Sauces
PARSLEY SAUTERNES with ROQUEFORT Sauce:
Cook two tablespoons of snipped shallots in butter until translucent.
Add 10 cl Sauternes, let it evaporate.
Add 100 g Roquefort, let it melt slowly.
Add 20 cl liquid cream, salt, pepper. Bring to a boil.
COGNAC with PINK PEPPERCORN Sauce:
Cook 2 tablespoons of sliced shallots in butter until translucent.
Add 15 cl Sauternes, let it evaporate.
Add 1 egg yolk, 1 spoon ketchup, 200 g butter. Salt, pepper.
While whisking, add 3 spoons Cognac and 1 teaspoon of crushed pink peppercorns.
PEAR with CRESS Sauce:
Cook 1 pear, covered in white white. Drain, maxh/liquidise.
Scald 1/2 bunch of cress, drain, chop.
Cook 1 tablespoon of chopped shallots in butter until translucent.
Moisten with the cooking win. Allow to evaporate.
Add the pear, the cress and 20 cl of pouring cream.
Add salt, pepper, let simmer.
Place in the oven. Cut the unpeeled apples into quarters and simmer them in the butter. When cooking is complete, transfer the fish to a warm dish, strain the juice and deglaze the dish with the cream.
Add the cream to the juice, serve with apples and mushrooms.

Stuff it with a good bouquet of fresh tarragon or rub it with a mixture of 6 crushed cloves of garlic with a pinch of coarse salt, and some peppercorns.

Base: 1 pizza crust
*with vegetables: 6 tablespoons tomato sauce + 100 g diced zucchini + 50 g diced bell peppers + 50 g sliced eggplant +2 small sliced tomatoes + 50 g shredded gruyere + oregano + salt + pepper.
*with roquefort and smoked bacon: 6 tablespoons tomato sauce + 100 g smoked bacon + 100 g roquefort in small chunks + 50 g walnuts + 60 g shredded gruyere.
*with sausage and cottage cheese: 200 g drained farm cheese spread on the crust +
4 sausages, sliced + 150 g ham, slivered + 5 olives + 50 g shredded gruyere + oregano + salt + pepper.
TARTS/QUICHES
Flaky praline apple tart:
Nonstick aluminium mould 30 cm diameter.
1 flaky pastry crust rolled and pricked with a fork.
200 ml cream brought to a boil with a vanilla bean.
2 beaten eggs with 30 g sugar, add the cooled cream.
2 apples cut into cubes rolled in 70 g crushed pralines.
Add cream and apples to crust. Place in the oven.
QUICHES
Various garnishes:
Base: 1 aluminium mould, diameter 27 to 30 cm.
1 ready-to-use short crust.
3 beaten eggs + 50 cl heavy cream.
salt, pepper, nutmeg.
200 g precooked larding bacon.
or - 1 kg cooked endives + 200 g shredded gouda.
or - 200 g broccoli + 100 g small bacon pieces + 50 g blue cheese.
or - 200 g salmon + 100 g spinach, cooked and drained.
INDIVIDUAL CHOCOLATE CAKES
12 individual aluminium ramekins
60 g butter
200 g bitter chocolate (more than 50% cocoa)
100 g caster sugar
4 eggs
1 packet of baking powder
70 g sifted flour.
Melt the chocolate with the butter over very low heat. Work the egg yolks into the sugar until the mixture becomes smooth. Add the flour, melted chocolate with butter and finish with the baking powder. Beat the egg whites into stiff peaks and gently fold them into the mixture.
Lightly butter and flour the aluminium ramekins and pour the batter into them (without dripping any on the edges). Place the ramekins in the 2rd baking dish on the shelf support and select
“CAKE” sequence “BISCUITS”. Unmould and let cool on a grid. Serve with vanilla crème anglaise or coconut ice cream.

POUND CAKE WITH CITRUS FRUIT
Caramel: 20 lumps of sugar (200 g).
Cake: 4 eggs - 200g granulated sugar - 200g flour - 200g good butter.
2 teaspoons baking powder.
Fruits: 1 small tin of citrus fruits in syrup.
Drain the fruit. Prepare a caramel icing. When it has taken on colour, turn it out into a cake pan; tip it around to distribute the caramel. Let cool. In the bowl of an electric blender, mix the softened butter with the sugar. Add the whole eggs one at a time, then the sifted flour. Add the baking powder last. Place the citrus sections in a flower pattern on the caramel icing. Pour in the batter. Place in the oven on the “CAKES” setting. Unmould in a pretty dish and serve cold. Other fruits can be used, such as apples, pears or apricots.
