General information about deep frying

GENERAL INFORMATION ABOUT DEEP FRYING

Oils and fats for the fryer

Only use “non-foaming” oils or fats, which are suitable for deep frying. Never mix any oil or fat varieties.

Excessive foaming may occur.

Frying oil or liquid frying fat is recommended for use in this fryer.

You may also use solid frying fat, but it must be melted in a saucepan on the stove or melted in a water bath in an appropriate container before transferring it to the frying tank.

Oils and fats after use

For hygiene reasons, you should store oils and fats in the refrigerator after cooling them down. It is best to use a glass container for this.

Do not leave the used oil or fat in the fryer.

1. First of all, let the hot oil or fat cool down in the fryer (do not allow the fat to solidify).

2. Line a sieve with a layer of paper towel and sieve the lukewarm oil or fat through it.

If you are mainly preparing chips with the fryer and the oil or fat is sieved after each use, you can use it 10 to 12 times, but not for longer than six months.

Please also always note the instructions on the packaging. Do not mix fresh and used oil.

Replace the oil or fat, if it foams during heating, develops a strong taste or odour or if its becomes dark and viscous.

To use it again, melt the solidifi ed fat in the glass container in a warm water bath before pouring the fat into the fryer.

19

General information about deep frying

Low-acrylamide preparation

Acrylamide is suspected of being a carcinogenic substance, which increases dramatically when heating foods containing starch to over 175 °C.

Therefore, do not fry chips at a temperature of more than 175 °C.

Fried food should not be served brown, only “golden yellow”.

The correct frying temperature

The following table shows examples of which foods are cooked at which temperature and for which duration.

If the instructions on the packaging of the fried food differ from this table, please follow the instructions on the packaging.

Dry off wet foods before they are immersed in the hot frying liquid.

This avoids spraying fat, on the one hand, while the fried food forms an even crust, on the other hand, and accordingly absorbs less fat.

Deep-frozen foods should always be slightly thawed and dried off, in order to remove the surface moisture.

Avoid salting and seasoning prior to deep frying: Salt promotes the migration of water out of the inside of the surface of the food and the formation of toxic substances.

Prior to immersing breaded foods, e.g. schnitzel, loose crumbs should be removed from the fried food. Small pieces will otherwise burn quickly in the frying liquid and therefore accelerate the spoilage.

With meat or fi sh that isn’t breaded, no acrylamide is created, a higher temperature setting (approx. 190 °C) is also appropriate for this.

DISPOSAL

Disposal of packaging

Dispose of the packaging such that it is correctly sorted. Submit cardboard and card to waste paper and foils to the recycling collection.

Disposing of the frying oil/fat

Never pour frying oil/fat into the water circuit (toilet, washbasin). Oil becomes resinous and liquid fat solidifi es when they cools - both lead to blocked sewage pipes.

Further information can be obtained from your municipality or your local waste disposal company.

Disposal of old fryer

(Applicable in the European Union and other European states with systems for separate collection of recyclable materials)

Old devices are not permitted to be disposed of with household waste!

If the fryer should no longer be usable, every consumer is legally obligated to submit old devices separately from household waste , e.g. to a collection centre of his/ her municipality/district. This ensures that old devices are recycled properly and negative effects on the environment are avoided. That is why electrical devices are identifi ed with the symbol shown above.
