Part 1: Name of Parts



Part 2: Safety Precaution
When using this electrical appliance, safety precautions should always be followed, including:
 Read all of the instructions.
 To avoid electrical shock, do not put the appliance in water, other liquid, or where water may flood the area.
 Place the appliance securely in the center of the counter or work space on a flat surface.
 This appliance should not be operated by those who have psychological, perceptual or mental disabilities
(including children), or by people with no experience or knowledge, except they have had the supervision and
instruction of the appliance by the intermediary responsible of their safety. It is better to supervise the children.
 Disconnect the power plug when the appliance is not in use.
 Disconnect the power plug before cleaning the protection components.
 Avoid contact with moving parts.
 DO NOT push food by hands, always use food pusher. Keep hair, hands, clothing, and utensils away from
moving plates while operating to reduce the risk of personal injury and/or damage to the appliance
 Do not use fingers to scrape away food from discharge disc while appliance is operating. It may cause injury.
CAUTION: DO NOT PUT YOUR FINGERS NEAR THE HOPPER OR THE HEAD WHILE IN OPERATION.
 Do not use any appliance with a damaged cable or plug, after the appliance malfunctions, or if it is dropped or
damaged in any matter.
 Please contact MODENA Call Center for examination and all necessary electrical or mechanical adjustments.
 The use of spare-parts not recommended or sold by MODENA may cause fire, electric shock or injury..
 Do not use outdoors. This appliance is for household use only. Do not use for industrial purposes.
 Do not let cord hang over rge edge of table or counter. Do not let cord come in contact with hot surfaces,
including the stove.
 WARNING: The cutting blade is sharp. Handle with care when both using and cleaning.
 Do not place near hot gas, electric burner, in an oven, or in a dishwasher.
 If motor stalls, turn off immediately and unplug the appliance. To avoid injury, detach meat grinder head then
disassemble and remove the jammed pieces.
 Do not use an extension cord with this appliance. However, if one is used, it must have an equal rate of this
appliance.

The appliance should always be in the “OFF” position before inserting or removing plug from power socket.
Before plugging in, ensure the “ON/OFF” switch is turned to the “OFF” position.
Do not pull on the power cord to disconnect, pull on the head of the plug.
This appliance should not be used for other than the intended use.
Never leave the appliance unattended while it is operating.
After use, there would be a little food left in the grinder head and it is normal. There might be a bit of black
metal powder adhering to the ground food in the end. Please pick them out and throw away. Do not eat them.
To avoid jamming, do not force to operate the unit with excessive pressure.
When the circuit breaker is running, do not switch the appliance on.
When carrying unit, be sure to hold the motor housing with both hands. Do not carry the unit by holding only
the hopper plate or head.
Do not grind hard foods such as bones, nuts, etc.
Do not grind ginger and other materials with hard fiber.
Continuous running of the meat grinder should not be more than 10 minutes before it is used again. It must
cool down for approximately 10 minutes.
Reverse function is prohibited while the appliance is operating. Wait at least one minute until grinder has come
to a complete stop. Otherwise, it may cause an abnormal noise, vibration or an electric spark. This could
damage the product.
The manual book should be kept in good condition and stored in an easily accessible place.

BEFFORE OPERATING: Wash all parts of the head in hot soap solution to remove any residue and dirt left
from the manufacturing process. DO NOT PUT PARTS IN DISH WASHER.
1. Remove Retaining Ring (8), Grinding Plate (7), Knife (6), and Auger (4) from the grinder head (1). Be sure that
the locking screw (not shown) on the side of the motor coupler is backed all the way out. Insert the grinder
head into the motor coupler so that the auger fits properly into the Drive Gear (23). The head should be
positioned upright so that the locking screw can be firmly tightened to hold it in plac e during operation.
2. Insert auger (4) into grinder head and turn until the auger slips into the flat shaft of the motor.
3. Place the knife (6) on square auger stud (5) of the auger (4) with blades facing out.
4. Place grinding plate (7) on auger stud in front of knife. Make sure notch in plate is on locating stud in head.

Cutting edge of knife should be facing and flush against the grinder plate.
Screw retaining ring (8) onto head until tight. Hand-tighten do not over-tighten. Over-tightening will cause undo
wear on the knife and plate of the grinder. If ring is not tight enough, meat may mash instead of being cut by
the knife. A dull knife or plate will also cause mashing of the meat.
If mashing occurs, disassemble the grinder, remove all meat from grinder and plate, reassemble grinder and

tighten ring tighter than it was previously before beginning to grind meat again.
Insert meat pan (9) into grinder head securely.

Part 4: How to Use
CAUTION! Before using the device for the _rst time please make sure to read carefully and thoroughly
through these operating instructions and the safety advice.
Familiarize yourself completely with the functions of the appliance.
GRINDING:
When making burger from wild game we suggest adding a minimum of 10% beef fat to the meat. This will give the
burger moisture, but still not make it fatty. Never use beef suet. Suet is too hard and the burger will be cooked
before the suet melts causing suet particles to remain in the burger.
Cut meat into strips that will easily fit into the grinder head. Meat should be 40° or colder and free of gristle and
sinew. Feed meat slowly into the throat of the head. Use the meat stomper to push meat into the throat of the head.
Allow grinder to do the work. Do not force meat.
NEVER USE FINGERS TO PUSH MEAT INTO HEAD!
Place the meat into freezer for 15-20 min. Grind meat through the coarse plate first. Return meat to freezer. Turn
motor off and unplug the grinder. Then, remove the coarse plate and clean the head from sinew, fat or gristle that
has accumulated during the first grind. Assemble the unit with the fine plate, plug grinder in and regrind the meat .
If meat mashes instead of coming through the plate in "strings”, see (6) under assembly section in this manual.
STUFFING SAUSAGE CASINGS:
When marking sausage, use at least 20% fat with your meal and grind it like burger. Mix the seasoning with the
meat after the first grind and grind for the second time.
For a coarser grind, grind the meat through the 3/16" plate once, then mix the seasoning with the meat. Unplug the
grinder; remove the grinder knife and plate. Install the stuffing plate (12) in place of the knife and plate. Put stuffing
tube in front of stuffing plate and secure with the retaining ring. Slide casings onto stuffing tube making sure to
leave the end of the tube open. Turn the grinder on and put the meat into the head until meal is at the end of the
stuffing tube. Stop grinder and pull casing out past the opening of stuffing tube about “1". Tie a knot in the casing.
Restart the grinder. This procedure will keep the casing from filling up with air in first stuffing. Continue to feed meat
into the head until the casing is filled.
Part 5: Important Safety Information







When carrying the unit, be sure to hold motor housing with both hands. Do not hold or carry by the hopper
plate.
Make sure all parts are tightly assembled. Loose parts will cause food to get caught and clog up the grinder.
Always turn the unit ON before inserting food.
Process a small amount of fat from the meat through the meat grinder before grinding to lubricate the grinding
mechanism.
Cut food into strips or cubes slightly smaller than the opening on the feeding tube.
Do not grind hard foods such as bones.
Do not grind ginger and other materials with hard fiber.

Do not use the unit for more than 20 minutes without interruption. If longer use is necessary, allow unit to cool
down thoroughly before reusing it.
To avoid jamming, do not apply excessive pressure while operating.
Grinding bread pieces may help to remove food residue left in the meat grinder after use.
Chill meat before grinding to reduce the loss of juices.
Refrigerate ground meat immediately and cook within 24 hours.
Make sure food is free of bone, tough tendon, nutshells, etc. before grinding.
Do not use food pusher on bread crumb. The bread crumb will enter without being pushed.
When making bread crumbs, only use the coarse grinding disc.
Never try to undo the parts or to repair the unit by yourself. Please contact MODENA Call Center.
When switching from ON to OFF then to REVERSE or vice versa, wait for approximately 6 seconds to assure
that the motor has stopped completely.
To maintain the freshness of your ground meat for up to five times longer traditional food storage methods, it is
recommended to use vacuum sealers or vacuum packaging systems.
Part 6: Cleaning & Maintenance







Before cleaning, assembling or disassembling the unit. Make sure the grinder motor is OFF and the motor has
stopped completely.
Unplug the appliance from the power outlet. Turn the grinder head until you can remove the cap.
Wash each part in warm soap solution. Use care when handling the sharp blades.
Note: Do not wash any parts in the dishwasher or use abrasive cleaning agents or cloths when cleaning.
Bleaching solutions containing chlorine will discolor aluminum surfaces. Thinners and benzenes will crack or
change the color of the unit.
Wipe motor housing with a damp cloth. Do not immerse in water.
Dry all parts thoroughly before storing.
Coat screw feeder, cutting blade, and cutting plates with vegetable oil after washing and drying. Note: The oil
will keep parts lubricated.
Part 7: Troubleshooting
If your unit fails to operate, contact MODENA Call Center. If meat is mashed instead of extruding in strings from the
grinding plate, chill the meat to 40°, and check the plate and blade are properly installed, and check the rings to
installed at the back of screw feeder. A dull knife or plate will also cause mashing of the meat.
For an overheated plug or grinder housing discontinue use and contact MODENA Call Center.
DO NOT DEFEAT THE SAFETY PURPOSE OF THIS POLARIZED PLUG IN ANY WAY.
CIRCUIT BREAKER INFORMATION:
This appliance is equipped with a circuit breaker to protect the unit. In the event of a power outage, irregular
operation or overheating, the motor will immediately shut down to prevent damage. If this should happen, follow the
steps:
Step 1: Turn the switch off.
Step 2: Unplug the appliance.
Step 3: Check inside of grinding unit and remove any obstruction.
Step 4: Wait for 1 or 2 minutes, and plug the appliance into the power socket.
Step 5: Push Restart Button and release. (Located at the back panel of grinder, 27).
Step 6: Turn the switch on.
Step 7: Resume operation.
The mentioned troubles are just for reference. If any failure occurs, please stop using, and contact
MODENA Call Center to check and repair.

Why is my meat mashing instead of grinding smoothly?
Ensure the grinder plate and blade are properly installed. Also, check that the retaining ring is tightened securely. A dull knife or plate can also cause mashing. Chill the meat to 40°F before grinding.
What if the motor overheats?
Discontinue use and allow the unit to cool down. Check for any obstructions inside the grinding unit. If the issue persists, contact Modena Call Center.
How do I use the reverse function?
